It is a really great recipe and very similar to how I make brownies. I do have one suggestion I have incorporated into my brownies. After spreading the batter in the pan I will wrap them up tightly with plastic wrap and let them sit in the fridge for 3 days. I then bake them and after they come out of the oven I let them sit for 20 minutes before putting them into the freezer for 30 minutes. The latter helps seal in the moisture so they don't dry out. this is THE brownie recipe. oh my god, i finally made a PERFECT brownie with cracks on top and it looks just like in the video😭😭 its very dense, moist and the flavour is intense indeed. i didn't have brown sugar so i used white instead, i don't think it affected my cake. i strongly recommend making it! thank you~ ♡

Forma 20X30cm forrada com papel manteiga. Passe um pouco de manteiga ou desmoldante na forma e forre com papel manteiga com as bordas altas para tirar o brownie com facilidade. Bater os ovos com os acucares + café solúvel + baunilha ate dissolver bem. Testar esfregando um pouco de massa nas pontas dos dedos se ainda tem grãozinhos de açúcar. Vai ficar um mínimo sim, principalmente do açúcar mascavo. Dissolver bem os acucares eh o segredo para obter a casquinha crocante depois de assado. Fica um creme claro que levantando o batedor eh um fio correndo sem interromper. Não eh para formar creme fofo que agregue ar. Eh so para dissolver os acucares. Acrescentar o óleo que tambem ajuda a dissolver os acucares. Se ainda tem grãozinhos, deixar descansando um pouco. Peneirar a farinha + chocolate e acrescentar. Quando estiver na hora de colocar no forno peneirar o fermento e misturar. Fica uma massa consistente, mas fluida. Despejar a massa na forma preparada e mexer com um palito em zig zag para tirar as bolhas e levar para assar por aprox. 25 a 30 min ou ate que o palito inserido no meio saia quase limpo. Deixe esfriar completamente antes de cortar e desenformar. Para não grudar, já que eh uma massa cremosa, corte com espátula de plástico ou com a faca de inox passada na agua quente e seca com papel toalha. Corte em quadrados que podem variar de 3 a 7cm dependendo do seu objetivo. Se for embalar, para pedaços de 5X5 colocar em embalagens de 8X8 Obs: Pode substituir o óleo por manteiga ou óleo de coco Se preferir a textura mais densa, não usar o fermento, mas com um pouquinho de fermento fica denso mas com uma certa leveza. It makes the baking so much more enjoyable for the chef :) The fudge flavour is terrific, but I like to add some chopped walnuts/pecans. 1. Preheat oven to 180 C 2. Line 16x16cm pan with parchment paper. 3. Brown butter over low heat. 4. Mix 2g instant coffee with 3g hot water. 5. Place chocolate in a medium bowl. 6. Pour cooled (50 -60 C) browned butter and instant coffee mix over chocolate and stir until smooth. 7. Crack two eggs in another bowl and add sugars, vanilla extract, and salt. 8. Whisk egg mixture until smooth and sugar is completely dissolved. 9. Add Chocolate mixture to the egg mixture and whisk to incorporate. 10. Sift flour and chocolate powder into mixture. 11. Gently stir/fold until powder is no longer visible, taking care not to overmix. 12. Pour batter into prepared pan. 13. Bake for 20 minutes. 14. Cool to room temperature before slicing.
Hello! Do you bake in this at 180 with convection setting (fan forced) or conventional setting (top bottom heat)? Also, if I were to bake these in mini muffin and a regular muffin pan for smaller brownies, what would you recommend the temperature and baking time be? So excited to try these! Thank you =)
Hello, sorry for the late response. I didn't use the convection setting when baking, just the regular top and bottom heat setting. If you use a regular muffin pan, I don't think the time needs to be changed. If you use mini muffin pans, you might need to shorten the time a bit, but it may vary depending on your oven.Wishing you a delightful baking journey!😊

This is the way I've made brownies for the last 30+ years, I got the recipe from my mother - I add walnuts and sometimes hazelnuts too👌❤️

best when hot i think. i stored it in a fridge for a day and it got quite hard, still tasty, but not as good and tasteful when just out the oven!

O açúcar mostrado no vídeo, não parece o mascavo, aqui no Brasil seria o demerara. O mascavo aqui é mais escuro e de consistência fina, já o demerara é mais claro e em grãozinhos.

Asegúrate de que el azúcar se disuelva por completo al mezclarlo con los huevos. Si se derrite lentamente a temperatura ambiente, también puedes colocarlo sobre agua caliente para que el azúcar se disuelva más rápido.😊

Yeah you definitely could! Just keep in mind that it’s gonna be a tiny bit sweeter, so just use like a teaspoon or 2 less of the sugar

1. Preheat oven to 180 C
2. Line 16x16cm pan with parchment paper.
3. Brown butter over low heat.
4. Mix 2g instant coffee with 3g hot water.
5. Place chocolate in a medium bowl.
6. Pour cooled (50 -60 C) browned butter and instant coffee mix over chocolate and stir until smooth.
7. Crack two eggs in another bowl and add sugars, vanilla extract, and salt.
8. Whisk egg mixture until smooth and sugar is completely dissolved.
9. Add Chocolate mixture to the egg mixture and whisk to incorporate.
10. Sift flour and chocolate powder into mixture.
11. Gently stir/fold until powder is no longer visible, taking care not to overmix.
12. Pour batter into prepared pan.
13. Bake for 20 minutes.
14. Cool to room temperature before slicing.

Hello! Do you bake in this at 180 with convection setting (fan forced) or conventional setting (top bottom heat)? Also, if I were to bake these in mini muffin and a regular muffin pan for smaller brownies, what would you recommend the temperature and baking time be? So excited to try these! Thank you =)
Hello, sorry for the late response. I didn't use the convection setting when baking, just the regular top and bottom heat setting. If you use a regular muffin pan, I don't think the time needs to be changed. If you use mini muffin pans, you might need to shorten the time a bit, but it may vary depending on your oven.Wishing you a delightful baking journey!😊
