One "pot" chicken and rice - Pressure Cooking 101

  • This Instant Pot chicken and rice recipe is one of my absolute favorite recipes. When I'm not in the mood to make it in the Instant Pot, I just use my normal pot and modify the times slightly.
    The benefits of using a pressure cooker like the instant pot for chicken recipes is that they come out INCREDIBLY tender and juicy. Instant Pot is great also for rice recipes. It acts like a rice cooker and has a rice mode, which makes things quite simple.
    This chicken and rice recipe is really easy and flavorful. Loads of garlic, paprika and great blend of spices. Cooking rice with chicken lets the renderings and juices of the chicken to seep into the rice as it cooks.
    What you'll need:
    -Jasmin Rice (2c)
    -Water (2c)
    -Chicken Thighs (5-6)
    Spices:
    -Paprika (2 tbsp)
    -Parsley (1 tbsp)
    -S+P
    -olive oil (5-6 tbsps)
    Veggies:
    -Garlic (4-6)
    -Onions (1 chopped)
    -Mushrooms (6-10 sliced)
    Tips:
    Ratio to cooking jasmine rice in the Instant Pot is 1:1. 1 Cup rice, 1 cup water.
    If you are cooking it in a normal pot, 1:1.25... so 1 cup rice for 1.25 cups water.
    Chicken cooked off 5 minutes per side

    Just got an instant pot. This was my first attempt. Rinsed the rice 3 times, until water was just about clear. Used onion and garlic powder, and lemon pepper (tsp each) plus TBSP of paprika and a bit of dried parsley. Sautéed chicken for about 7 minutes on each side, then used 2 cups chicken broth. Used the Rice button preset and released after 10 minutes. Came out perfect! Fluffy rice and tender juicy chicken! Thank you!

    I looked at a lot of recipes for chicken and rice but decided to try yours because it looked so colorful and flavorful. I made it tonight but had to use chicken tenderloins since that is all I had and it turned out delicious!! Thank you so much this will now become one of my favorite recipes to fix - so easy, so good!!

    Made this dish tonight ! 2/1/24. Was absolutely delicious. My wife loved it too, and she normally doesn’t eat mushrooms. Just cut them up pretty small and it was fine. Excellent dish, can’t wait to make it again !!!

    This is just incredible. I didn’t have mushrooms but will have next time. One step I did differently was to saute rice for a minute with onions and fond, then added stock little at a time to deglaze. Incredible!

    I love chicken and rice and this recipe looks great. Definitely marinate. It's worth it! One more pro tip, if I may be so bold, Do not pour the chicken from the bag into the mixing bowl directly. Instead take it out of the bag and dry it thoroughly with paper towels. It will do wonders for your sautéing! This is a must for just about any sautéed meat dish in the Instant pot or anything else.

    Try Basmati rice instead. It's grains remain intact and don't get mushy like Jasmine rice does. Jasmine is great when cooked alone and topped with a recipe but is best not stored in frig and reheated. Fact check this.

      I’m not the biggest fan tbh of basmati rice.
      I agree though about reheating jasmine rice. But we eat quite a bit so virtually always having some fresh.
      But, when the rice has a sauce, it warms up nicely without being strange.

      Most don’t have a start, once you press the mode (like high pressure) you wait and it goes BEEEP and starts :)

    This’ll be my first instant pot recipe. Looks fantastic! Do you know if it’s possible to add a can of beans to this during the final step? Or would it mess up the cooking process.

      Follow the same instructions but put the pot in the oven with the rice and chicken on 400 for 35-40 min :)

      I’d put it in a glass Pyrex, cover with aluminum foil, and on the hot plate directly.

    Can you use bone-in thighs with skin for this recipe? I’ll be traveling in an RV and we eat pastured chicken that comes bone-in. I want to keep it quick and simple on the road. This recipe looks so good!

    My pressure cooker insta pot won’t seal, sits in pre heating mode for an hour timer never starts. Not enough water?

      2 options I can think of…
      1. The silicon ring in the cover is ruined or not applied correctly to cause a seal.
      2. The little pin is jammed and not pushing up.
      Water is definitely a possibility.
      I’d check the above and call the company.

    How do I adjust this recipe if i am using bone-in and skin on thighs?

      Easily, stir fry the skin side first until nice and deep golden brown (about 10 min) then the other side for about 5-10 min. Then follow the rest of the recipe, the same way.
      Should come out just as delicious.

    Was the rice done? I always make it with a 1:2 ratio...one cup rice to 2 cups water....or is this a different rice???

      Once you see it and take it off the stove, you don’t cut it. You prepare all the other stuff and then put it back in as is.

      Yes for sure! Just fry up the chicken before then add it all into the rice cooker.

    ok So i did not do oven because i needed it for vegi - however ( this happens often ) followed exactly for insta - 3 minutes high - the burn notice went off right before it went into the 3 minute cooking mode - it was already done and burnt on bottom of course ( didn’t effect the dish ) - it seams i have better luck w cooking on low pressure- Help !! any tips - ?? i did pre cook chicken and shrooms on stovetop to help prevent this but nope !!!

      Great question!
      I wouldn’t recommend a slow cooker as it is hard to get the rice to perfect texture without it being soggy.
      But a normal pot works great. in a normal pot once you get the rice to a boil one of 2 options:
      1. Cover, lower heat to low, timer 17 min, then off heat still covered 20 min, enjoy!
      2. Cover, in oven at 350 for 35 min.

      All the steps are the same but instead of pressure cooker, call mom put it in the oven at 400°F for 40 minutes

      No no, I always use raw rice,
      Rince it well then cook it. Instant or 5 min rice never ideal.

      Great question! You’d need to adjust the times but yes for sure! I make it in a regular pot too.
      Instead of the pressure, I add the water to the rice with the seared chicken, then into the oven for 35-40 min

    If you use a high quality basmati rice you won’t have to wash it as it has little starch and doesn’t stick.

      I prefer Basmati with Indian food, jasmine with Chinese food. I also do a cold rotisserie chicken and rice salad with basmati rice as no other rice gives it the right flavour.

      Like you said it’s pretty healthy, so calories depends on serving & fat ratio. If they want less fat, then remove skin from the chicken before cooking. 🤷🏾‍♀️🙄

      So use that, as long as the rice is cooked, you’re good to go! Just put the chicken in the rice cooker :)

      Actually not your way, I cocked chicken for 15 minutes and added rice for 5 minutes high pressure and it burned

      @@ImpossiblyKosher No. I already had the rice made from 2 weeks earlier from another recipe so I didn't have to cook it in. Rather than cook the rice in the recipe, I reheated the rice separately and poured the rest of the heated recipe over top of the reheated rice. The recipe itself just tasted spicy and garlicy, but not really that great. I used smoked paprika, maybe that's why.

      @terry7893 but you didn’t do any of the steps really that we needed… By cooking the rice in the chicken broth and with the chicken and infuses a flavour completely

    That is really too much paprikas! Make it bitter 😢haven’t you heard of the best rice in the whole world ? Basmati rice ( all Middle East people if they can buy it is Basmati rice )

      You can use Basmati, but I find it a bit dry compared to Jasmin
