Today I used the leftover eggwhite to roll the dough in before sanding it in brown sugar, turned out very tasty (just looks a bit rougher than the plain white sugar version of your recipe). This is the only recipe I’ve tried that got me the crispy butter cookie texture I was looking for! I was previously struggling with my butter cookies being too soft and cakey. This one was perfect! I did reduce the flour by a bit on my second try because the matcha flavour dough was not very cohesive anymore after incorporating all the powder. Black sesame, hojicha and coffee are other flavours I’ve also tried with this base recipe. Thank you emojoie!!

I don't have a very sweet palate, but these cookies do not have enough sugar!!! Especially the chocolate ones, they're very bitter 😢 Apart from that they're great.
Yeah, gave it two tries and both failed. The dough was dry and crumbly, it definitely needed less flour (350g or even less) and the sablés also came out of the oven dry and crunchy instead of soft.
absolutely not. butter is the main structural component in a sablé cookie- see how the sugar is creamed into the butter in the beginning? imagine trying to do that with oil, the dough wont firm up at all

グラニュー糖のつぶジャリとサブレのサクホロの食感の違いが最高でした
特に抹茶のクッキーは納得のいくレシピに出会えず四苦八苦していたのでとても美味しく出来て感謝です
自分用メモ
▼抹茶…粉砂糖なしで丁度良い甘さ
▼ココア…チョコチップがなくて同量の刻んだアーモンド入れたけど微妙。代用するなら小さく切った板チョコを入れた方が吉かも
▼円形ではなく四角く成形
▼目分量で等分しながらだと幅が揃わなかったので気にするなら定規当てながら端から切る方が確実
▼170℃で17〜18分
絶対また作ります!!
