Harissa Chicken Tenders | Easy Weeknight Recipe | NO OIL NEEDED

  • A super easy dinner recipe idea that the whole family will enjoy. Perfect with a side salad and homemade fries.
    INGREDIENTS:
    1 lb / 0.5 kg (approx 12 pieces) chicken tenders
    OR
    2-3 chicken breasts cut into smaller strips
    2 cups breadcrumbs
    3 tablespoons mayonnaise
    1 teaspoon harissa paste
    DIRECTIONS:
    1. Into a large mixing bowl, add 3 tablespoons mayonnaise. Add 1 teaspoon of harissa paste. Mix the ingredients well.
    2. Add 1 lb (0.5 kg) chicken tenders into the bowl. Using a spoon, coat the meat pieces with the paste.
    3. Cover the bowl with cling film and leave to marinate for 1-2 hours. If you don’t have time to marinate, then set oven on to preheat straight away and move to step 5.
    4. Otherwise remove the marinated chicken from the refrigerator then preheat the oven to 350 °F (175°C)
    5. Pour approximately 2 cups of breadcrumbs into a flat plate or tray. Begin to coat each chicken tender with the breadcrumbs, turning over until completely covered.
    6. Lay evenly onto a parchment paper lined baking tray, and bake for approximately 25 minutes. The chicken is ready when it has reached an internal temperature of 165°F (74°C).
    USEFUL TIP:
    To avoid chicken overcooking or drying out, remove from the oven when it is a few degrees below the required internal temperature as meat continues to cook for a few minutes even when it has been taken out of the oven.
