As for add-ins, besides chocolate (from a bar, of course) I threw in some cocoa nibs and candied orange peel and put a few sea salt flakes on top. My family loved them. I think the look of these were nice when I baked. They had the loom like a gourmet but it had more of a cake cookie taste instead of a soft cookie. I still love so many things you make! them but I wasn't a fan of the flavor.

Christmas Eve 2023 here... I just made these today and they are to die for. 1/3 cup of dough is about 3 ounces. The last tray I did I had about one pound of dough remaining so I made the cookies smaller, 1.6 ounces. I think that's a nice size when you are entertaining. These are the only chocolate chip cookies I will ever make. Sam, you had me in mind when you did this recipe. 😋

Literally just made these. I didn’t chill them in the fridge coz there wasn’t any available space (and I’m lazy/impatient), but they still held their shape so well. I’m surprised! I made these cookies yesterday and used butterscotch chips. They are light and have a bit of a crunch from on the bottoms from allowing them to cool slightly on the tray before removing. My family is in constant need of cookies for last minute get-together's, so I froze about 20 of them for future events. This recipe will go in my cooking baking rotation.
I just tried this recipe and liked it. They didn’t flatten out and it seemed like the dough was so airy, that the chips tasted chocolatier. I weighed my “balls” at 36 and baked for 12 min at 375. The 13 min was too long so if they’re bigger, I can see this timing working. I am so glad I found this recipe, good to have a cookie that isn’t too raw in the middle! Thank you
Note: I tried modifying the recipe a bit. I only used 1 heaping tbspn of cornstarch and and a heaping tsps of baking piwder and they turned out not as dry. If following this recipe, I also found that microwaving for 12 seconds makes them taste freshly baked! 🤭🤗

So, I've made the brown butter cookies so many time and have loved those to the max. I will absolutely give these a try ASAP. I discovered by making the dough then refrigerate and afterwards rolling into balls, freeze them and bake only what you want, when you want. It does help to control my addiction to these. BTW, I love your tip on using chocolate bars instead of chips. They taste and look amazing. Now onto trying the peanut butter version too!

These were awesome. I made them yesterday. Except I made the the size of hockey pucks before I put them in the oven. Took about 18 to 20 min to cook. Two batches made 11 cookies. Delicious

Eyy! I'm planning on making your brown butter chocolate chip cookie recipe this weekend after this heatwave passes to make ice cream sandwiches for a pool party! I had to put my chocolate chip and bar stash in the freezer this week it was so hot 😆 p.s. I love that you use cornstarch in your recipes! It gives such a gourmet bakery texture because it acts like a dough conditioner (in that it keeps baked goods soft and tender for longer, without needing synthetic conditioners).
these look so different from the regular chocolate chip cookies. but they still look yummy. i honestly don't think we've ever had cake flour in this house, we usually use all purpose. and honestly not sure where to find ghirardelli dark chocolate bars, but i'll try to get both ingredients. i know i can just use something else but i have autism and it compels me to follow a recipe as closely as possible. plus the baker says they're the best ones to use and the baker often knows best!
I added 200 g. chocolate chips and 100 g. walnut pieces. Yum. I did not have cornstarch but used arrowroot. It worked very well with no difference in the texture. I really liked the texture, volume, and flavor of this recipe.

If you cook the brown butter and cool it completely, they may honestly spread even less because you are cooking the water out of the butter. I'd be interested to know how they turn out if you do try it. :)

(Will very likely become a new subscriber shortly!)😊 I am looking for a chocolate chip cookie recipe that produces cookies with these characteristics: they're flatter rather than thick and plump. They do spread while baking so are thinner, and you can easily see the shape of the chocolate chips under the dough. They'll remain somewhat soft inside and chewy (that's imperative!), but crispy on the bottom and the edges. I don’t like soft, cake-y ones, and I don't like ones that are totally crisp and hard throughout. Can you tell me which chocolate chip cookie recipe of yours will produce cookies like this? Tried this recipe today and I love it! They really baked chewey and chunky, just the way I like it. I do love a very chocolatey cookie so I will add more chopped chocolate next time. Also, I baked smaller cookies and the height to diameter ratio was comical lol

For all your recipes that require eggs to be added (with the exception of the adding one egg at a time recipes) can I crack the eggs into a bowl and lightly mix them before putting them in the batter? Will it make a difference? Making these cookies right now and the thought came into my head.
Can I use all purpose flour for this recipe? If so, how much do I need? Also, should I mix everything in a low/medium speed? I don't want to over mix my batter.
I recommend cake flour for best results. However, you may substitute all-purpose flour (cookies will be less tender). Use 3 ⅔ cup (450g) all-purpose flour. Medium speed will be fine for your mixer. It's harder to over-mix a cookie dough than a cake so I think you'll be fine. :)

I had no idea how HARD this was without a Cuisineart -_-_-_- WOW-- I chopped chocolate bars with a flimsy steak knife- hand blended each step--It was hard --decorated after taking out of oven with BIG chard of chocolate from bar --and Flake sea salt I ordered from AMazon--( It looks GOOD) I cut myself twice ( of course) THE REALLY GOOD NEWS IS THAT THEY ARE DELICIOUS.. Ya know I like to respond to anything on your newest video. That said I just saw your recipe for hummus on your website. I'll be doing it soon. One tip I thought I would add. Making tahini is crazy simple and a lot cheaper than buying it. Just get sesame seeds and blend them with some EVOO. That's about it. I have been doing that for years. 🙂

These were awesome. I made them yesterday. Except I made the the size of hockey pucks before I put them in the oven. Took about 18 to 20 min to cook. Two batches made 11 cookies. Delicious

Eyy! I'm planning on making your brown butter chocolate chip cookie recipe this weekend after this heatwave passes to make ice cream sandwiches for a pool party! I had to put my chocolate chip and bar stash in the freezer this week it was so hot 😆 p.s. I love that you use cornstarch in your recipes! It gives such a gourmet bakery texture because it acts like a dough conditioner (in that it keeps baked goods soft and tender for longer, without needing synthetic conditioners).

these look so different from the regular chocolate chip cookies. but they still look yummy. i honestly don't think we've ever had cake flour in this house, we usually use all purpose. and honestly not sure where to find ghirardelli dark chocolate bars, but i'll try to get both ingredients.
i know i can just use something else but i have autism and it compels me to follow a recipe as closely as possible. plus the baker says they're the best ones to use and the baker often knows best!

I added 200 g. chocolate chips and 100 g. walnut pieces. Yum. I did not have cornstarch but used arrowroot. It worked very well with no difference in the texture. I really liked the texture, volume, and flavor of this recipe.

These cookies look great, and I can't wait to try them. Would leaving the dough in the refrigerator overnight improve the taste, like a muffin? Just asking.
Chilling will help the flavors develop, but I don't think it will make that much of a difference in this recipe. :)

If you cook the brown butter and cool it completely, they may honestly spread even less because you are cooking the water out of the butter. I'd be interested to know how they turn out if you do try it. :)

I am looking for a chocolate chip cookie recipe that produces cookies with these characteristics: they're flatter rather than thick and plump. They do spread while baking so are thinner, and you can easily see the shape of the chocolate chips under the dough. They'll remain somewhat soft inside and chewy (that's imperative!), but crispy on the bottom and the edges.
I don’t like soft, cake-y ones, and I don't like ones that are totally crisp and hard throughout.
Can you tell me which chocolate chip cookie recipe of yours will produce cookies like this?

In a conventional oven, when set to bake, the heat comes from both top and bottom. 😊

Tried this recipe today and I love it! They really baked chewey and chunky, just the way I like it. I do love a very chocolatey cookie so I will add more chopped chocolate next time. Also, I baked smaller cookies and the height to diameter ratio was comical lol

It shouldn't be super sticky. You can see the texture of it when I mix it in the video. Are you weighing your flour or making any substitutions?

For all your recipes that require eggs to be added (with the exception of the adding one egg at a time recipes) can I crack the eggs into a bowl and lightly mix them before putting them in the batter? Will it make a difference?

That will work fine. In most recipes it won't make a difference. It could help the egg mix it more quickly. :)
Can I use all purpose flour for this recipe? If so, how much do I need? Also, should I mix everything in a low/medium speed? I don't want to over mix my batter.
I recommend cake flour for best results. However, you may substitute all-purpose flour (cookies will be less tender). Use 3 ⅔ cup (450g) all-purpose flour. Medium speed will be fine for your mixer. It's harder to over-mix a cookie dough than a cake so I think you'll be fine. :)

I made your cookies tonight-its 3 am in St.louis--and I'm a beginner. I had no idea how HARD this was without a Cuisineart -_-_-_- WOW-- I chopped chocolate bars with a flimsy steak knife- hand blended each step--It was hard --decorated after taking out of oven with BIG chard of chocolate from bar --and Flake sea salt I ordered from AMazon--( It looks GOOD) I cut myself twice ( of course) THE REALLY GOOD NEWS IS THAT THEY ARE DELICIOUS.. THANK YOU... I JUST HAVE TO PRACTICE AND GET THE CORRECT EQUIPMENT >>> I SCROLLED ALL THE RECIPIES ON RUclips AND STILL LIKE YOURS THE BEST !!!!!

Ya know I like to respond to anything on your newest video. That said I just saw your recipe for hummus on your website. I'll be doing it soon. One tip I thought I would add. Making tahini is crazy simple and a lot cheaper than buying it. Just get sesame seeds and blend them with some EVOO. That's about it. I have been doing that for years. 🙂
