A trick I learned from my grandma: if you cook the beans with fat or salt, the husk gets too firm. For even more creamy beans, cook them first in just water, then do the sofrito, combine and let it simmer for 5 to 10 min for the flavours to really get to know each other

Thank you RUclips I am a 63 yo man who has just re-discovered pulses...20 years ago I lived on them, mostly out of financial necessity and partly out of a philosophical failure to see why we should grow perfectly good crops only to feed them to animals which we then eat. Anyway, time passes, habits change and now I find myself back at square one, looking to get fitter again and realising that non-meat protein is the way forward (along with exercise, saunas, cold showers, reduced use of electronic devices. oh and no sugar...). I had already started doing batch cooking for the freezer so that I have different pulse-based things to microwave for lunch. This morning I got up early to try making this black bean stew. What I found revelatory is that I've always soaked and then boiled the beans separately, before adding to the dish. It never occurred to me to cook them with the flavour enhancing ingredients. Bloody delicious. Thank you so much. Great vids, btw.
I'm from Colombia and our national dish is also beans, rice, plantain and avocado. I honestly could eat that every day of my life. We also add pico de gallo (onion, tomato, lime and cilantro salad) and it gives it another dimension. And it's also so extremely healthy!
Also Gaz, what you missed for the beans was just some tomato paste and hogao (a kind of sofrito made with green onions, tomatoes and garlic). That's what gives it it the traditional flavour. No need of animal products at all. Hope you try it next time!

My grandma is from Cuba and she would make us this meal all the time when we were kids! She grew up in Morón, Cuba and came to California in the 60s. Her black beans and plátanos maduros fritos were the best 😋

I never had any luck with basil. Until this year. I tried the buy one over packed pot of basil from the supermarket. i soaked it, split it into more than 20 pots gave half away and now have so much basil we have homemade pesto weekly . certainly the way for me to make it work for me.
For us Indians, the staple beans and rice dish that everyone loves is rajma chawal. Canned beans aren’t a thing here for most part, so we reduce the cooking time by soaking them overnight and then boiling them in pressure cooker. A pressure cooker is standard in most our houses. It cooks the beans in 25-30 mins. Similarly it reduces cooking time of most things by 30-50%. (Boiling potatoes, cooking lentils etc). The hack I use from a known Indian chef if I forgot to soak them overnight is to put them in the soaking water on gas and bring the water to a boil. Then cover it and turn the heat off and let it soak for almost two hours. This isn’t as efficient as overnight but cuts down cooking time by a lot.
Being born in Brazil, I grew up on rice and beans too. We always have these two ingredients for lunch and dinner along with other foods. There are a few varieties of beans that I miss a lot and couldn't never find them in Europe 😭 People from Minas Gerais living abroad will know exactly what I mean.

Coriander IS cilantro.....different cultures call the plant cilantro and the seeds coriander. Some cultures call the whole thing (like Gaz) coriander. Same plant, different name.
Having lived in SoFlo for many, many years I’ve grown to love Cuban food. Black beans, rice and plantins make the perfect meal. Yum 😋. Oh, forgot to add, the real Cubans always add a dash of vinegar atop the beans and rice before eating and it just adds a little kick to tickle the taste buds.
I love all beans and rice. Portuguese, Cuban, Puerto Rican is my absolute favorite. Beans are the greatest sources of protein. They're so many things that can be done with them. They taste great!¡! Love your recipes and videos. Thank you Gaz.
Gas, I too could eat black beans and rice daily and I have at times. The black beans are also good as dips and would be delicious with plantain chips. I like the green plantains with a Cuban mojo sauce as well with the black beans. I notice you like Jamaican style sliced plantains and those are good for dipping. For Cuban black beans, I have not seen them do them with pork, but some may although that may be more Brazillian style. Typically when I have had Cuban black beans they never have meat, they are always vegan or vegetarian if they use butter for the veggies before the beans are added, but they are more so on the vegan side. The way you cook them is similar to how most Cuban black beans are cooked, but the soy sauce cuts down on the salt which is good as well. Thanks your your recipe Gaz.😊
I went to Cuba about 3 years ago. Sadly, there are some serious limits which make what we ate not quite what I expected. My introduction to Cuban food was in NYC and in Florida, places where food is in abundance and often allows cooks to truly embellish their meals even more than in Cuba. I typically make Spanish, mostly Dominican and Puerto Rican. I learned to make beans from my dad's stepmom. Her beans are the best I have ever and I mean ever eaten. One trick she taught me was to take half of the amount of beans you boil until tender and press them until they are creamy. I don't ever use meat to flavor my beans, But here it goes ingredients 1. whole dry beans. (black, pinto, red, pink, white,etc) 2. 2 small onions. *Keep one whole and chop the other 3. 4-6 garlic cloves (depends on how garlicky you enjoy). keep two whole and chop the rest 4. A few stems of fresh cilantro. (for the boiling water) 5. a little salt for the water 6. 1 1/2 tablespoons of olive olive oil 7 tomato paste 8 1 can tomato sauce 9. 1 tablespoon of adobo or sofrito (whatever you prefer or both_ Steps 1. let beans sit overnight in water. 2. The next day, boil your beans with some salt, a little olive oil, a whole small yellow onion, half a green pepper, cilantro, 2 cloves of garlic, and 1/2 tablespoons of oil, *remember everything can be modified to your preference. 3. You let everything boil together until the beans are super tender which can take 1 hour to 90 minutes. (I recommend an instant pot, makes life easier) 4. Remove the overcooked onions, garlic, and green pepper from the water. 5. Next remove your tender soft beans from the pot and place them in a bowl, while setting the liquid to the side 6. Take half the amount of your beans and mash them into a creamy texture, you can use some of the leftover water as well. 7. You take a clean pot, add some olive oil )or whatever oil you like 8. add your chopped onions and let them soften a bit for 2 minutes 9 add your chopped garlic and saute for 1 minute 10. add your tomato paste to the onions and garlic 11. add the rest of your whole beans and saute a little 12 add your adobo or sofrito * again a matter of preference 13. add your can of tomato sauce 13 Add the mashed beans and stir until everything is nice and smooth Cook for about 10 to 15 minutes to allow the flavors to dance together.

Delicious salsa you made for those beans. Im from Colombia and been in Cuba, there is a pressure cooker on every house, now you can get the digital one 'instantpot', DON'T KNOW ANY LATINO that will attempt to cook beans in a regular pot, at home I put them in the pressure cooker for 30 min then and other 30 to thicken them, all that after soaking them from the day before, Im not saying dont try it Gaz way, maybe after you can invest in an instantpot :D Good luck and thanks Gaz for that sauce recipe miam!

I make these Cuban bowls once a week. I mix Veganaise, chopped chipotle in adobo sauce & lime juice as my topping sauce. Definitely can't go wrong with beans & rice. I love your garden! Blessings from Mexico
I honestly lost 45 lbs just eating beans and rice for a month when I first transitioned over to 100% plantbased. That and sometimes noodles made out of squash. Strangely enough though I never get sick and tired of eating beans and rice.
I went to Cuba in January. The food insecurity is quite high! Finding traditional Cuban food is very difficult - but when you do find it!! Wow!!! I highly recommend going! The music and food is sensational

OMG Gaz, this is one of my fav dishes too! I love the sweet and caramelized platanos with the black beans and rice! In Venezuela we add an Arepa and call this dish Pabellón Criollo! Your version looks delicious 🧡
I'm not sure how often you get to the States, but my favorite place to buy beans is Rancho Gordo they may ship overseas they do all kinds of amazing heirloom beans I'm a person that just didn't like beans that has changed I'm now a bean freak because of all these crazy good strains recently tried eye of the goat seriously so amazing you just need water for some crazy good beans of course there better with onions and garlic and spices and herbs
I thought I was the only one that struggled with basil! And I can't find any already sown it in any of my local garden centres! The meal looked beautiful!
You can often find it in grocery stores in little pots. Gently separate the individual plants and repot or sow outside, and pinch back the tops to get them nice and bushy.

as a Cuban, my family never used pork in anything for religious reasons, and it never diminished taste. The spices stand up on their own.

Hot water in a casserole/hot pack also helps more than just a kadai/container. Applies to all pulses.

Delicious salsa you made for those beans. Im from Colombia and been in Cuba, there is a pressure cooker on every house, now you can get the digital one 'instantpot', DON'T KNOW ANY LATINO that will attempt to cook beans in a regular pot, at home I put them in the pressure cooker for 30 min then and other 30 to thicken them, all that after soaking them from the day before, Im not saying dont try it Gaz way, maybe after you can invest in an instantpot :D Good luck and thanks Gaz for that sauce recipe miam!

I make these Cuban bowls once a week. I mix Veganaise, chopped chipotle in adobo sauce & lime juice as my topping sauce. Definitely can't go wrong with beans & rice. I love your garden! Blessings from Mexico

I honestly lost 45 lbs just eating beans and rice for a month when I first transitioned over to 100% plantbased. That and sometimes noodles made out of squash. Strangely enough though I never get sick and tired of eating beans and rice.

OMG Gaz, this is one of my fav dishes too! I love the sweet and caramelized platanos with the black beans and rice! In Venezuela we add an Arepa and call this dish Pabellón Criollo! Your version looks delicious 🧡

I'm not sure how often you get to the States, but my favorite place to buy beans is Rancho Gordo they may ship overseas they do all kinds of amazing heirloom beans I'm a person that just didn't like beans that has changed I'm now a bean freak because of all these crazy good strains recently tried eye of the goat seriously so amazing you just need water for some crazy good beans of course there better with onions and garlic and spices and herbs

Have you ever used an instapot to cook beans? It’s so quick and yummy. No overnight soaking and all the flavor of dried.
I thought I was the only one that struggled with basil! And I can't find any already sown it in any of my local garden centres! The meal looked beautiful!
You can often find it in grocery stores in little pots. Gently separate the individual plants and repot or sow outside, and pinch back the tops to get them nice and bushy.
I am from Trinidad & Tobago, now living in Montana, US, and I sure miss having plantain regularly. . Looks delicious..will try out the black bean dish, with a splash of Trini. 😂🌹My Cuban Bros and Sis's will not mind..lol.

I swear by Cuban black beans, rice, and plantains! I ate arroz con frijoles negroes with sautéed onions (and, at the time, oxtails), and it never failed!

I use almost the same ingredients in my black beans but I add some tomatoes and vegan chicken stock it is absolutely delicious with rice and greens.
Next time you're in Miami and you try a Puerto Rican, restaurant instead of having the 'platanos Dulce' try 'tostones' made from the very green plantain twice fried with a drizzle of evoo. yummy 😊😊
