  • Instant Pot nacho chicken and rice is a one pot meal of tender chicken, brown rice, nacho cheese, tomatoes and chili beans. When topped with tortilla chips, tomatoes, jalapenos, avocados and sour cream it tastes out of this world.

    If you choose to use white rice instead of brown rice the cooking time will change from 22 minutes to 5 minutes. And that means that you’ll need to cut the chicken into bite-size pieces to ensure that it cooks at the same rate as the rice. So no frozen chicken if you use white rice.

    I love this dish. I've made it twice. My store doesn't have the beans so I get a bushes chili beans. I take my 90-year-old mom shopping and you should see her look when I buy the ingredients for this meal. I never thought I would eat brown rice, but you can't even tell it's brown rice. I bought "skinny chicken". It a breast that is sliced paper-thin. I didn't know what I was going to do with these. I thought bingo this would be a perfect way to use them.

    I love this recipe. I can't have chicken often because my hubby wants most everything made with hamburger meat. But, I will have to try it at some point. Have a Wonderful & Blessed Day!

    Does the cooking time stay the same even if you aren't using frozen chicken? For some unknown reason, I bought fresh instead of frozen chicken thighs. Can't wait to try it.

    Followed your recipe exactly on using white rice. 5 minute cook, 10 NP. Stirred it...rice was still chewy and so was bite sized chicken. I’m new to IP... don’t know what I did wrong

    I want to try this, but I didn't think u were supposed to add cheese into a recipe until the end? I thought I heard that it would burn or curdle? I could be wrong, any tips would be appreciated.

    If I use white rice and the cooking time is only 5 minutes, is that enough time for the frozen chicken to be cooked? Sorry never mind saw someone else asked that ?. Makes sense no frozen chicken Rats.

    Ok tried this recipe tonight with Jasmine rice. No one in my family likes Brown Rice. I followed the directions exactly for other than brown rice, to cut up the boneless chicken in bite size amounts and 5 minutes to cook and followed all other instructions. Well for the first time ever I got the burn notice. All the rice was stuck on the bottom. Transferred over to pot on the stove to finish cooking while I was cleaning out all the burned rice on the bottom of instant pot, YUK. Word to the wise, Use either much much less rice or more Liquid that 1 1/4 cup that is on the recipe. Otherwise it was very good.

      Easy then, don't make it. Or change to your taste.
