For those of you who have been searching in the comments for an answer to this 4:13 It's just post-mortem muscle spasms. Because it doesn't take much for the muscles to move, the energy that's left causes the ions in the cells to move out of the cells. However, because the fish is dead, nothing can move the ions back into the cells. So, what you get is muscles rapidly contracting until all of the energy that's left is gone.
the Japanese uses a method where it damages the nervous system of the fish & also prevents it from losing too much blood to maintain its freshness & at the same time, it's like giving respect to the fish as it won't feel the pain when it is being dissected~ :) & it's probably the reason why the fish is being very chill about it xD That's at least what i heard from my Japanese friends xD

People don't know they're in pain because it doesn't act like a regular animal, but they do feel pain and aware of their imminent death (proven in millions of different studies and Pocahontas song)

Just because westerners separate the animal differently all the pieces are still being utilized. And when I order catfish at the restaurant, they serve the head and we eat the head! I agree, the Japanese do it the best and they avoid factory farms and factory style processing, so hats off for that. But things like Halal method and Yulan meat festival probably deserve your need to point out a flaw much more so than western society.
Maybe they performed Ikejime after they cleaned it? It's where they put a rod through it's spine to make the meat more tender, but it's usually done right after they bonk the fish

Well it was one figer for half a second, i work as a chef aswell, and i do the same sometimes. I always check my pasta wather like this if i have enough salt in it. At some point when you always have to touch hot stuff you start to not feel it that much anymore..
I can respect how no part of that fish was left behind, besides the guts of course. Even the head was cooked and enjoyed. Splitting it in half was intense. The fish gave him the stink eye haha. Overall, i think i would definitely give this fish a try if i come across it.
