    What amazes me is how they prepare their food with care and delicacy. They make use of every consumable part of the fish as possible. Even with simple garnishes, they make the dishes so mesmerizing.

    I can attest that this is a good chef that knows what he's doing. My father in law is a sushi chef and prepares his fish the same way. It is an art and these guys know what they are doing. I use the same knives and have the same cutting boards, etc. But he's more skilled than I am. I was drooling looking at the Kama. I want to eat that so badly.

      You hate seafood eh? Try picking up Tilapia, stuff it with garlic butter, throw it on an open grill and keep the flames high.
      Or, you could stuff it with garlic, chili, onions, lemongrass. Grill just enough to get that toasted sides but juicy inside.
      Then dip in lemon/vinegar with chili, garlic, soy sauce

      Yellowjack is not expensive. You can have a frozen whole hamachi (50-60 cm amberjack), perfect for grilling and braising, for as little as $4 where I live. Expensive is sashimi-grade yellowjack. ;)
