    THE 10 FOOLPROOF TIPS!
    TIP#1: Refrigerate dough at least 3 hours to avoid shrinkage while baking
    TIP#2: Use cornstarch as your thickener
    TIP#3: Use the right apples. Granny smith! Otherwise too much juice, too watery
    TIP#4: Sprinkle the bottom of the crust before adding apples to avoid soggy bottom syndrome
    TIP#5: Freeze pie 5-10 mins before baking to also avoid shrinkage
    TIP#6: Brush very lightly with egg white for best color, before baking
    TIP#7: Bake at 375F. Perfect temp for slow, even browning and ability to cook the apples. And at this temp no need to cover the crust with a pie shield
    TIP#8: Add a sprinkling of Tubinado sugar at 35 mins mark for even browning
    TIP#9: Do not remove from oven until you see the juices bubbling (this means the cornstarch is activating and creating a syrupy congealed filling)
    TIP#10: Make pie the day before serving to allow to rest 24 hours to set.
    BETH’S FOOLPROOF APPLE PIE RECIPE
    Serves 8

    INGREDIENTS:
    2 ½ cups (300g) all-purpose flour
    3 tbsp (38g) sugar
    ½ tsp (2.5ml) salt
    1 cup (240g) butter, diced
    ½ cup (120ml) ice water
    Filling:
    7 cups (1050g) sliced Granny Smith apples
    ¾ cup (150g) white sugar
    ½ tsp (2.5ml) cinnamon
    ¼ tsp (1.25ml) nutmeg
    1 tbsp (15ml) fresh lemon juice
    2 tbsp (15g) cornstarch + 2 tsp (10ml) for sprinkling
    1 tbsp (15g) butter, diced
    Garnish:
    1 Egg white
    A sprinkle of raw turbinado sugar
    METHOD:
    Place flour, sugar salt in a food processor and pulse until combined. Add butter and pulse until a coarse meal forms. Add water and pulse until a dough forms.
    Divide dough into 2 equal sized balls, flatten into disks and wrap in parchment paper. Refrigerate 3 hours or overnight.
    For the filling, combine apples, sugar, cinnamon, nutmeg, lemon juice and cornstarch. Toss to combine.
    Preheat oven to 375F (190C)
    Roll out 1st dough ball into a large circle, using your pie plate as a guide. Circle should be at least 3 inches wider than the bottom of your pie plate to accommodate a deep dish pie. Fit dough into bottom of plate. Sprinkle the bottom of the crust with 2 tsp of cornstarch to coat the bottom and serve as a “moisture barrier”. Add filling. Pack filling down to an even layer making sure there are no large air pockets.
    Roll out 2nd dough to an equal sized circle. Place on top of pie, adjust so circles roughly line up, then trim dough with kitchen shears all the way around pie so only a 1-inch over hang remains. Fold edges under ½ inch (13mm). Crimp dough to seal.
    Place pie in freezer for 5-10 minutes to firm up. Before baking cut 4 large slits and 4 small slits (in between the large slits) in a start-burst pattern in the center of the pie to allow steam to escape. Lightly brush top of pie and crust with egg whites. Place pie on a cookie sheet.
    Bake pie for 35 mins, then sprinkle turbinado sugar on top. And continue baking for 20-25mins more until pie is golden brown and juices are bubbling.
    NOTE: Allow pie to rest for 24 hours at room temperature before serving. This will allow pie to fully set and congeal. To serve, place in a 300F (150C) oven for 15 minutes to serve warm, top with vanilla ice cream.

    🍎And tip number 11! place a piece of foil or parchment paper on your cookie sheet so when your pie bubbles over you won't have a sticky cookie sheet to scrub! 🍎

    Beth that cornstarch on the first layer of the pie is a great tip👍🏼 I made my pies with flour in the mix but I can use the cornstarch on the pie before the apples. Genius!

      Ha! I watched it before uploading and thought, is this overkill? Are people going to be like "just give us the recipe woman LOL!" But that's what a printed recipe is for. Ha! I find with video you can really dig into the specifics and cover the dos and don'ts. You guys know me by now I just can't help myself! I've had so many pie disasters over the years and always learn the most about cooking from my mistakes (Don't EVER use a honey crisp apple for apple pie! You'll end up with Apple Soup! Ha!) So I just want to share all those tips with you all so you don't have to suffer the same fate and can just be rock stars "out of the gate!" xx Enjoy!!

    I’m so pleased I found you Beth. You’ve revolutionised my baking. I’ve made 3 of your recipes so far. The fig crumble cake, banana bread & the blueberry almond cake. I’ve had such great feedback from people. The cakes are just better. I think it’s because of the way you combine ingredients. I haven’t used my stand mixer once!

      Awe! Me too one day! It's funny I've come close but I haven't found a publisher that really "gets" the concepts I would want to do in a book. (Pictures for every recipe, Foolproof Recipes for Holiday Classics. Menu Ideas of what goes together, Game Plans to manage the prep, styling ideas for how to make it look great! Beautiful photography, shot in my own home, not in studio etc). And when I mention all this to publishers who have reached out to me, they just kind of look at me like "Blink, Blink" LOL! So I figure, OK I'll just stay here on YT because that's where I can accomplish all that! LOl! #WhyILoveRUclips

    Made this for thanksgiving this year crust was amazing ! Perfect golden brown color. Inside was delicious instead of using nutmeg I used all spice and it gave it that extra kick ! Now I’m down for making apple pie next year.

    Beth thank you so much for the tips and the recipe. My husband loved apple pie. I was able to bake him the perfect apple pie following your tips and directions and have it ready for him when he came home a couple of weeks ago from a year long deployment.     My tip is to place the sliced apples (sans spices and thickener) in the microwave for a few minutes to soften them slightly. My family likes their apple pies very tender and if I don't pre-soften them a little, the apples can occasionally be on the crunchy side, even after baking for a long time.

    I'm not big on Apple Pie. Part of the reason is that the apples are always cut in bigger pieces. The thinner slices you cut are great! Looks delicious!❤

    Beth...YOU DID IT AGAIN!!! I just love your recipe since I finally FOUND a recipe for Apple Pie that TRULY works. I did make this pie this past weekend as a prelude to Thanksgiving and IT WAS A WINNER...I followed your instructions (ALL OF IT) to a T and it was DELICIOUS and absolutely PERFECT. Since I found this channel I won’t be happy with another recipe. This recipe looks like it could adapt pretty easy.     Our Polish version of apple pie always have mushy, juicy apples, but this is because we don’t use pieces of apples, but homemade apple mousse instead! 😊 It is put on dough, then we add a layer of egg whites mousse, and then we grate (yes, grate!) the top layer of dough to make it look like a little sheep! But I really have to try your American version - it looks super delicious and very elegant! 😊

    Beth, this is the pie of my dreams. I grew up (in Italy in the 80’s) seeing this in Donald Duck’s comics and wondering what it was, because it was nothing like any Italian cake or tart. Same for my partner, he dreamt of trying it and his mother could never find a recipe at the time. I made this twice already for him and it’s the best gift I could give him; he is in heaven!     The corn starch on the bottom crust is a great idea! This recipe is basically my beloved Grandmother Irene's apple pie she was famous for, I make it all the time I love it. I brush my top crust with half and half.. before baking.

    Hi Beth, thanks for sharing🎉
    My tip for you is to place the cookie sheet in the oven for a few minutes to get it hot and then place the pie on it to bake it. This way the bottom crust gets nice an brown and cooked more even because it takes a while for the bottom of the pie to get cooked and usually the top crust and the apples are done in 60 minutes, but not the bottom crust. And this is when we get a soggy bottom crust. Best wishes, 😊

    Beth thank you so much for this recipe. I was always scared of making pies in general and I was so surprised when everything looked just like yours! Last month I lost my cat, she was my baby, and I baked this so often because it’s my husband’s favorite, it felt nice to make something new and comforting.
    Ps: I misread the cornstarch you’re supposed to put at the bottom, I put 2 tbsp, but it works really well because I wasn’t using green apples (I was using Fuji apples). So it helps if your apples are a bit on the red side.

      Hi Lucia, first off I'm so sorry about the loss of your cat. I'm such an animal lover too. I have had many special cats over the years, and each one was my baby too! So my heart goes out to you. It's funny about cooking because it does have this magical healing quality that can provide such comfort when we need it most. I'm so glad the pie was a success! And good to know about the extra cornstarch balancing out the fuji apples! :)

    Ok Beth my friend that I always share my cake came to my house with tiny apple pie which was very nice and she was telling me that the store sell these tiny pies for $15 so as soon as she left I look for your apple pie and for sure I will make it so thank you for all the tips and since I am watching you I put on 15 pounds but who cares there is more of me to love. 🙏❤️

    I made apple pies last week using mini tart pans, turned out OK but dry. I used way too much cornstarch and the wrong apples. Next time, I’m using your recipe for sure, looks delicious!

      Oh sure I usually bake them on the lower third rack of my oven. Center rack I found can have a tendency of burning. Hope you enjoy! :)

      Great question! I store it on the counter if it's just a day before. With a sheet of foil on top just resting, after the pie is completely cooled.     Beth! I love your channel and your recipes!! This one is an amazing recipe. I am planning to bake it for Thanksgiving, unfortunately among my family I have some relatives who are allergic to gluten. Do you have a recipe for the pie crust that is gluten free? Would it be OK to use the same filling recipe? Please help!

      Oh sure, you could actually turn this recipe into an Apple Pie with a crumble topping :) So use the filling from this recipe and then top with the crumb topping recipe below. I would trust a gluten free baking flour for a crumb topping, but they get really tricky for pie dough. This is my favorite brand. amzn.to/2CVXFlG . Hope you enjoy!!
      For the crumb topping1 cup of Gluten Free flour2 tbsp of white sugar2 tbsp of brown sugar1 tsp baking powderpinch of salt 1 stick of melted butter2 tbsp of heavy cream1 cup chopped walnuts1 tbsp butter (unmelted)
      In a small mixing bowl combine flour, sugars, baking powder, salt. And mix well. Add melted butter and cream, stir with a fork
      until crumbly. Add walnuts. Top casserole with the crumble in a single layer, covering most of the apples, but allowing some apples to peek through. Cut tbsp of butter into 4 small pieces, dot casserole with butter.
      Bake 40-50 mins just until the juices start to bubble and peek through. If top needs more browning increase temperature to 375 until browned. Serve warm with butter pecan ice cream. To reheat, place in a 300 degree oven for 10-15 minutes.
