Classic Creme Brûlée | No Torch Needed!

  • Classic Creme Brûlée
    This recipe does not require a kitchen torch - the sugar is caramelized under a hot broiler/top grill for the same results.
    5 egg yolks
    2 cups heavy whipping cream
    ⅔ cup skimmed milk
    ⅓ cup granulated sugar
    1 teaspoon vanilla extract
    9 teaspoons brown sugar
    1. Preheat oven to 325° F (160° C)
    2. Pour milk into a small pan on low heat. Add heavy cream, granulated sugar, pure vanilla extract. Stir to dissolve the sugar and remove from the heat just before the boiling starts.
    3. Separate egg yolks into a small bowl. Lightly beat the eggs using a fork or a wire whisk. Transfer the eggs into a jug. Pour in the warm cream mixture into the jug. Mix well with the whisk.
    4. Place the ramekins into a deep baking tray. Pour hot water into the baking tray until the ramekins are immersed two thirds of their depth. Pour custard mixture into the ramekins.
    5. Carefully, place the baking tray into the oven. Bake for 30-35 minutes.
    6. Remove the cooked desserts from the oven and take out of the water tray. Refrigerate for 20-30 minutes
    7. Remove the cooled desserts from the refrigerator. Sprinkle each dish with a teaspoon and a half of sugar. Place ramekins under a HOT broiler/grill to caramelize the sugar. Keep checking to ensure the desserts don’t overcook.
    8. Remove from the heat and place in a refrigerator to chill before serving.

    How long to caramelized in the broiler? How many minutes?/ Please advise. Thanks!

      It depends on your broiler and how hot it gets. My broiler takes 5 minutes to really heat up. Once it is hot, pop the dishes under it and keep checking every minute or two. It takes 3-4 minutes for the sugar to caramelize under my broiler. Hope this helps😊
