I just made this. WOW! was it good! I was out of Thai Sweet Chili sauce. I faked it. [1 TBS Chili powder, 1 "glug" (heavy TBS lime juice), 1 TBS Sriracha, 1/3 cup more of honey.] Cooked on High for 4 hours. Stripped the skin off the chicken thighs. Added 4x sliced mushrooms. Cooked for another hour. Added two heaping handfuls of spinach leaves. Cooked for 30mins and started Cilantro-Lime rice in the cooker. Added 4x heaping TBS cornstarch slurry mix. Served on rice. This thickens up to a great gravy. Left over gravy is going on pasta tomorrow. Thanks for the recipe. I mixed all the spices, and wet stuff in a bowl, dumped on the chicken and potatoes in the pot, hand tumbled, and left it alone. You could probably omit the olive oil. Enough fat will render out of the skin-on chicken, you'll have enough natural oil.
I made this today, it was delicious and the whole family thoroughly enjoyed it. My husband had an extra helping, 😀, he’s had throat cancer and struggles to eat meat especially chicken, but he ate this, no problem, so it will be making a regular appearance on our family menu. Thank you 🙏♥️xx
Looks tasty. To avoid some of the oil on top, you could either skip the olive oil (the chicken will provide it's own) or remove the skin before you start (since you are cooking in sauce, it won't dry out). And, if you are going to serve with rice, skip the potatoes in favour of some less-starchy veggies. I'd use cabbage, peppers, carrots, parsnips... and get lots of different nutrients and flavour!

My husband was the chef in our house and could literally make anything. He was hugely talented. He passed away not long ago, so now I'm learning to cook. This will be the second crockpot recipe I've tried. Your tutorial is so clear and easy to follow, and I have high hopes for the outcome!

I browned the chicken skin side down in a pan only for about 1min to fry off a bit of fat but still left enough fat in the skin so the chicken didn't dry out in the slow cooker and it also browned the skin which meant I didn't need to use the blow torch method at the end then followed your recipe and it was amazing so thank you.
I used a slotted spoon and put them on an aluminum foil covered baking sheet and broiled so I didn’t have to flip and risk tearing the chicken apart. It worked pretty well but make sure you stay there and watch it so you don’t burn the chicken.
Made this twice so far - both times it came out WONDERFUL. The second time I did it, I didn’t have lemon juice so I substituted white cooking wine instead and I added frozen peas & fresh red bell peppers to a box of chicken rice pilaf (Near East brand) and it still came out really good!!! So good in fact that my extremely picky (6 & 7 yr old) grandchildren ate ALL OF IT and they almost never do that - unless I cover something in ketchup! Thanks for the recipe. It’s a keeper for sure!! ❤

Little tip you can always throw chicken in a hot pan for a minute or two before cooking to get an even nicer sear and slight crunch on that chicken skin

I am a OTR truck driver and make things in my crockpot all the time when I am on the road and this is absolutely going to be next because it looks fantastic and delicious.
I didn't have time to do this in a slow cooker so I just let it all marinate for about an hour at room temp and then threw it in the oven at 400 for about 30 minutes. I turned up to broil for 5 more minutes to finish it off. Probably one of the best meals I've ever made. And so easy.

I made this and it was terrific! The sauce really makes this recipe. However, I did not add the olive oil. There is enough fat naturally on the chicken.
I made this and the smell of seasoning worried me the first few hours. Then it all came together. This is absolutely amazing. I used the same amount of sweet chili sauce, it was a little too hot for my taste. I love the flavor so i'll cut it in half next time. I'm making it for a second time in a row

I didn't have any potatoes besides sweet potatoes, so that's what's in my crockpot right now! Can't wait to try this. I used Boneless, skinless chicken thighs, so hopefully they'll be easy for us to eat right away (especially my kids)

I just got done making this and had a piece with some white rice. First time I made it, and ohhhh my goodness….every one needs to make as well. I cut the oil down to one tablespoon and added a teaspoon each of paprika and cayenne pepper and it had the perfect back end around the top of my mouth. Thank you soooo much for this recipe! I am not a cook by any means, but I only had chicken breast available at the time. I had all the ingredients except for the lemon. I started by making the sauce and chopping up everything. Then, I simply threw everything into the crock pot. I was worried because in the video, the dish was swimming in juices, and I wondered if I had forgotten something. However, I shrugged it off and cooked it on high for 6 hours. When I returned home, it was indeed swimming in juices, and my house smelled amazing. The taste was even better than the smell! It was truly amazing! Thank you so much for sharing this recipe and helping someone like me, who doesn't know much about cooking! Haha.
Seared the thighs and put into a French cast iron enamel pan since I was using the crock pot to make broth. Cooked on 170 degrees for 5 hours, left in the oven for 2 more hours since I was playing golf and wouldn't be home. We ate it over rice that I had made with broth the day before. Very yummy. I did fall off the Keto wagon with this sweet gem but it was totally worth it. (I also had to make my own chili sauce with chutney and hot pepper flakes but it worked out fine.) Personally, I would mix everything in a bowl, then dump it in the slow cooker...rather than trying to stir/mix everything in the cooker. And I would take the skins off before cooking. (save them to make stock) But I have saved this and can't wait to try it.
I made this the other night and I’m sorry me and the family didn’t like it I eat anything but I couldn’t eat it even it was way too sweet and oregano does not go well with the other ingredients I don’t know if it was too dry because I did remove the skin but did not like the flavour also
Alternatively, you can use boneless/skinless chicken thighs, and cook on low for 8-10 hours. If you go this route, I'd pull the chicken a half hour before serving, and shred it, before replacing it in the sauce. This will ensure that every bite is flavorful and juicy. This is the best route to go if you intend to serve over rice in a bowl. Similarly, you can use russet potatoes instead of the waxier red/gold potatoes. If you opt to go this route, wait until the last 90 minutes before adding them, or they'll completely fall apart. Personally, I'd use half the oil in this recipe for cooking. The thighs release plenty of their own as the fat in them renders throughout the slow cooking process.
@@KariIsSoVery If you do, I'd also suggest turning your crock up to high, to make sure that they cook through fully. I've had cases where 90 minutes on low didn't cook Russets, but high did. I've also had cases where 90 minutes on high disintigrated the Russets, which essentially turns them into a thickener. I know crockpots are supposed to be set and forget cooking utensils, but certain things require more attentiveness than others.

I agree. I love my crock-pot being so easy to just set it up & let it work it's magic. Being a little older now, it's certainly a helpful tool. It's been a blessing to my hubby & I. These days if I'm not using that, it's the air fryer or George Foreman grill. We are all for the easy appliances as well. We're also on a fixed income so we eat almost all our meals at home bcuz even fast food has gotten so pricey, so, it's nice having the easier options to help is out at home.

Great recipe thanks for it I love using the crockpot since my chronic pain makes it hard to stand and cook for long periods of time. I would also think about layering my food instead of mixing it together put the potatoes on the bottom and then your soft vegetables onions mushrooms ET see in the middle and then the chicken on top so that the juices cook and fat cook down into the vegetables.
Made this for the 2nd time. 2nd time was better than the 1st. Only because I made the sauce and (used) chicken breast and marinated over night in fridge. Then started cooking it around 10am (eastern Sydney NSW, Australia time) and tasted heaps better.
I took advice from the comments and seared the chicken skin side down in the pan first and then put it in the slow cooker. I also added baby carrots. Then followed the recipe to a T. At the end, I pulled the chicken from the crock pot and put it on a baking sheet and broiled the skin side for 3 minutes. I made this for my Dad's birthday! It was a hit with everyone! Going into the list of favorites! Thank you for making my Dad's birthday dinner a hit!
It didn’t need any browning in my opinion! It came out delicious and so flavorful. Excellent blend of sweet and spicy! I did leave on the chicken skin and I did not need olive oil because there was enough fat.
Great recipe! I just seared my chicken thighs in a skillet with olive oil and butter to give the skin a nice crunch on the outside before I put it in the crockpot.

Thank you for having details people usually leave out, like exactly how much salt and pepper you used. “To taste” is difficult if you’re making an entire recipe, not just one serving.
I made this recipe the other evening for dinner and I also made yellow rice and it is so delicious! I only had whole potatoes, so I cut them into pieces and used them. They were so delicious! Almost tasted like sweet potatoes. Will definitely make this recipe again (and again)! Ty!
And broiling at the end will carmelize the sugars a bit (I'm more of a griller than crock=potter, partly because I like that slight surface 'burn', expeically if still with skin.). I'd be inclined to both brown the chicken for that flavor, then to carmalize some of the sauce on the chicken with an ending broil, methinks. Although, my butane torch purchased for just such purposes might do just fine and be faster and more energy efficient than broiling.
This was wonderful. At the last hour, I carefully transferred the thighs onto a baking sheet and threw them in the oven - 400 degrees, 15-20 minutes. This browns them nicely. Then I added a small amount of heavy cream to the sauce before returning the thighs to the slow cooker.
This will be the 2nd dish I’ve made from this page. My man loved itttt!!! It’s delicious 😋 I did 7 thighs and ate it with yellow rice and steamed broccoli.. disappointed there are no leftovers, I’ll prob double it next time looking for a 3rd video 👀

I stayed true to your sauce but I wanted to braise this in my dutch oven in the oven instead of using a crock pot. Since I was using a dutch oven I was able to sear my chicken first. Put a few tablespoons of flour and a little salt and pepper into a plastic bag and put your chicken pieces in the bag and shake them in the dredge. Then put your 2 tablespoons of oil in the dutch oven and heat it. Sear the flour dredged chicken in the oil to get a nice golden color on it. This will also create some flour/oil mix in the bottom of the pan and create a sort of "roux" which will naturally thicken your sauce so you won't need the corn starch. Put the onions, potatoes, sauce, and oregano into the dutch oven, cover, and put into a 300 degree oven for about 2 hours. I ended up adding a bit of water to mine since the amount of sauce the recipe makes didn't cover my chicken and potatoes. But it came out yummy!

I just made this yesterday following the exact recipe just a little less because I only made 4 pieces of chicken but it came out really delicious. A little different than what I’m used to but it tasted really good. Highly recommend skimming the oil from the top so it’s not super greasy but besides that really good and easy to do my boyfriend even enjoyed the meal. Thank you!
EDIT: I came home during lunch to see if it was going okay. It never started cooking even though I put it on low. I don't know if it was the outlet or my crock pot, but now it amounts to lost money. I am hurt. I've prepared this with 8 thighs, all else same, and put the crock insert, lid on, in the fridge, so I can start it in the morning before work. My crockpot is small. So except for forgetting the oil until after but before the sauce I layered instead of mixing around before the sauce. I used yellow/yukon gold potatoes and cut them up. I'll be at work when you suggest adding corn starch, so I just stirred that starch/water mixture into the sauce, heating it all a bit to dissolve better, before pouring the sauce into the crock. I hope it all turns out wonderful! I'll be making yellow rice like you did using a recipe I found elsewhere.
Wow, it does look great. I rarely find recipes I want to make and I will be making this today. I have all the ingredients. Thighs are my absolute favorite meat and I even grow some of my potatoes.
I made this tonight and the aroma alone is amazing. However I must’ve overcooked it because my chicken came out dry; if you can believe that! Dry chicken from a crock pot! I think 4-5 hours on high is sufficient time. I will definitely make this again.

The second time I did it, I didn’t have lemon juice so I substituted white cooking wine instead and I added frozen peas & fresh red bell peppers to a box of chicken rice pilaf (Near East brand) and it still came out really good!!! So good in fact that my extremely picky (6 & 7 yr old) grandchildren ate ALL OF IT and they almost never do that - unless I cover something in ketchup!

Little tip you can always throw chicken in a hot pan for a minute or two before cooking to get an even nicer sear and slight crunch on that chicken skin
Also, I was thinking you could put the chicken pieces under the broiler before serving.
Yes to broiler or to hot pan. Either way that chicken is going to taste a lot better if that skin is nice and crispy.

I didn't have time to do this in a slow cooker so I just let it all marinate for about an hour at room temp and then threw it in the oven at 400 for about 30 minutes. I turned up to broil for 5 more minutes to finish it off. Probably one of the best meals I've ever made. And so easy.
I made this last night and my husband loved it! One of his new favorites.

I made this and it was terrific! The sauce really makes this recipe. However, I did not add the olive oil. There is enough fat naturally on the chicken.

I just got done making this and had a piece with some white rice. First time I made it, and ohhhh my goodness….every one needs to make as well. I cut the oil down to one tablespoon and added a teaspoon each of paprika and cayenne pepper and it had the perfect back end around the top of my mouth.

Made this tonight and it was so nice! Everyone loved it. If I made again I’d maybe add a little less honey and a bit more soy as it’s pretty sweet. Also used the Instant pot for ~20mins which was perfect (tried 12 first but potatoes were too hard). Thankyou!

I am not a cook by any means, but I only had chicken breast available at the time. I had all the ingredients except for the lemon. I started by making the sauce and chopping up everything. Then, I simply threw everything into the crock pot. I was worried because in the video, the dish was swimming in juices, and I wondered if I had forgotten something. However, I shrugged it off and cooked it on high for 6 hours. When I returned home, it was indeed swimming in juices, and my house smelled amazing. The taste was even better than the smell! It was truly amazing! Thank you so much for sharing this recipe and helping someone like me, who doesn't know much about cooking! Haha.

Seared the thighs and put into a French cast iron enamel pan since I was using the crock pot to make broth. Cooked on 170 degrees for 5 hours, left in the oven for 2 more hours since I was playing golf and wouldn't be home. We ate it over rice that I had made with broth the day before. Very yummy. I did fall off the Keto wagon with this sweet gem but it was totally worth it. (I also had to make my own chili sauce with chutney and hot pepper flakes but it worked out fine.) Personally, I would mix everything in a bowl, then dump it in the slow cooker...rather than trying to stir/mix everything in the cooker. And I would take the skins off before cooking. (save them to make stock) But I have saved this and can't wait to try it.

Alternatively, you can use boneless/skinless chicken thighs, and cook on low for 8-10 hours. If you go this route, I'd pull the chicken a half hour before serving, and shred it, before replacing it in the sauce. This will ensure that every bite is flavorful and juicy. This is the best route to go if you intend to serve over rice in a bowl.
Similarly, you can use russet potatoes instead of the waxier red/gold potatoes. If you opt to go this route, wait until the last 90 minutes before adding them, or they'll completely fall apart.
Personally, I'd use half the oil in this recipe for cooking. The thighs release plenty of their own as the fat in them renders throughout the slow cooking process.

@@KariIsSoVery If you do, I'd also suggest turning your crock up to high, to make sure that they cook through fully. I've had cases where 90 minutes on low didn't cook Russets, but high did. I've also had cases where 90 minutes on high disintigrated the Russets, which essentially turns them into a thickener. I know crockpots are supposed to be set and forget cooking utensils, but certain things require more attentiveness than others.

- **Cajun Sausage**: 1 lb, cut into bite-sized pieces 🔴
- **Golden Potatoes**: 4 cups, diced 🟡
- **Minced Onions**: 1 cup 🟣
- **Bell Pepper**: 1 cup, diced 🟢
- **Celery**: 1 cup, diced 🔵
- **Jalapeños**: 2, sliced (adjust to taste) 🟠
- **Olive Oil**: 2 tablespoons 🟡
- **Butter**: 2 tablespoons 🟠
- **Honey**: 1 cup 🟡
- **Garlic**: 6 cloves, minced 🟢
- **Soy Sauce**: 1/2 cup 🟣
- **Cornstarch**: 2 teaspoons 🟠
- **Water**: 2 tablespoons (to mix with cornstarch) 🔵
- **Salt**: to taste 🟣
- **Pepper**: to taste 🟠
Instructions:
- 🟢 **Prepare the Slow Cooker**:
- If using bone-in chicken thighs, remove the bones and chop the meat into bite-sized pieces. For boneless thighs, simply cut them into bite-sized pieces. Heat olive oil in a pan over medium heat. Brown the chicken pieces on all sides (about 3-4 minutes per side). Transfer to the slow cooker.
- 🔴 **Prepare Vegetables and Sausage**:
- In the same pan, sauté minced onions, bell pepper, celery, and jalapeños until softened (about 5 minutes). Add diced golden potatoes and sauté for another 5 minutes. Transfer to the slow cooker along with the Cajun sausage.
- 🟡 **Make the Honey Garlic Sauce**:
- In a bowl, mix honey, minced garlic, soy sauce, and a pinch of salt and pepper. Pour the sauce over the chicken, vegetables, and sausage in the slow cooker.

I agree. I love my crock-pot being so easy to just set it up & let it work it's magic. Being a little older now, it's certainly a helpful tool. It's been a blessing to my hubby & I. These days if I'm not using that, it's the air fryer or George Foreman grill. We are all for the easy appliances as well. We're also on a fixed income so we eat almost all our meals at home bcuz even fast food has gotten so pricey, so, it's nice having the easier options to help is out at home.

Great recipe thanks for it I love using the crockpot since my chronic pain makes it hard to stand and cook for long periods of time. I would also think about layering my food instead of mixing it together put the potatoes on the bottom and then your soft vegetables onions mushrooms ET see in the middle and then the chicken on top so that the juices cook and fat cook down into the vegetables.
Made this for the 2nd time. 2nd time was better than the 1st. Only because I made the sauce and (used) chicken breast and marinated over night in fridge. Then started cooking it around 10am (eastern Sydney NSW, Australia time) and tasted heaps better.
I took advice from the comments and seared the chicken skin side down in the pan first and then put it in the slow cooker. I also added baby carrots. Then followed the recipe to a T. At the end, I pulled the chicken from the crock pot and put it on a baking sheet and broiled the skin side for 3 minutes. I made this for my Dad's birthday! It was a hit with everyone! Going into the list of favorites! Thank you for making my Dad's birthday dinner a hit!

It didn’t need any browning in my opinion! It came out delicious and so flavorful. Excellent blend of sweet and spicy! I did leave on the chicken skin and I did not need olive oil because there was enough fat.

I made this recipe the other evening for dinner and I also made yellow rice and it is so delicious! I only had whole potatoes, so I cut them into pieces and used them. They were so delicious! Almost tasted like sweet potatoes. Will definitely make this recipe again (and again)! Ty!

Or you could remove them & throw them under the broiler for just a few minutes once they are done cooking to keep the skin really crispy!
And broiling at the end will carmelize the sugars a bit (I'm more of a griller than crock=potter, partly because I like that slight surface 'burn', expeically if still with skin.). I'd be inclined to both brown the chicken for that flavor, then to carmalize some of the sauce on the chicken with an ending broil, methinks. Although, my butane torch purchased for just such purposes might do just fine and be faster and more energy efficient than broiling.

This was wonderful. At the last hour, I carefully transferred the thighs onto a baking sheet and threw them in the oven - 400 degrees, 15-20 minutes. This browns them nicely. Then I added a small amount of heavy cream to the sauce before returning the thighs to the slow cooker.

I stayed true to your sauce but I wanted to braise this in my dutch oven in the oven instead of using a crock pot. Since I was using a dutch oven I was able to sear my chicken first. Put a few tablespoons of flour and a little salt and pepper into a plastic bag and put your chicken pieces in the bag and shake them in the dredge. Then put your 2 tablespoons of oil in the dutch oven and heat it. Sear the flour dredged chicken in the oil to get a nice golden color on it. This will also create some flour/oil mix in the bottom of the pan and create a sort of "roux" which will naturally thicken your sauce so you won't need the corn starch. Put the onions, potatoes, sauce, and oregano into the dutch oven, cover, and put into a 300 degree oven for about 2 hours. I ended up adding a bit of water to mine since the amount of sauce the recipe makes didn't cover my chicken and potatoes. But it came out yummy!

I just made this yesterday following the exact recipe just a little less because I only made 4 pieces of chicken but it came out really delicious. A little different than what I’m used to but it tasted really good. Highly recommend skimming the oil from the top so it’s not super greasy but besides that really good and easy to do my boyfriend even enjoyed the meal. Thank you!

I came home during lunch to see if it was going okay. It never started cooking even though I put it on low. I don't know if it was the outlet or my crock pot, but now it amounts to lost money. I am hurt.
I've prepared this with 8 thighs, all else same, and put the crock insert, lid on, in the fridge, so I can start it in the morning before work. My crockpot is small. So except for forgetting the oil until after but before the sauce I layered instead of mixing around before the sauce. I used yellow/yukon gold potatoes and cut them up. I'll be at work when you suggest adding corn starch, so I just stirred that starch/water mixture into the sauce, heating it all a bit to dissolve better, before pouring the sauce into the crock. I hope it all turns out wonderful! I'll be making yellow rice like you did using a recipe I found elsewhere.
