    These Brown Butter Chocolate Chip Cookies could be my most favorite thing I've made this summer! They are great on their own, but really fantastic as ice cream sandwiches! Crispy on the outside and soft and chewy on the inside, and that touch of sea salt just makes them oh so good! This will be your new favorite chocolate chip cookie recipe!

    CHEWY SALTED BROWN BUTTER CHOCOLATE CHIP COOKIES
    Makes 1 dozen

    INGREDIENTS:
    1 cup (240g) of unsalted butter, browned
    1 ¼ cup (225g) brown sugar
    ¼ cup (50g) white sugar
    1 egg
    1 egg yolk
    2 1/2 tsp (12.5ml) vanilla extract
    1 ¾ cup (210g) flour
    1 tsp (5ml) baking soda
    ½ tsp (2.5ml) salt
    1 12-oz (340g) bag semi-sweet chocolate chips
    1 tsp (5 ml) fleur de sel sea salt flakes
    METHOD:
    Preheat oven to 350F (175C).
    Melt butter in a deep skillet, once it starts to foam, whisk it around and it will begin to brown. Remove from heat when it’s a nice caramel color. Allow it to cool.
    Meanwhile, whisk together the flour, baking soda and salt. Set aside.
    Add the sugars to a stand mixer, or to a bowl for use with a hand mixer. Add the brown butter. Beat together until combined. Add the vanilla. Then add the egg and egg yolk, one at a time beating in between each addition until the batter is smooth.
    Add the flour mixture in thirds beating in between each addition and scraping down the bowl.
    Remove the bowl from the mixer and stir in the chocolate chips with a wooden spoon.
    Scoop out batter with a 2” (5cm) ice cream scoop onto baking sheets lined with parchment paper. Placing 6 scoops on the tray to allow from for the cookies to spread.
    Bake at 350F (175C) for 15 minutes or until you see that cookies are set and begin to crack. Don’t remove them until they begin to crack!
    Remove cookies from the oven, sprinkle with a few sea salt flakes while warm and then allow them to cool and deflate, this is how they get chewy. They will become thin and crackly looking.
    Serve with a glass of cold milk or sandwich between softened ice cream for the ultimate ice cream sandwich! Keep sandwiches in freezer until ready to serve for an easy summer dessert idea!

    These were the absolute best!!!!!!! Although I put about two tbsps of milk after browning the butter to rehydrate it and just a teaspoon of black coffee and some marshmallow in the center!!!!!! Yum!!!!!!!!!!

    I've tried so many cookie recipes and these are the best. Consistently amazing. The only thing I change is occasionally not browning the butter, just melting and cooling and following recipe as usual. I also chill cookie dough for at least an hour (sometimes I weigh and shape them first 2.3-2.5 oz each for 15-16 mins bake). Absolute best cookies ever. I skip the salt on top but that's just preference, I am sure that would be yummy!

    I made these over the weekend! They are delicious! We doubled the recipe to take to a family party, and they made way more than we expected. Fortunately we had nothing to worry about, because there were none leftover! They were quite a hit. Definitely my new favorite cookie recipe.

    Hi Beth, I made these cookies twice and they're the best I've ever had! The browned butter gives the cookies a delicate, caramel flavor. I used muscavado sugar instead of brown sugar, which made the cookies extra chewy. I also used a mix of dark chocolate and sea salt milk chocolate. The sea salt on top of these is such a nice touch and just adds the right amount of saltiness. All in all, this is the best cookie recipe ever!

    I made them for my parents 30th wedding anniversary garden party and they were a hit! Due to shortage of brown sugar, I added more white so they turned out more crunchy but still were super delicious! :) Also, it's a super easy recipe to follow so I will definitely make them again!

      Aww thank you! One tip with these cookies: Be sure the butter is cool before adding into the batter, otherwise the chocolate chips will melt :) I've found a lot of people have had issues with that. Otherwise you will be smooth sailing! :) Hope you enjoy!! xo

    I loved this recipe! 1. The ingredients were easy to find in a local supermarket in India. 2. There was no whipping of eggs/sugar endlessly. The dump and scoop batter was so easy to assemble after the browning of the butter. 3. Tried making monster cookies (about the side of an adult hand - not palm) and they turned out fab.
    Salt after the baking wasn't a great idea. Better to add the salt before the baking.

    This is the best chocolate chip cookie recipe I've ever tried. If you don't like your cc cookies to come out like puffy cake, this is the recipe for you. Make sure to sift the flour before measuring.

    I recommend removing the butter from the pan, or else the remaining heat might burn the butter which can be so fast

      I would do the exact same thing. Once browned. Let sit for a minute then into a jug or container of somesort. Butter can turn very quick

      I agree...30 seconds sitting on the stove is the difference between brown butter and black butter...After browning, I would immediately transfer it to my glass measuring cup

    I don’t know why I bake cookies only in Christmas season - I stick to cakes and cupcakes for the rest of the year. But! This recipe seems so great, I’ll definitely make them soon! :)

    I've made these cookies at least 8 times already this month and they are honestly the best cookies I've ever had. I definitely reccomend only using parchment paper because the last time I made them I used aluminum foil and they didn't come out as good. Still amazing though!

    These cookies look amazing!
    I have a convection oven and sometimes have to slightly reduce the oven temperature depending on the recipe. Can you tell me if your oven is also convection so I know if I should follow the recipe exactly or reduce my oven temperature when baking?

      Great question! So I use a normal oven setting, but if using convection, I would reduce 25 degrees (so 325F) hope you enjoy!

      Yes I have the BEST recipe for a Brown Butter Sage sauce with Sweet Potato Gnocchi that is SO good! YOu can also make it with Store-Bough Butternut Squash ravioli (less time consuming!) and it's also SO good that way too! Hope you enjoy! ruclips.net/video/7ibgq3yoXqM/видео.html

    Hi Beth. Can’t wait to try these! Quick question. Any tips for keeping brown sugar from hardening when stored? I tried the little terra cotta insert, but it didn’t seem to work... Thank you!

      I find the best way is to buy the brown sugar that comes in a resealable bag (C & H Brand makes this) or to transfer your boxed sugar into a ziplock bag. then when it gets low roll the bag and fasten the "Log" with a rubber band :) Usually does the trick! But you can also pop in the microwave for a few seconds to loosen it up too! :)

    i love this recipe, i’d rather leave it for at least 2 hours in the fridge or overnight is better
    the brown sugar is a lot for me so i take out 1/4 cup of it and sometimes i take 1/2 a cup ! and keep in mind i *LOVE* sweet cookies but this one is too much for me

    How do they work with almond flour? Has anyone tried a gluten free/ lower carb recipe to replace the flour and/or sugar? They look delicious! :)

    I know you said baking soda but that can looked like a baking powder can. Just wanted to check with you and make sure before I make these delicious looking cookies. I love chewy cookies. I haven't looked yet but I'm hoping you have a chewy snicker doodles cookie. 💜

    I just made these twice but my dough seems super sticky not firm like yours and they overspread and seemed oily. I used the gram measurements, a digital scale and left the burnt butter out to cool about an hour before starting. Any suggestions? Do I need to whip the butter/sugar/egg longer?
