I'm from Manitoba and I can tell you the weather here in Sweden is much much warmer and calmer in autumn/winter than back home! I live in Gothenburg just a bit north from Malin.

I think it's a pleasure to work from home in these conditions. I didn't find the recipe for the crumble, can you share it?
Yes, I completely understand that of course. The rain is important and after a dry summer it's needed even in Malmö where it often rains. We are lucky as well to live in a city with weather more or less unchanged by climate change still.

Hi Malin, thank you for your delish meals. Beautifully photographed. I love using fresh bay leaves in my soups, and stews as well as the kara orange sweet potato. I usually buy fresh bayleaves, and pop into a freezer bag and freeze. That way they remain fresh and always available👌I have just made a delish butternut lasagne with coconut milk and topped with plain vegan yoghurt mixed with vegan cheese and sprinkled with paprika. I was planning on making a potato and lentil soup too! Except I’m using leeks and shallots and some other things that came in my produce box from my local farm and adding coconut milk to make it creamy. Clearly I can’t forget to add bay leaves! (I also have to remind myself about salting enough with potatoes, haha).
Such cozy food! we have the same Staub la coquette braising pot, but in red. I love making soups and stews with it, but my favorite are baked beans from scratch (with lots of molasses and brown steamed bread...very new england style in the oven) OR vegan japanese curry OR vegan casselot (white beans, parsnip, carrot, fennel, mushrooms, tempeh and lots of gremolata). Would love to see your spin on those classics this winter. Be well!
