I just bought 5 lbs to make for my granddaughters graduation this Saturday. They were 99 cents a lb. and I cooked them yesterday . Saturday I’ll sauté them and put in big chunks of potatoes that I cooked separately. My family loves them. It looks like you will get quite a few jars..Good idea putting the lemon pepper in the jars. I like how you describe how you will be using the canned goods. How do you tell the difference between all of them? one cannot label the jars b4 canning. NEXT year they will be all your own beans! how is the garden coming along?
Thank you my friend! I place them in the canner in a certain way the beef ones are darker lemon pepper sits on the bottom and water one is clear. The gardens are coming and I have tomatoes everywhere in the raised beds. The potato bags I have to tell you are AMAZING!!
Good Morning Rose, They are soft but I couldn't call them mushy.. My personal favorite way to eat them heated in a skillet with bacon fat garlic let the green beans drain well and toss them with a bit of pepper.. SO GOOD.
Am I correct that fresh bean need to be blanched for 2-5 minutes before canning, were as frozen been have already been blanched before freezing so they can just be thawed out and directly to canning. The "fresh" method is called hot pack, Correct? I live in Hawaii and we are having a hard time getting green bean and really want to can some. Great video. New sub.
Hello and Welcome!, Yes that is correct the raw beans can be blanched or they can be put into the jars not blanched. For the frozen ones yes they are already blanched so you would could skip that step
Thank you for doing this. Of course the USDA tells us that the beans will come out mushy after being frozen and then canned. But don't most of us want cooked beans? Who eats green beans with a bite?

Do the green beans get a mushy texture I mean they were frozen first so just wondering about the texture after the canning time?

no just thaw them, loosely pack in jars, also no they are mushy at all.
