    I made this dish last night and it was wonderful. I did not have curry leaves, so I just ended up using curry powder. I also added mushrooms and spinach to the quinoa and I added salt. Other than those modifications, I followed the recipe exactly and it was excellent. I definitely plan to make it again!

      That's great, Angelo. Sorry for the late response. For some reason RUclips doesn't always give me my messages in a timely manner. I just received this, four months late! I'm so pleased you had good luck with this recipe. I've had others tell me they used curry powder instead of the curry leaves. That's an excellent fix when you can't find the leaves. Your other modifications sound great too! Good job on taking this recipe and expanding on it. That's what cooking is all about!

    Great video. I may make these tonight with collard greens instead, as that is what I have in my refrigerator right now. I assume the process would be the same for both. Thanks!

      Thanks, Angelo. You can certainly make them with collard greens. They may be a bit firmer than the Swiss Chard so you may have to submerge them for a few more seconds to get the flexibility you like. Also, the flavor will be a little stronger and may compete with the curry. I love collard greens so I would not mind that. Try it and see what you think. If you need to, next time just kick up the spices just a bit. Let me know how it turns out!!
