- A wonderfully fragrant sweet dish with the unmistakable scents of cardamom and rose water. Also known as barfi or milk fudge, it is commonly eaten on special occasions in many regions of Afghanistan and Pakistan.
The recipe is easier than you think and I’m quite sure you will be delighted with the results.
INGREDIENTS:
1 cup granulated sugar
1 cup water
2 cups milk powder
½ cup walnuts
½ cup almonds
1 teaspoon cardamom powder
1 tablespoon rose water
2 tablespoons pistachios, chopped
METHOD:
1. Grease an 8” square cake tin or plate. Line with parchment paper.
2. Grind walnuts and almonds to a smooth powder. Transfer into a medium sized bowl and add in milk powder along with cardamom. Mix well.
3. Add water and sugar into a heavy based pan. Dissolve the sugar, bring to a boil and then simmer on medium-low heat without mixing for 8-10 minutes. The liquid will bubble and become foamy and slightly thickened when ready.
4. Remove pan from the heat immediately. Stir the rose water into the dry ingredients in the bowl and immediately pour the dry sugar syrup into the dry ingredients. Mix well to combine all the ingredients.
5. Pour the fudge mixture into the prepared dish and spread evenly into the corners. Sprinkle over the chopped pistachios and press in with the back of a spoon. Leave to cool and set in the refrigerator overnight. This is enough time for the mixture to set and it can be cut into square or diamond shapes before serving.
NOTE: This dessert will keep for up to a week if stored in an airtight container.

Can we use honey instead of sugar? If so, how much honey?
I have never made sheer pira with honey so I cannot advise solidly on this. But the sugar and water combination make a syrup that sets when added to the dry ingredients - honey is unlikely to set in that way. For this reason, I think that honey would alter the results. Hope this helps.
