Vegetable Pilau using a TEFAL Multi Cooker | One Pot Dinner Recipe

  • Pilau is an easy one pot rice dish mixed with a variety of vegetables, and cooked in a mildly spiced broth. The result is a fragrant and fluffy rice meal that can be eaten with salad and a plain dairy-free yogurt or with a favorite curry on the side.
    INGREDIENTS:
    2 cups long grain (basmati) rice
    ½ cup olive oil
    1 large onion
    1 green chili
    ½ teaspoon garlic paste
    ½ teaspoon ginger paste
    ½ teaspoon red chili powder
    ¼ teaspoon ground cinnamon
    1 teaspoon ground cumin
    1½ teaspoon salt (or to taste)
    1 large/2 medium tomatoes, chopped
    2 large potatoes, peeled and chopped
    1 cup mixed vegetables (frozen)
    2 cups water
    ½ cup fried onions
    ½ cup chopped cilantro
    DIRECTIONS:
    1. Wash rice and leave to soak in hot water for 30 minutes.
    2. Switch on the cooker and press the “sauté” or “brown” setting. Allow a minute for the pan to heat and then pour in the olive oil.
    3. Add the onions to the heated oil and sauté. Add a sliced green chili and cook with the onions. Continue to fry the onions until they are translucent. Then add ginger paste and garlic paste.
    4. Continue to fry for a further minute. Add cinnamon, cumin, red chili powder, turmeric, and salt to taste.
    5. Fry the ingredients for a further 1-2 minutes.
    6. Add in the potatoes. Cook for 2 minutes.
    7. Add in the tomatoes. Cook for a further 2 minutes.
    8. Add in the vegetables. Continue to cook and stir for another 2 minutes.
    9. Drain the rice and add. Stir to coat the rice with the vegetable sauce, cook for 1 minute ensuring it does not stick to the pan.
    10. Pour in the water, stir and seal the lid on the pressure cooker. Set on to pressure cook for 5 minutes.
    11. Switch off the cooker and allow the steam to naturally escape for 5 minutes before releasing the steam valve. Taking care, open up the lid and gently stir the pilau with a metal spoon or fork.
    12. Serve with plain yogurt and salad or a favorite curry dish.
