  • EASY INSTANT POT RECIPE!!!! Instant Pot Cheesy Chicken and Rice--creamy, comforting risotto-like rice with chicken thighs, garlic, onions, mushrooms, kale and cheese.

    My mom used to make a recipe with chicken and rice in the oven that had cream of mushroom soup. I loved the consistency of the creamy rice in that recipe. But today I wanted to make a version that didn't have any cans of cream of soup in it. It turned out creamy and delicious and didn't take too much effort at all!
    The key to getting the creamy rice consistency in this recipe is using the arborio rice. Arborio rice is a short-grain rice that's typically used in risotto recipes. Arborio is known for its creamy texture. Because of its high starch content, this rice has a starchy taste and absorbs the flavors it is cooked with very well. You can find arborio rice in your grocery store next to the other rices. It costs about double but it is worth it! I like to buy mine in the bulk section at Winco and get exactly how much I need.
    I used boneless, skinless chicken thighs because they turn out much more tender and moist than chicken breasts in the Instant Pot. If you end up using chicken breasts I recommend make sure they aren't too thick or else they might not cook in the 10 minutes of pressure cooking time.
    I love mushrooms so I included them in my recipe. However if you are not a fan (uh, my kids) then you can leave them out. The same goes for the kale. Although you could substitute spinach for kale, if you prefer.
    Remember your Instant Pot will take about 10 minutes to reach pressure.

I added cream of mushroom cause I don't have mushrooms. I seasoned my chicken and cut it up. Well...Ma'am...it is DELISH! Thank you so very much. This is the 2nd time using this. That’s about it…I’m considering putting him back on baby food ( he is 38 and lives with us because of health reasons) . I love him but when it comes to food, I want to shake him and the Hubby too!!! 😮 but I haven’t… so far…lol anyway, I’m going to be selfish and make it exactly as shown here. If they don’t like it, there is bread, cheese and bologna to go along with a side of boring!!🥱 oh well, I’m going to be eaten good y’all 😂

  • @plind67
    @plind67 3 года назад +2

    We followed your instructions exactly with one exception, we used thawed chicken and had two issues. After all was added to the pot and we set the time for 10 minutes while coming up to pressure I got a screen message saying (burn) and then finally counted down to the 10 minutes. After waiting another 5 minutes and opening the pot the entire recipe was like paste. I added more broth but it wasn't much help. Do you think we should have used frozen chicken.

      The burn notice with rice seems to be happening a lot over many Instapot youtube channels. And the question isn't getting answered. That is why I am here trying to find a fix. If not the pot goes back. Maybe I should have got a Ninja, pity.

    • @gerriebell2128
      @gerriebell2128 Год назад

      My guess is the liquid evaporated from the sautéing and the chicken unfrozen cooked in less than her ten minutes that is why the burn message and the mush. My suggestion is if you get that message, do a quick release and check inside the pot. Check for doneness of the chicken and condition of the rice and if the food needs more cooking time, add 1/2 cup of water and seal again, choosing less than 10 minutes according to how done (or not) the food is. You can even bring it up to pressure with 0 minutes and let it do a natural release if it is more than half done. The rice and veg are almost all cooked if you sautéd it all first like she did, and the liquid is almost all absorbed by the rice so it burned rather than building steam pressure. The chicken cooked a lot faster cuz it wasn’t frozen.
      Just some ideas.
      Suggestion: if you use Un-frozen chicken you can sauté a little less time, and make sure there is still at least 1/3 to a half cup liquid in the pot when you seal it- then cook maybe only 5-7 minutes and then follow her natural release, etc.
