Oh, wow I just tried this instant pot recipe recipe and omg! I've never been successful cooking rice in the instant pot but not only is it a success, the chicken, and the rice, too, is remarkably moist and fluffy and delicious. Thank you so much!
We make IP C&R often. Maybe every other week. I hadn’t added the peas. I’ll try that next time. A couple things we do differently: we add at least a full onion. Large chopped. It becomes transparent and sweet and really adds to the dish (but we really love onions). We also use boneless skinless thighs. I braise them in sauté mode whole, remove them and sweat the onions. Deglaze then add the thighs back in, uncut. Add rice and cook on high for 8 minutes and natural release for 10 minutes. Fluff with two big forks and the chicken shreds up so nicely! This makes a wonderful comfort meal.

I just left out the parmesan because I didn't think it matched with the spices I used. My picky toddler loved it. I found your channel while searching for Instant Pot chicken and rice meals after a massive failure last week from an internet recipe. I'm now binge watching all videos and excited to try more of your recipes ❤❤

Hi there! You would need to double this recipe for 12 large servings (best done in an 8-quart Instant Pot) You will simply double the ingredients BUT keep the cooking time the same. It will take a bit longer to come to pressure and I would let pressure release for at least 20 minutes.
As much as I love whole grains, this is one recipe in which it is crucial to use long-grain white rice or jasmine rice, not brown rice. The chicken would be overcooked and become dried out in the time it takes brown rice to cook. But feel free to add in up to 2 cups of more veggies.

I always enjoy your channel. I’m surprised the rice cooks so fast. When I cook rice by itself I usually have to do 7 minutes with natural release. Is there a reason it’s so fast in this recipe?
First of all, thank you Ed! I love hearing you enjoy my channel. As for rice, I always have luck with 3 minutes on HIGH pressure (don't use rice button) with a 1:1 ratio. As long as you are not using warm liquid and using long-grain (not short-grain) rice, that should work for you.
@@edrudolph1 Your 7 min natural release is fool proof. 1 and 1/4 C liquid to 1 C rice. I've used the 3 or 4 with 10min release. It's ok but the 7 with natural is best for me.
Not for this recipe. Minute rice is parboiled and will take less time and can often be mushy when pressure cooked. I haven't had much luck with it. Sorry
I have Cystic Fibrosis, which effects my lungs and pancreas (amount other organs). My main issues are lung infections and the inability to absorb fat or protein correctly.

No need to change anything! I would recommend adding the frozen veggies right on top of the rice, along with a pinch of salt. Cook as directed.

Not for this recipe. Minute rice is parboiled and will take less time and can often be mushy when pressure cooked. I haven't had much luck with it. Sorry
