When they started the process, I was thinking, holy cow, thats a huge omelet..... Then, in the end, i see what they do. After watching the process, i can see why they've been in business for a 100 years.... My hat's off to the crew.... Well done!

I went on a two week bus tour of Japan ten years ago. Sounds tacky, but they even do that well. I've been back three times since then, and will return. Amongst their numerous skills, they happen to make the best egg dishes on earth.
They are now limiting tourism because of the high numbers. Everybody complaining about the high cost of inflation but, the airlines cannot keep up. And many countries are now trying to stem the flow of tourists.
@@rayRay-pw6gz Yes, some of the people on my tour were from Quebec, and they were ignorant and disrespectful. Japan isn't limiting tourists though, they are limiting where the can go to prevent environmental damage.
Editing is a powerful thing. There are cuts every 5-10 seconds in a large part of the video. Some of them are just different angles, but a good amount of them are also small jump cuts.
Thank you for showing food craftsmanship from Korea and Japan down to Malaysia and Thailand with ports in-between. Also thank you for providing a map point where we can see a 360 view. This touch simply adds to your channel's value. Edit: 4:47 Gravy from that grease would be amazing. So many things start with a roux.
On another note....the use of wood by the Japanese fascinates me - it's amazing craftmanship and just give a feeling of things being natural. Still got my "Geta" received from a karate chief instructor in 1981....my name and that of the karate style written by brush. That time is past now I will learn more of their food and recipes. Precision at it's finest, I would be proud to break bread at this establishment. I heard not one word spoken while these "Masters of their class" went to work. No screaming and yelling, and just a cohesiveness that even Chef Gordon Ramsey would admire and enjoy.
Just that it‘s not slow, right? There is not a single hand movement that could be avoided or done differently. It‘s efficiency to the max. There just is no hectic since everything is thougt through perfectly and pulled off by trained people.
It's because they actually have enough workers and time to do everything they need to do. Like, they have an assembly line of like ~5 people just on the omelet pans. In other showcases, there's would be 1 or 2 people with the same amount of work. It also helps that these omelets are made using a lower flame so there's a lot less stress in the timing of everything.
Always a good practice when cooking. I do this for cheese crafting or if making something for others (potlucks, reunions and family gatherings especially).

He learned to tell when the pan was at the right temperature, so the egg wouldn't stick. You can cook egg on steel pans without it sticking. Just season the pan, then when you go to cook with it heat the pan and splash a little bit of water on it. If the water makes beads that roll around in the pan rather than steam, it is at the right temperature and the food won't stick.
If your shop has been around for 100 years, you can take things slow as people will still come just for the ambience, lore and history. Plus, you can't rush a good rolled omelet, especially those with 4 or 5 egg layers.
Technology is supposed to help the worker, not replace the worker. I have a lot of respect for workers keeping old tradition alive and keeping industry in the hands of the people.
