  • Vintage American Waldorf Salad
    Named after the Waldorf Astoria Hotel in New York where it is said to have been invented, this salad is simple to put together. The combinations of the sweet and sour flavors along with the crisp and crunch is what makes this one of America’s favorite salads.
    INGREDIENTS:
    2 tart apples (Granny Smith’s variety), diced
    2 sticks of celery, diced
    1 cup red seedless grapes, halved
    ½ cup toasted walnuts or pecan nuts, chopped
    ¼ cup mayonnaise
    ¼ cup Greek yogurt
    2 teaspoons lemon juice
    1 tablespoon sugar
    ½ teaspoon salt
    DIRECTIONS:
    Dice the celery and the apples. Cut the grapes into halves. Transfer all the fruit into a large bowl. Add sugar and lemon juice into the bowl and stir to fully coat the fruit. Set to one side.
    Heat a small pan, then dry roast the walnuts. Stir to ensure even toasting and remove once the nuts release their aroma. Add the toasted walnuts into the fruit mix.
    In a mixing jug, add mayonnaise and Greek yogurt. Whisk until smooth and fully blended.
    Sprinkle salt into the fruit and then add in the wet ingredients. Fold in until the ingredients are combined.
    Chill in the refrigerator for an hour before serving.
    STORAGE:
    Since it contains no delicate greens, this salad will keep for 3-5 days in an airtight container if stored in a refrigerator.
    VEGAN VERSION:
    For a dairy free/vegan version, use cup for cup vegan Greek yogurt (Kite Hill or Forager brands are great if you are in the US) and vegan mayonnaise.

    I love this recipe, I usually tend to use sultanas instead of grapes but I think the grapes are a great idea especially in the summer!

    Not crazy about celery, what would be a alternative ? any suggestions ? Thankx

    • @SususCookbook

      You could replace the celery with grated cabbage so you still get that crunch. If you can get a pack of coleslaw mix (raw red and white cabbage only, not the deli version that contains mayo and oil), that would make an easy substitute. Hope this helps😊

    won't added the hot walnuts right out of the skillet wilt the apples?

    • @SususCookbook
      @SususCookbook  2 месяца назад

      Good question. Because the apples used are usually Granny Smith's variety, they are quite firm, and in this recipe, they are cut into chunks, which ensures there is no wilting. Thanks for watching😊

    This is eaten with a spoon then?

      It can be served as an appetizer or as part of a main meal. You can pair it with a grilled cheese sandwich or grilled/roasted chicken. A baked potato with some melted cheese would also work well. These are just suggestions. Thanks for watching😊

    I'm vegan so the dressing is out for me. Any ideas?

    • @SususCookbook
      @SususCookbook  Год назад +1

      Hi Mattie. The dressing can definitely be adapted to suit a vegan diet. The Greek yogurt can be replaced with a vegan option (same quantity), cashew or coconut yogurts can both work. The mayonnaise can be replaced with a vegan version (again the same quantity) If you live in the States, I know that Hellman's now do a plant-based mayonnaise, and that would be the closest match to this recipe's dressing. Hope this helps!😊

      @@SususCookbook Wonderful! Thank you so much. I live in the UK but London is very multi-cultural and vegan friendly so I'm sure I will find those ingredients! May even try it tonight! (If not definitely in the next few days, it looks amazing!)
