It's not tamagoyaki. Dashimaki.
Don't turn down the flame and you started rolling the egg too late. The egg might lost umami, sweetness and softness.

It takes skills, understanding of flame/heat and practices to make good dashimaki(dashi added) or tamagoyaki. I found French omelet by Jacques Pepin is the example of how we should aim for perfection of cooking eggs (omellete and even tamagoyaki)
