    We make IP C&R often. Maybe every other week. I hadn’t added the peas. I’ll try that next time. A couple things we do differently: we add at least a full onion. Large chopped. It becomes transparent and sweet and really adds to the dish (but we really love onions). We also use boneless skinless thighs. I braise them in sauté mode whole, remove them and sweat the onions. Deglaze then add the thighs back in, uncut. Add rice and cook on high for 8 minutes and natural release for 10 minutes. Fluff with two big forks and the chicken shreds up so nicely! This makes a wonderful comfort meal.

    Thank you so much for this recipe. I've been trying (and failing) for a long time to make one pot chicken and rice meals using both stovetop and IP. I tried your method today and it was perfect! I just left out the parmesan because I didn't think it matched with the spices I used. My picky toddler loved it. I found your channel while searching for Instant Pot chicken and rice meals after a massive failure last week from an internet recipe. I'm now binge watching all videos and excited to try more of your recipes ❤❤

      Hi Marguerite! For this recipe to work, you need to use long-grain rice that is not parboiled.

    • @AMindFullMom
      @AMindFullMom  Год назад +1

      Hi there! You would need to double this recipe for 12 large servings (best done in an 8-quart Instant Pot) You will simply double the ingredients BUT keep the cooking time the same. It will take a bit longer to come to pressure and I would let pressure release for at least 20 minutes.

    Could I use brown rice instead and add some more vegetables?

    • @AMindFullMom
      @AMindFullMom  Месяц назад

      As much as I love whole grains, this is one recipe in which it is crucial to use long-grain white rice or jasmine rice, not brown rice. The chicken would be overcooked and become dried out in the time it takes brown rice to cook. But feel free to add in up to 2 cups of more veggies.

    If I want to add green beans and frozen broccoli as well do I need to add more stock and increase the cooking time? More rice too? Thanks

    • @AMindFullMom
      @AMindFullMom  10 месяцев назад +1

      No need to change anything! I would recommend adding the frozen veggies right on top of the rice, along with a pinch of salt. Cook as directed.

      Thank you so much for your swift reply. If I’m doubling the recipe do I just add everything x 2? And can I just wear whole chicken thighs instead of pieces? Sorry about all the questions but I just recieved my indstapot yday and want to start with something easy. I have to cook for my parents too so I tend to batch cook and it’s going to be so much easier as I can spent a couple of days cooking one me using the slow cooker! • @AMindFullMom

      You are welcome. So to double this recipe, double the ingredients, and keep the cooking time the same. But keep in mind it will take longer to come to pressure and for pressure to release. You do need to cut the chicken up to ensure it fully cooks though. I hope you find many more recipes to enjoy! You may also like my IP Tips: amindfullmom.com/instant-pot-email/ @@hannahjessel6552

    I always enjoy your channel. I’m surprised the rice cooks so fast. When I cook rice by itself I usually have to do 7 minutes with natural release. Is there a reason it’s so fast in this recipe?

    • @AMindFullMom
      @AMindFullMom  2 года назад

      First of all, thank you Ed! I love hearing you enjoy my channel. As for rice, I always have luck with 3 minutes on HIGH pressure (don't use rice button) with a 1:1 ratio. As long as you are not using warm liquid and using long-grain (not short-grain) rice, that should work for you.

      @@edrudolph1 Your 7 min natural release is fool proof. 1 and 1/4 C liquid to 1 C rice. I've used the 3 or 4 with 10min release. It's ok but the 7 with natural is best for me.
