      @@tatageuu02 Salted butter. I didn’t add more salt. Just relied on the salt in the butter. I made these for my sister’s work colleague over a month ago and they are still talking about them 😊

    1. 버터를 끓이고 체에 걸러 브라운 버터 만들기
    2. 실온에 놔둔 버터 부드럽게 풀어주기
    3. 설탕 넣어 섞어준 후 뽀얗게 휘핑하기
    4. 휘핑버터에 아몬드가루 체쳐 넣고 섞기
    5. 브라운버터와 노른자 넣고 섞기
    6. 박력분 체쳐넣고 섞기 (날가루가 보이지 않을 정도만)
    7. 짤주머니에 넣고 틀에 짜주기 (머핀틀 약 1cm 높이)
    8. 냉장고 30분 휴지 > 휴지 후 손으로 눌러 평평하게
    9. 150도 예열 오븐에 35분간 굽기

    i liked how you mixed the butter with the rubber spatula and then added suger with rubber spatula before using the mixer. I will try that next time as it seems like just using the mixer takes forever.

    Full recipe guide in english :D
    Ingredients:
    120g Butter
    75g Sugar
    40g Almond flour
    2g Salt
    30g Brown butter
    2 Egg yolks
    130g Cake flour (For chocolate flavor: 120g cake flour + 10g chocolate powder)
    Instructions:
    Step 1: Brown Butter
    -In a saucepan, heat the 120g of butter over low heat.
    -As it melts, milk proteins will rise to the surface.
    -Continue heating until the butter turns a beautiful amber color, and brown particles form at the bottom.
    -The aroma should be like roasted nuts.
    -Remove from heat and let it cool.
    Step 2: Preparing the Cookie Dough
    -Soften 120g of room temperature butter.
    -Add 75g of sugar and whisk until it becomes pale and fluffy.
    -Sift in 40g of almond flour and add 2g of salt. Adjust salt to your preference.
    -Mix in 30g of the brown butter.
    -Incorporate 2 egg yolks into the mixture.
    -Sift in 130g of cake flour (For chocolate flavor, use 120g cake flour and 10g cocoa powder).
    -Mix gently using a cutting and folding method. Avoid overmixing; stop when no dry flour is visible.
    -Step 3: Shaping and Chilling
    (Follow the same steps for chocolate flavor but replace some cake flour with cocoa powder.)
    -Squeeze the mixture into molds for muffin cakes or similar, filling to about 1cm in height.
    -Refrigerate the molds for 30 minutes.
    -Flatten any surface bumps with your fingers.
    Step 4: Baking
    -Preheat your oven to 150°C (302°F).
    -Place the molds in the oven and bake for 35 minutes.
    Step 5: Cooling and Removing
    -Allow the cookies to cool at room temperature.
    -Gently twist and press the edges to remove them from the mold.
    -Due to the whipped butter, the cookies will have a light and airy texture with lacy edges.
    -Once completely cooled, the cookies become very crispy.
    -The inside will also be airy and fluffy.
    Step 6: Storage
    -Store the cookies in a sealed container at room temperature in a dry place. They can be kept for 15-20 days.

      However, in the first step, I may need to add a clarification that it's not always necessary to use 120g of butter for browning. If you need 30g of brown butter, you would typically heat around 35g to 40g of butter because some of it will evaporate during the heating process.
      Of course, you can heat a bit more, and any excess can be refrigerated for future use without the need for reheating.😊

      @@OfficialJohana I believe either works, it's a preference thing. That said, usually unsalted is preferred, so that you have more control of the salt levels.

    Я приготовила это печенье, действительно добавление растопленного масло дает эффект. Могу сказать что уже растопленное масло не весило 30 гр а меньше 20. Поэтому возможно стоит брать побольше, либо использовать топленое масло гхи. Трик с выпечкой в формочках для маффинов отличный, спасибо.

      That’s a very good idea(I’m a bit overweight, too!), and it gives me a thought. If I were to cut the butter as you did, how do you think they would taste if I added an extract I picked up recently labeled “butter cinnamon” flavor? I haven’t used it yet because I can’t decide what recipe to use it in; but, it seems that, since the extract has not only cinnamon flavor but also butter, it might work. What do you think? I am 74, but I have never been a very confident cook or baker. So your input is greatly appreciated! Thanks!

So I kept the hole black butter and reduced the regular butter to 90g, I think it will probably work with 80g too - I always do that when I can, I reduce the butter little by little and see the effect, you can cut off lots of calories!- I think some cinnamon would be nice! But use only one small spoon! Maybe just a pinch of ginger too! And you can adjust to your taste within time too =) maybe if you want a little bit more cinnamon add 2 spoons, but I don't recommend more than that, it can be too strong.

PS, I believe by placing a cookie pan inside the pan with the dough in it. By applying gentle pressure, one could eliminate pressing down each individual cookie by hand...

    맨날 영상으로 보면서 맛있겠다 생각만 하다가 오늘 큰맘먹구 만들었습니다. 근데 콩님처럼 버터거품이 저는 포실포실 풍성하게 안 올라오더라구요ㅠㅠ 약간 무거운 느낌의 크림상태(?) 제 휘핑기가 약한건지는 모르겠지만 역시 마음처럼 되지 않더라구요ㅠㅠ 콩님처럼 밀도있게 구워지진 않았지만 바삭하니 식구들도 맛있다고 칭찬해 주었습니다. 하나하나 배워가는 뿌듯함에 다음에 또 도전해 보겠습니다! 감사해요~😌

    좋은레시피 감사합니다! 혹시 노른자는 차가운것을 사용하나요 실온을 사용하는지, 반죽은 바로 구워도되는지 냉장휴지한 후 굽는게 좋은지 궁금합니다:)

      노른자는 실온을 사용하시는게 좋습니다. 반죽은 냉장을 하면 끈적하지가 않아 모양잡기가 편합니다. 모양에 크게 의미를 두지않는다면 바로 구우셔도 무관합니다.

    Hi I just baked this today & it is yummy. Only thing is I don’t have non stick muffin tray and a few broke when I took out even though I greased the pan. Can I pipe it on parchment paper?

      Hello, it's better to have a thick mold to contain it because there is a lot of butter in the ingredients, and during baking, it may spread if not contained. After baking, let the cookies cool slightly. As the temperature decreases, the cookies will contract a bit and gain firmness. At this point, you can try gently rotating the cookies in the mold until they can easily rotate. Then, press the edges of the cookies while rotating, and the cookies should come out of the mold.😊

    뭐가 잘 못 된 건지 다 굽고 달라 붙어서 떨어지지가 않았어요. 버터쿠키고 영상에서도 버터칠 안 했길래 잘 나올 줄 알았는데 겉을 부스러 뜨리면서 꺼냈습니다. 맛은 있었어요 ㅜㅠ 굽는 내도록 맛있는 냄새가 퍼져서 맛 있을 줄 알았습니다. 눌러서 표면 정리 하는 것도 단단해서 잘 안 되더라구요. 다음엔 더 잘 해 봐야 겠어요. 틀에 아주 튀겨 지도록 버터 칠 할테다...

      쿠키를 빼내실때, 상온에서 식혀주신뒤(온도가 내려가면 수축이 되기때문에 좀더 쉽게빠집니다) 손으로 쿠키를 회전시키면서 빼시면 좀 더 수월하실거예요. 화이팅!
