I had a go at making this today. I didn’t slice the chicken correctly and cooked it for a little too long (the sauce was somewhat charred) but it still tasted pretty good. I think if I tried it again it’ll come out very nicely!
I tried it today, the chicken breast was a little too thick so it ended up being a little undercooked in the centre.. same for the sauce became a bit charred.

I think it might have been slightly overcooked, especially when dealing with chicken beast, the best approach I find is to sear it on both sides, take it out before it's fully cooked, then prepare the sauce in the pan and return the chicken breast once the sauce is ready, and cook it together with the sauce until its in the preferred doneness, that way you don't have to count on the sauce to finish cooking before your chicken gets overcooked... And once it gets overcooked, no amount of sauce can change the fact that it's dry... For the cooking technique showed in the video I would suggest using chicken thighs instead, as those have more fat, and are way harder to overcook

I was thinking 🤔 the same thing. Taking the chicken out preparing the sauce, and then returning the chicken to the sauce, so that way the chicken doesn’t over cook and dry out.

Can we reduce the amount of butter though? or use a little water itself to cook the chicken.
You can skip the second round of butter, or use a smaller amount. But the first 40 grams should not be avoided.
