  • Do you need room in your freezer? Are you worried some frozen veggies may get freezer burned? Canning frozen vegetables is one of the EASIEST things to can for beginners to canning and it is so useful to have vegetables on your shelf ready to eat!

    I have been concerned about losing power so I have been using up my frozen vegetables also (pressure canning). I also like to get a big chunk of meat, doesn't matter as long as it is cheap, and adding frozen vegetables to about 1/3 jar of meat...Instant meal. You explain things well. Good video!

      I absolutely agree. I'm working towards more canned on my pantry shelves and less frozen for the same reason and anytime it's a full meal, that's an added bonus!

      7/30/24 Since the global tech disruption hit I started canning everything possible from my freezer! There were areas in my city that were affected by the tech disruption AND storm damage - all at the same time!

      @@dancinginabundance I understand. Since I had just about emptied my freezers with canning, they are full again. Now my tomatoes are starting to come in, not enough yet to can but I put them in the freezer until I have enough to process. I guess I will be starting over with emptying out my freezers. It is a lot of work but it is better than being hungry and saying "if I had only canned all my food......". Good luck to you.

    If you're able to get into a Sams Club, a Costco or some other pallet store, they have a section typically off to the side of the exit doors that are bins of cardboard boxes that the shelf products come in, for people to use and easier transport their bulk items. I like to rifle through there and pick out the cardboard trays to use in my pantry to store my finished jars in and easier transport and store.

    I have pulled meat out of my freezers and canned it. But I must say that it never occurred to me to can frozen vegetables. I may give it a shot. Thanks for the video.

    FYI - I figured out that pint jars have different circumferences. Different ones I measured were 1/4 inch different around which meant I got more of the "ever so slightly" smaller ones into my canner. I noticed that while watching someone can pints in my same canner, he got more in his. That's when I measured the 2 brands I have.

    I just love this! As a novice, this would be an excellent way for me to practice without fear of ruining something I worked hard to grow or spent a lot of money on to purchase! I just love you to death, sis!

      @@AtHomewithMrsJoan I inherited my sweet mother-in-law's massive 21 qt 1970 Presto canner 10 years ago and it's been in my attic ever since. Now that I'm retired, I took it down, replaced the gasket, gauge and relief valve and will be taking it to the extension office to be tested. My regulator weight appears to be a 15 pound weight though...I didn't realize there was a difference till watching your video! I guess I need to order a 10 pound weight.

      Definitely dehydrate my frozen corn! In my opinion the best way to preserve frozen corn.

      You don’t need a pressure canner for vegetables, just water bath them.

      Not safe to water bath veggies, except tomatoes. You can water bath fruit.

      ​@AtHomewithMrsJoan I am new to Canning. Haven't canned my 1st jar as of yet but have been Blessed by someone the items I will need to get started WB canning. I have a question about canning frozen veggies. When I cook can or frozen frozen corn or peas, I always add a Tablespoon of sugar. Can I add that when I'm canning too? Or do I need to wait until I'm ready to cook them.

    Trying to learn canning. I like pressure canning the best. We had a Hurricane this year and then a power surge which knocked the power out again. The garage never came back on and we post all our meat. The veggies are ok so I’m canning them tonight. The electrician wont be here for 5 more days!!!!

    I have watched a lot of tutorials for canning over the last 5 years this is a very good tutorial she covers a good amount of information and also the idea of emptying your freezer is good incentive. ❤

    This is a great video and you are so happy, a joy to watch. I never thought of canning frozen veggies. I am a novice to canning and I don’t particularly like the taste of commercially canned vegetables so I will definitely give this a try (as soon as I get a pressure canner). 😀

    Sometimes freezers just get too crowded. In an apartment you just need to be able to clear it out for fresh use. In times of prolonged power outage a crowded freezer is a terrible waste. Making stews to can will be my next project.

      Mom n I had chest freezers, but being alone I couldn't keep one in an apartment. I forgot how we'd bulk buy and harvest to can n freeze in July- Sept. and can from the freezer in fall n winter.

    You speak my language! I am from AL as well. 😁 I am so glad I came across your video. I didn't know you could buy different weights to control the pressure. I have been so frustrated for years because I have to keep watch on my pressure cooker to keep it at 10 lbs. I also need a rack so that I can have 2 levels of jars.

    A great video! Just the information I was looking for. Have started canning for the same reason, get good food out of the freezer. We were without electricity for three weeks after hurricane Rita and had to cook everything in our freezers to keep from going to waste. Now we want to can everything. Thanks, You are GREAT.

    I just found your channel! Last year in July, we had a terrible storm where I live in Springfield, Illinois. Called a derecho. Scariest storm I've ever been thru and I've lived here all my life. ( I'm 57) our town was shut down for over a week. The next week I bought my first pressure canner. I had water bath canned for years, but, I was scared of pressure canning. Not any more. I 100% agree with everything you just showed and said. You never know when you might lose power. That storm shocked us just like the snow storm you got shocked you. And it changed us all I believe. I subscribed ❤

    I'm so glad see this. A friend gave me a lot of fresh carrots, and i don't have time to can them just yet. But, before they get too old, I'll blanch them and freeze them. Then, when i have more time, and the weather is much, much cooler, i will pressure can them. Trust me, summertime in Texas is NOT the time to do your canning 😅

      If you buy a canner a book will come with it. I still watched videos for months before I canned. It’s been 3 years now and I have canned a lot - whenever I find a good sale 😉. It has taken a lot of worry away from me about power outages etc. And I really enjoy it. Good luck

    Great idea my freezer is full I have canned venison potatoes and and chicken legs, and thighs, keeping the bones in it, gives it great flavor. Of course tomatoes, and pickles and fresh green beans, I wonder if you could do broccoli, cauliflower, maybe it would get to mushy.

      I do 55 minutes pints 85 quarts.
      But I don't like quarts. Turns the corn too brown. I just do pints 55.

    I'm emptying a freezer to defrost it and canned up a 5lb bag of green beans the other day. Also did some pork butt ans chicken breast. Next week I'm canning a brisket and I'll be almost done.

    The heating of the lids was never about them being clean. It was to soften the seal strip. Softening that strip allows it to seal better and also keeps it from being damaged. You can reuse the lids as long as your seals are good and you boil them.

    Time is for FRESH FROM THE GARDEN veges, NOT already processed veges. You get mush at 75 minutes. I can at 30 minutes only when using frozen.

      Oddly enough I didn't get mush. But I agree the time should not have been 75, but 55, the time for longest vegetable which was corn.

    I was blessed to find a national 1935 preasure cooker. I inherited my brothers double canner the size you are using! I was so happy! I have always used a mirror 4 QT preasure cooker!
    I loved listening to you detailed and informative video! Easy to listen to. ( not boring) I am going to save rhis video, to refer to later.
    Frozen vegetables will be on sale soon! They always go on sale in the summer to sell the old stock!

      How well I remember 93 and 2011! Blizzard of 93 totally got me to thinking my household should be better prepared for sudden total life change such as no electricity, heat, etc. In 93 we were in a total electric house when the blizzard hit and we survived in one room with a kerosene heater. To this day my daughter won't eat pork and beans out of a can because we ate so much of it during the blizzard!

    I can but i dehydrate frozen veggies n fruits In half gallon jars with oxygen absorbers or vac seal. I think i might try canning some just in case later shtf need the water to cook with. Its also why i keep commercial canned veggies and beans in case i need the juice to cook with. I pressure can beans too.

    I'm just learning about canning, and I'm 77. Growing up we had a commercial freezer so other than pickles and jam Mom didn't can. (plus we weren't allowed to be in the kitchen when she was doing such things cause we got in her way. Then my husband and I were in the Army and they didn't allow us to move jars (cause of breakage). So here I sit all alone and I care about being ready for bad winters in WV and food shortages and such. Thank you for the lesson. I was kind of afraid of pressure canning - but thanks to you I don't think I will be.

      When you pack to move you cushion to glass, so i don't understand why they didn't let you move jars.
      Have you seen the cost of pectin?! I'd swear they have 1/2 less in them too. So online I looked for larger size pectin by the pound and organic flours. Much better prices!

After 20+ moves our last one when hubby retired we did a DITY move (DO IT YOURSELF) from San Antonio TX to the Eastern Panhandle of WV. I had come ahead to accept a job at the VA so my husband did the packing - - I thank God I wasn't around for that one.

      If your open shelves aren't constantly in direct sunlight and walls around them provide a small shade, you'll be fine!

      No not at all. I went with National Center for Home Food Preservation reccomended processing time which seemed extra long. I believe choosing the corn 55 minute processing time would work as it's the vegetable out of all the mixed vegetables that requires the longest. Gonna do that next time. But all the vegetables I did are wonderful and not mushy..

    Great video! I have the same canner. I didn’t know you can stack the jars! You just put them directly on top of each other? Also, as I’m still learning, I may be doing small batches of things like 2 pints at a time. How do you fill the extra space in the canner? Jars filled with water and a lid.. no lid, or is filling the extra space even necessary? Thank you for your time!

      I like to fill my empty space with jars of water sealed and then you'll have shelf stable purified water to use. Or look for anything else you can can that processes for the same amount of time. Example...when I'm canning meat, dry beans processes for the same time (75 minutes pints, 90 minutes quarts) so I fill space with beans. Happy Canning!

    I never knew we coujd xan frozen vegetables. Im a Alabama girl to, my mom canned everything we coukd grow and put uo fof the winter months. And hurricane season. 2 weeks without power , yih xan lose everything in your freezer. Canned jars much better.😊

    When you can pinto beans from the bag. I cook them, but I can't remember if you use the water off the beans or put fresh water in ea jar. You said 90 mins pressure cooker. It's been so long since I did it I couldnt remember .

    I’ve tried the not heating the flats/lids but I only did it once because I lost 2 out of 20 quarts . When I looked at the lids I almost couldn’t see an indent on both. So now I take the extra step which doesn’t add any time to the canning.

      Centre, Alabama where are you? If you try this go 55 minutes for pints. I believe that would be long enough. That's the time for corn. However mine were not mushy at 75. But after these I've been doing 55 and they are fine. Thanks for subscribing!

I did cream corn last year and apparently 50 years makes a difference. I had probably not done corn in that long. 😂 I was worn slap out!

    You mentioned you look to see if your ring is rusty, mine rusted the 1st time i canned some beans. Are the rings usable for a 2nd canning? I am new to canning with a Nesco electric pressure canner.

      Yes they are reusable. After years of use I replace mine. But discoloration not a problem.

      No I don't have a problem. Sometimes I can 2 large canners at a time. One on front large eye and one on back large eye.

    I just found your RUclips channel. I am in the beginning stages of learning to Cann. Have a few questions- what is the salt for and to you add salt to everything you cann? What does the date you put on the jar lids mean and how do you come up with the date? Thank you.

      I usually put 1/2 teaspoon salt in for taste. It has nothing to do with preservation. Not necessary at all. The date is when I canned it. So I can open the oldest jars first when cooking it. Hope this info helps!

      @@dare2dreambig313 We eat it up by 2 years but I wouldn't be afraid of it a couple years later as long as good seal and no discoloration. You can do this!
