    What I love about japanese cooks and chefs is that their knives are always so sharp. Those cuts look clean and effortless.

    As a fisher AND a cook, I've learned SOO much about how to angle my knife and make my cuts from these videos. Granted, a 30 lb blue catfish is a far cry from a 100 lb Opah, but it still translates well to getting it all in the pan, with minimal bones and wastage!

    I could sit here and watch this all day. Thanks for taking your time to make these videos for us. I've noticed everyone who handles the fish and prepared the meals have badly sore looking hands. That shows you they work hard and take pride in their skill. My advice to them, this is something to help soothe your hard working hands. Let them dry out well after work. Before bed apply a liberal amount of hydrocortisone cream all over both hands. Then place them inside some tight fitting but breathable gloves. In a short time you will notice a huge difference. I know it's a long shot anyone of them will read this, but just In case. Bless you all!

    A highly-skilled fish preparer who uses the right tools(VERY sharp knives) and knows how and where to cut! I bet there will be no waste, too. Okinawans are dependent on seafood as it is an island. I was there in the early-1950s (Naha and Kadena, with the US Air Force). This particular species of fish has so much bone to meat! Reqires intimate knowledge of the fish to get the best from it. i'm ready for dinner!

    its funny with some comments that state the fish was too pretty to die. Its like what only ugly fish can be eaten? Then you will have comments that say the fish is too gross to eat..lol wow these fish are HUGE. Makes me rethink my aquarium fish.. wowzer. love watching these straight to the core videos... it is educational. for real. great job.

    That was a beautiful fish!
    The fileting was done so expertly and delicately at the same time. The opah's pink meat reminds me of salmon. I wouldn't mind trying the filets, my ex-sister-in-law would always tell her child, "We try food items/dishes once and then we can decide if we like them or not and leave them off our list of foods never to eat again."

    if this is 'street' food it puts the rest of the world to shame.. the filleting was amazing, the chef seemed like he was a pro and the cooking technique was sublime. Everything was cooked perfectly and seasoned well. i wish i was there! i really want to know what fruit that was at 20:00.

    The belly meat is the best. I never had Opah when I lived 3 years on Okinawa but since I've moved to Hawaii, I have had it several times. Haven't seen it in the fish market lately though..

    One of my favorite fish. It has quite literally one of the strangest bone structures and fillets I've ever seen. There are 5 different muscle groups on each side.

    This is a red sunfish. Although it has the name "sunfish," it is a fish similar to the loggerhead.
    It is the only thermostatic fish of its kind and tastes similar to tuna.
    I'm Japanese and sorry if it doesn't translate well.

    The way the fishmonger cuts the pieces is just neat. He knows really well how to extract the perfect cuts.
    Anyway, this is not a Pez Sol (Sun Fish), but Pez Rey (KingFish), Lampris guttatus.

    What amazes me is the knowledge of fish anatomy these butchers have. The knife work is amazing, and as a professional knife sharpener I am very impressed at the way the blade works the fish. What I'm sad about is that I did not discover knife sharpening until later in life, earlier in life I spent time in okinawa. I missed out on so many things! Chasing women snorkeling scuba diving and exploring the island. What I missed out on was the master bladesmiths, the fish markets, and the type of thing we see here. I had a wonderful time in Okinawa, and someday I will return. Hopefully before I am too old to get around!
