  • The Japanese Tamagoyaki omelette consists of rolling up successive layers of beaten egg during cooking. Here is the technique with three eggs.

    3 eggs
    1 tsp dashi powder
    1 tsp sugar
    1 tsp soy sauce
    1 tbsp mirin
    Vegetable oil

    Thank you for the video.Usually people tend to overcook eggs and I really hate that flavourof overcooked egg, your one looks spot on,I can almost smell and taste that deliciousness.Also good mix of spices, it is a "must try" for me.

      Got my pan, but when I went to find an instructional video found I lacked the same ingredients you mention. I can *make* dashi (I have the kelp and smoked fish and the plane) but that won't work (well) for this recipe. Ordered both, so I should be ready to go by Monday. Yami is a good source, and Amazon as well.

    Thanks, this was a lot easier to follow. One lady was doing a pretty good job but she kept burning the poor egg. I have this mostly down the only problem I was having with it was I forgot to kept coding the skillet over and over. That's what I'll do next time.

    tip: if you can't find dashi use fish sauce and leave out the soy sauce since fish sauce is already salty... same fish sauce as the filipino use

    If you used 2 eggs (for 1 person), would that change the measurements for the other ingredients?

      tried 2 eggs , firstly with 2 , its not possible to get the thickness , of course the same pan is needed, lol i use standard round ones

    My eggs turned dark with this recipe even though I used 4 eggs. Think it's better to use less instant dashi

      Anything really. I make this almost everyday for my children and I’ve paired it with Rice, meat, veggies, fruit and dairy so it’s very versatile only thing I wouldn’t serve with it is fish

      Can't imagine why not, but it would be materially a different thing. I'd use the whites of at least four eggs however, possibly five, to get something like the same volume.

      you can still make it but it won't taste the same - maybe a dash of fish sauce?

      Tamagoyaki is only one part of a Japanese breakfast. Usually you will have some soup, some white rice, some protein, (usually a piece of fish) some pickled vegetable and 2-3 slices of tamagoyaki. So you arent just eating the egg.
