  • For some reason I thought I got all this done over winter, but I didn't. So time to go freezer hunting and find everything that needs to be canned up to make way for this year's harvest.

    Add 1 teaspoon of butter to your fruit for jam. It reduces the foam to almost nothing. I got this from my sure gel recipes from a box I used years ago. It still works. I used it a couple of months ago.

      You can do it, look into gleaning opportunities near you, check your local food banks and get on the "waste list" and then practice one thing at a time. Even grocery store sale purchases can be canned when those big 25 lbs bag if potatoes go on sale. Just dive in and enjoy the learning

      I’m going to try pickles this year. I’ve got probably 18-20 cucumber vines going that are getting ready to produce. If they’re anything like the Aquaponic cucumbers I’ve grown in the past, I’m going to be knee-deep in cucumber

      @@Hosemastenbrook how's it coming along? I had never canned anything before May 2021, and I dove in. Now my pantry is lined top to bottom with preserved foods, mostly meats and fruits on sale, but also some beans, soups, and chili. 😍 Can't believe how far I've come in just a year!

    I just adore how very real this is! Do you know how many times I have thrown things into the freezer because I was in the weeds at the end of the season? Watching you pull those frozen tops off just warmed my heart. Anyone else?

    You may want a vacuum sealer. I have 3 year old veggies in my freezer that still taste like I picked them yesterday. Awesome gadget!!!

    I have three pet parrots and I use up frozen berries and other fruit and veg to make their birdie bread. Along with other basic ingredients, I bake trays of mini muffin sized birdie bread which I then freeze on a tray before bagging them up in the freezer. A thawed and warmed birdie bread mini muffin is a bedtime treat for them and they are very happy parrots.

    We’ve been growing strawberries my whole life. Portland, TN, my hometown is known for theirs. It was a shipping center in the early 1900’s & still have a Festival, Parade, Beauty pageant. I was the Strawberry Queen my Sr. year in high school. My mom has made jelly & jam since I was little. She passed away 6 months ago. I still have all her pints of jelly. 😊🍓👩‍🌾👩‍🍳Great video as always.

    You had a full day of catch up but I know that always makes me feel better. I was laughing about the green beans because I’m canning 7 quarts twice a week. But thankful for the harvest everyday!

    Lol, you literally made me laugh out loud when you said, “oh no, the mixed berries.” And then started to put the hot can back into the canner that you were emptying.     Kitchen aid stand mixer is great, and lasts for a very very long time. I have one too, mine is about 6 years old or so. Love it. Becky on Acre Homestead has that same juicer, it works amazingly.

    Been doing Freezer Clean Out since late February, as time & circumstances permit. Started because the forecast for this year's hurricane season was to be a highly active one. (Proved to be the case so far. It's over a month before we get into the main season and have already had 6 named storms.) I can't afford to loose a freezer full of food. So, I did a clean out. First, tossed the freezer burned stuff. Tossed the spur of the moment, I'll never eat that purchases, too. Then, began canning meats. Primarily chicken and venison. Then Covid hit. Which reinforced the notion that we should have a full pantry.
    So began combining cleaning out the freezer (both the standalone and the side-by-side freezer/refrigerator) with sale priced meats and/or vegetables. Freezer is empty of meats except some Cornish hens for roasting and some chicken leg quarters for grilling. Almost empty of vegetables, too. Made a bunch of hamburger vegetable soup (7 quarts & 36 pints, so far). Dehydrated some of the frozen vegetables and canned others as individual ingredients.
    Have greatly cut down on our freezer needs. Have increased making block ice, as space became available, using sanitized 2 liter soda bottles. Serves as block ice and will provide drinking water, something bagged ice won't do. Part of our hurricane preps is to transfer to ice chests everything in the refrigerator that can't be frozen BEFORE the storm takes out our power lines. That'll buy several days of cold storage.
    Cleaning out the Freezer ... A lot of work, but well worth it, IMO. Especially if natural or human disaster takes down the grid. If nothing happens, I can better take advantage of bulk sales (especially sales on turkey) and venison gifts from hunting friends, later this year.

      Awesome, sounds like you had a great preparedness mindset! We too hate being do dependant upon our freezers, thru are not as guaranteed as shelf stable foods, this year we will can a large portion of our chickens and I need to can the remaining pork from our last pigs before we get the new ones butchered.

    I love my food saver. I'm on my second one. I buy bulk packaged meat and the use my food saver to freeze it in meal size packages. No freezer burn. I freeze my berries and fruits on a cookie sheet and then use the food saver. I can then take out a little for what ever I'm using them for. Reseal the bag for later use.
    Like you and so many other homesteaders, I have an All American Canner on order. Can't wait for it to arrive.

      Searched for about a month to find a pressure canner!! FINALLY landed one at Ace Hardware and ordered online to do a store pick-up ~ it was the last one, she said, for like the third time since March! Feel extremely lucky to have found it!!

      @@StitchingDeb I bought my first pressure canner, a Mirror Matic in 1975. I was terrified of it, at the end of that year, I loved it. One of my favorite kitchen utensil. For years I could buy new gaskets for it. A few years ago Mirror Matic discontinued making the gasket. I bought a knock off brand that said it was for my model number. I always stayed in the kitchen when canning so I could keep an eye on the canner. I heard an usual sound, the gasket had blown out of the lid. I could not get the canner opened, my son in law couldn't open it. I just wanted my green beans out of it, we took a hammer to the canner, did not work. I tossed the whole thing in the garbage. So I am looking forward to the All American Canner, no rubber gaskets ever again. I've never canned meat before, looking forward to doing that this winter. Also dried beans, soups, stews, and other things I've never canned before. I've missed canning my own food. Yes it's healthier for us. And it's beautiful in the pantry.

    You will love the OLD Kitchen Aid. I have a new one that was given as a gift. It is noisy and dose not have the power that my old one has. I have pulled the old one out and it is the first choice in the Kitchen.

    I saw someone put a little butter in their jelly to cut back on the foam. I did in mine and I didn't have to skim any foam off

    you need a vacuum sealer makes such a difference stops the freezer burn and keeps thing a lot longer

      You can get an inexpensive attachment to the food saver that allows you to vacuum seal your canning jars. I freeze fruit and veg first, then put them in jars, vacuum seal, and they go back in the freezer.

    Girl you need an apron! Lol! I laughed like crazy when you were explaining what each splash mark on your top was similar to if you were a painter that had worked hard and had paint splatter on you! Honest to goodness you must absolutely love what you do because I’m exhausted just listening to your to do list of what you have to do to get caught up for your green bean harvest! My word! I love that you keep it real and show just how much hardwork goes in to making and prepping your own food. Most people don’t have a clue!! I remember my mom talking about her aunt and uncle on the farm. Mom used to spend summers on the farm and she said her aunt was always in the kitchen or garden busy doing something and every single evening she was in the kitchen baking many many loaves of bread and then before bed they would all get a thick slice of fresh bread smeared with homemade butter and freshly made jam or jelly whatever was in season. Mom said she can’t even imagine going to bed on such a full stomach now but no one went to bed hungry when on the farm and in the mornings they didn’t eat until morning chores were done because while they were out doing them her aunt was busy in the kitchen making a huge breakfast for everyone and it was a hearty breakfast because they worked hard and needed to eat really well to sustain them throughout the day. Of course back then in the late 1940’s-1950's farmers were still appreciated and industrialized farming was just beginning...what a huge error that was....so glad we are still able to remember some of the old ways and start getting back to growing our own food and being able to implement technology where it makes sense to reduce some of the workload. Thanks for sharing your day and one thing that sort of upset me to be honest was the thought that food banks have more food then they can give away....I think you are very smart to accept it a lot of people would be too proud to do it I just wondered if you ever considered giving back to the foodbank a share of your homemade jam or something you had made from the food they were going to throw out? To my mind it's criminal thinking of a food bank throwing away food. Rachel please don't take this as anything to do with you, and please don't think you have to censor every word you say....I just think that its a form of mismanagement on the part of the food bank, surely they could become more creative with those foods then throwing them out? yours is not the first channel that ive heard about this sort of practice with food others do a similar thing. I think a free class given to those who use the food bank maybe to show them how to use a bag of frozen fruit to make a simple cobbler or something like that would be another way the food bank could utilize that food or donate it to the local high school home economics class to reduce the costs associated with their food prep classes. Those are just a few ways i thought of off the top Im sure there are many more. Maybe something you can suggest to the food bank? In the meantime though I think you are one smart lady!! Oh and thank goodness you changed your mind about those freezerburned peaches!! i was yelling at the screen nnnnooooo dont do it!!! It will just spoil your berry jam, adding good food to bad doesnt turn the bad good it just makes the whole batch tainted...ask me how i know? Yup been there done it! lol! live and learn. Thank goodness you decided to give them to the pigs thats one way to turn slightly bad food into bacon! yum!

    Whew, girl! Way to go! That reminds me, I have a whole ton of blackberries I need to get out of the freezer and make juice to can. This year’s are just about to ripen out on the vines, I need to hurry! Such a busy time of year. I love to follow your journey and see all you accomplish!

    A teaspoon of butter in at the end of your jam making takes away all of the scum. No need to scoop anything out x. Great videos. I love you guys. Learning a lot but because I'm from Ireland, I google a lot of measurements. Thanks, you are keeping me busy these days xxx

    i had my first kitchenAid for a half dozen years before i got my current one (house fire=all new stuff). I've had this one since 2004, and it's still going strong. i did have it serviced once at a licensed service place for a small issue. And i highly recommend having yours serviced, if for no other reason than to see what maintenance you might have missed, and to extend its life, of course. It's not cheaper in the long run to have it occasionally serviced versus just buying a whole new machine every 15 years, but it's the sustainable approach, which i know is important to you.

    You next investment should be a vacuum sealer. I cant believe how much i used mine... well... i wore it out... and replaced it. But one thing that i do use it a lot is for frozen foods. Portion what ever in dinner size amounts for 1, 2 or 4 people. The food doesn't freezer burn and it is so easy to grab and thaw them quick ( in a bowl of water or the fridge.) It is also fabulous for marinating meat ... no need to turn or flip the meat... its all in the marinade. Frozen corn and peas i measure out in 1 cup portions. Onions and peppers ( perfect for fajitas): i slice and freeze 1st spread out on a cookie sheet.. before i portion them and vacuum seal. So easy to grab what you need and the rest doesn't just sit with a twist tie getting frost on it in the freezer. You also eliminate the danger of having to take a sledge hammer to the block of whatever. BONUS... less air taking up precious real estate in your freezer. Thanks for your videos. I enjoy everything you chose to share with us. I have learned so much from you about gardening .

    I just read on the sure gel instructions to put a pat of butter in your jams and jellies when cooking to keep the foam down. IT WORKS!

    OMG; one of my most favorite childhood memories is making tart cherry juice. The smell of the hot juice was just amazing.
    Just a tipp: you can juice most stuff twice(or even 3 times with really juicy fruits). The second run will not be as concentrated but you can allways mix it with the first, high concentrated run. Or use as is for drinking etc.
    Our cherries juiced for almost the whole day.

    Loved watching you make room in your freezer. I did canned banana bread to send to my college kiddo. Better than just putting it in a plastic bag or foil--he said it stayed pretty fresh. Rainy day for us tomorrow, so I'm canning Mexican chicken soup.

    I make fruit leathers for my kids in the dehydrator. It’s a great way to use up all frozen fruit.

    I got bird netting for my raspberries after the first year I had enough I could have done something with them, they disappeared in two days from almost ripe to ripe. I got one under-ripe berry when I checked them and two days later I had one ripe berry left and all the rest were gone lol. I have them growing along my fence line and bought 150 ft length roll and threw it over the fence the when the berries were still under-ripe and of no interest to the birds and got my jelly this year.

    You need to invest in a food saver sealer it is the best No freezer burn last up to two years or longer. I enjoy your videos Thank you for taking the time to share

    One trick I have learned making jams and jellies, is to put in about 1/2 tsp of butter in each pot, and that stops all the foam. .

    I use to make strawberry peach jam all the time and it is sooooooo good, my recommendations with that is 3/4 strawberries to 1/4 peaches or they take over in tastes

    I’ve heard a small pat of butter in your jelly or jam, greatly reduces the foam! I’m new to canning, but planning to give that a try.

    I made some peach jam this year that didn’t set all that well. But it is delicious on yogurt and can still be used like jam.

      Just for others reference it’s possible to reset you jam. Lots of articles online on it. Tried it this summer with beauty berry jelly and it worked great. Kinda a pain because you have to clean all the jars and go through the canning process again but it was worth it because I really didn’t want beautyberry sauce 😂

    I cover my fruit bushes and trees with tulle. It was fairly inexpensive. The birds and bugs can't get in. After the season is over I launder it for next year. This will be my fifth year using it.

    I'm in other middle of canning coleslaw. While shredding the cabbage my big kitchenaid mixer died. I had to haul out my Mom's old avacado colored kitchenaid from the late 60s. Worked great. I figure by I have at least 26 pints. The salty water was blue, once the sugar, vinegar and water went in it turned pink. Wheeeww ! Was afraid I'd have blue coleslaw!

    Hey, if you ever end up with extra cherry juice, taste wonderful in the pineapple jam recipe, so it is cherry pineapple jam, and it is delicious!

    Been making jellies, if you put a tablespoon of butter in your jam. It stops the foaming. Doesn't affect the jam.

    You need to dehydrate some of your green beans! We couldn't tell the differance between frozen or dried. They don't take up much room either. I make up my own vegetable soup mis and dry all of the veggies. Then I just thrown as much in as I need. Just remember, a little goes a LONG way.

    As I'm watching you I'm eating some "Sweet Sapphire" grapes I bought on sale a couple of months ago and froze. I had to trim off the ends because they were overripe--which is why the grapes were on sale. They taste like grape Popsicles, but nice and healthy.
    If anyone has a chance to buy this variety of grape it's super good. These seedless grapes are oblong--not round--and super sweet.
    I froze Bing Cherries last year (unpitted) for cherry "Popsicles." Yum!

      One other comment: I'd recommend that you wear shoes while using your steam juicer.
      One time I didn't have the clamp for the hose on correctly and scalding hot juice poured out onto my bare foot. I was in a fair amount of pain for a couple of days. (It didn't help that I was around 7 months pregnant at the time.) I've been very careful since then to make sure the hose is on firmly and the clamp is in the correct position before starting each batch of juice.
      The juice tastes better if you blend all of the juice from one batch before you can it because the juice that first comes out first is more favorable than the last is.
      I didn't like the peach or the pear juice I made one year. They were very blah.
      I lay newspaper on the floor underneath the stool I set my jars on to keep splashes of juice off of the floor. I also tape some newspaper onto the front of the oven to keep it clean from splashes, too. (Make sure the newspaper isn't near the burner to prevent a fire.)

    I got a vita mix blender this year. LOVE!!! I have a kitchen aid but I need to check out that attachment. Those strawberries would never make it to my freezer.     I know this video is old but I have the automatic jam and jelly maker from Ball and it uses butter to reduce foam. It’s amazing. So that might work if anyone is watching in real time. :)
