    BETH’S OVERNIGHT CINNAMON BUN RECIPE
    Makes 9 buns
    INGREDIENTS:
    3 ½ cups (420 g) flour
    2 ¼ tsp (1 package) (1/4 ounce/7g) dry active yeast
    2 tbsp (25 g) of sugar
    1 tsp salt (5 ml)
    1 tsp (5 ml) cinnamon
    1 tsp (5 ml) orange zest
    ¾ cup (110 g) of raisins
    1 ¼ cup warm water (between 110-125F or 43-51C)
    3 tbsp (45 ml) melted butter + 1 tbsp (15 ml) for greasing
    Filling:
    2 tbsp (23 g) brown sugar
    2 tbsp (25 g) white sugar
    1 tsp (5 ml) cinnamon
    2 tsp (5 ml) orange zest
    ½ cup (75 g) chopped pecans
    4 tbsp (60 g) softened butter
    Glaze:*
    ¼ cup (60 ml) whipped cream cheese
    1 tbsp (7 g) powdered sugar
    ½ tsp (2.5 ml) vanilla extract
    1 tbsp (15 ml) milk
    *Double Glaze recipe to have extra to serve on the side
    METHOD:
    Combine flour, yeast, sugar, salt, cinnamon, orange zest, raisins. Then add water and melted butter and slowly mix into a dough, and then into a ball. Then knead on a floured surface for 20 turns.
    Place other 1 tbsp (15 ml) of butter in a clean bowl, and grease the sides of the bowl with it. Place dough inside and cover with plastic wrap. Set in a warm place overnight.
    Then have the filling ingredients below measured out and standing by on your counter and take out the 4 tbsp (60 g) of butter to allow to get to room temperature as well. This will make for easy assembly in the morning!
    To make the filling. Combine sugars and cinnamon, orange zest and pecans.
    Remove the dough from the bowl and place on well-floured surface; roll out to a 18” x 14” (45cm x 35cm) rectangle. Smear with softened butter, then sprinkle with filling.
    Roll up, like a jelly roll, from the long side. Slice into 2” (5cm) slices. Fit, cut side up, into a cast-iron skillet or pie plate or baking dish.
    Bake at 350 for 40-45 mins until golden brown and puffed up.
    Meanwhile whisk together the glaze. In a small bowl combine the cream cheese and sugar whisk until smooth. Then add vanilla and milk whisk until smooth.
    Ladle frosting over warm cinnamon buns! And serve!

    Hello, Beth. I made the dough last night, and I baked the rolls this morning. I omitted the orange zest because I don't like it, and I omitted the nuts because my son does not like nuts. All things considered, the cinnamon rolls came out pretty good. Thank you for the recipe.

    I remember seeing my gramma making the dough, letting it 'rest', then rolling out the dough, adding

    I'm originally from a part of my country where cinnamon buns are like a regional specialty and I literally couldn't be happier about this video!
    Quick question on the side: Is there any chance the party menu's are going to come back for the holidays? I would absolutely love to see some kosher ideas to switch up a traditional Hanukkah meal or a Yule menu.

      Oh yes the only way to go with cast iron, is a pre-seasoned Lodge Skillet! 10-inches :) . Here's a link amzn.to/2xvmmkP and it works so well with Roast Chicken Too!     Beth, could you assemble and cut the cinnamon buns the night before and bake in the morning? Maybe put in the fridge overnight?

    Note!! The salt and yeast definitely can't directly touch, since the salt will kill the yeast. Just make sure they're on opposite sides of the bowl, or mixed in already :)

      I believe that myth has been debunked? If you search YT you'll see quite a number of vids of bakers adding them directly on top of each other and the yeast worked perfectly.

      @@BeachsideHank I bake for the local farmers market and do all my measuring on one day. I never worry about yeast and salt touching and I've never had a problem.

      Oh sure you really could just leave it out and create a frosting with powdered sugar and heavy cream, try equal parts (2 tbsp/2tbsp) and then add more cream until desired consistency is achieved :) Hope you enjoy!

    Try to make the glaze with equal parts of cream cheese and sweetened condensed milk (only those 2 ingredients) and then tell me what you think about that!

      Mark Rahn use gf flour, it'll be fine I'm sure. No need to knead. Just mix until smooth dough and let rise

    May I ask, what size cast-iron pan did you use ? 9 inch ?
    Also, in the video you say 1/2 cup of raisins but the written recipe states 3/4 cup - which is it ? Thank you Beth.

    It's really hot & humid where I live-even at night. Is it still okay to leave the dough out?

      I bet it would just help it rise even more :) . But if you are concerned about it you could also let it rise on the counter for 1 hour and then pop in the fridge before going to bed :)

      Well I would try leaving it out on the counter for 1 hour, the heat will create a rapid rise. Then put it in the ridge, covered overnight :) Hope you enjoy!

    I was trying to make these today and I got a little confused with the recipe. In the video it says to add 3 tbsp of brown sugar, but the recipe says to add 2 tbsp. I tried using 3 since that's what the video said to do but I wanted to let you know that the video and recipe are different.

      Oh great question! I'm not really sure, but if you tried it I would use the King Arthur Gluten Free Baking Flour. I have had success using it with muffins and things, but never yeasted doughs. Now I'm curious if it would work! So if you do try it, please report back! :)

    Hypothetically, if I still have a lot of time, can i leave it to rise for a second time? Or is the overnight rise enough? (Just wondering)

      Oh sure you could do that, once they are cut and in the skillet, cover and rise for another 30, but really there's not need :) . The second rising would just make them puff up a bit more :) So if you want to kick them up a notch you could do that too :)

    Everytime that a recipe calls for raisins I replaced them with dried cranberries.

    Hi Beth,
    I just noticed that the written recipe has only 2 Tbsp. of the brown and white sugar for the filling.
    In the video you say 3 Tbsp .

      Oh sure all the ingredients and measurements are in the video description. 50% of my audience is US-based and the other is around the world so I have to do it in both imperial and metric systems putting the recipe in the description allows me to do both 😊hope you enjoy!And WELCOME!!

    Overnight in the refrigerator? Is the dough too stiff to roll in the morning?

    Assume the dough goes in the refrigerator overnight but don’t hear that mentioned. Couldn’t find it on the link of videos. Thanks

    Hi Beth, I would love to make these for work. Is it possible to freeze the unbaked rolls after placing them in the baking pan?. Then preheat the oven and bake them from frozen?. Please let me know. Thanks!!
