    Hi friends, we have been canning up a storm over here over the last few days. We bought 100 lbs or so of peaches and 100 lbs of tomatoes, and a bunch of peppers. We canned salsa, peaches and cowboy candy and ended up with 117 jars by the end of it all. I hope you enjoy coming along with me!

    My friend and I in years past would can together, pooling produce and sharing the results. We would can at one house, taking turns heating up our homes and families! 😂 Sometimes we would be busy until the wee hours of the night when it was cooler, children were in bed and we could blitz our efforts. So satisfying to do. I have very fond memories of that time. Enjoyable to watch you at your efforts with so much accomplished.

    My grandfather grew yellow cucumbers like the ones you grew. They were called lemon cucumbers. When they are picked young they have a slight lemon flavor. 😋

    I am amazed by all you preserve. I canned dill pickles and bread and butter pickles yesterday and I was exhaused. I canned coleslaw last weekend and strawberry rhurbarb jam before that. Tomorrow it is zucchini relish. I have to pace myself these days because I have a very bad back and I am very close to being 78 years old. I love your videos and look forward to each one. Thankyou.

    Love your videos! I noticed for the coyboy candy you said 1/2 cup sugar per cup of vinegar, but actually used the opposite , 1/2c vinegar per 1 cup sugar... Not sure, but you might need to put it in the show notes in case anyone tries to follow what you said instead of what you did 😊 thanks!!

    Chelsea, it was wonderful to hear the voices of some of your children in today's vid. I can appreciate that you do not have them on-camera very often but it's hard to believe that your usually 'quiet' home is housing half a dozen kids. Plus - when our family (of 7 kids) was in canning/freezing mode it was All Hands On Deck and it appears that you do all of the preserving effort on your own.

      I do it sometimes on my own, but usually I have lots of chopping help. My kids are awesome during preserving season! I also try to fill when they aren't home or otherwise occupied - I feel really strongly about not having them on camera.

    Hi... I have two steam canners and it makes the canning so much easier... I'm not nearly as tired at the end of a canning day because the processing takes half the time... I have two pressure canners for the same reason.. also both have the weights so don't have to constantly watch the guage... it's amazing how much easier my day seems with those few changes. Thanks for another great video... I so often learn something new...at 70 that is so awesome for me ☺️

    I just am in awe of how you have such an easy going confidence in your canning. I am always second guessing myself and can absolutely never multitask. I actually tried doing two things at once a couple of days ago, and added two tablespoons of salt into my sourdough pre-ferment instead of two teaspoons. I thought I was really zipping along well, but nope. You are such an inspiration! Thanks for sharing your canning days with us! FYI, just finished canning your Cole slaw, every lid sealed, and I can't wait to try it in the next day or so!

    The apple cucumbers were a staple in our garden when I was young. Mum called them crystal apple cucumbers and we always peeled them. We only ever used them for salads and eating fresh. Still a favourite but becoming rarer.

    I have made salsa without cumin. As long as you’ve got cilantro it’s still very yummy. I did a roasted salsa this year which turned out very good. It’s roots and refuge recipe. You can find her on RUclips

    I did the same. And my hands burnt so bad for a few days. Nothing would help the burn. Never again!!!! Gloves for all hot peppers.

    We love cowboy candy. My recipe has cayenne powder or red pepper flakes, granulated garlic. All else is the same. Ever canned cake? Just two of us, so I do that so my husband can have a sweet treat when I haven't been able to bake

    That is called a Lemon Cucumber where we come from. I usually peal & slice them onto a plate, then squeeze a little fresh lemon over them, then a bit of salt & pepper. SO DELICIOUS!! A favorite in our home. Easy to grow & very prolific. Best younger, less seeds.

    I have a confession to make. I was so proud that I do not watch any gossipy/drama series because its not my thing. I watch educational videos, such as yours, to better myself and keep my mind on good things. Turns out, I am not that good.
    All I could think of is: did you find cumin????? Did any of the kiddos find cumin??? Did Dan bought you some?! Where is the CUMIN??? I need the gossip where it was!! :D

    Omgosh! Yes, wear gloves!!!! I cut up a ton of jalapeños from my garden to freeze and I didn’t wear gloves. I knew better too! My hands hurt for 24 hours😭😭😭 I tried every remedy. Nothing helped! ALWAYS WEAR GLOVES!!!!!!!!!!!!!!!!!!!! Love your content Chelsey! So relaxing.

    You could make red hot cinnamon pickles with your cucumbers if you have a bumper crop. They take around 4 days to make but are worth the effort

    It is so nice to see you use the steam canner. I don’t think I have seen anyone else using one on you tube. I have been using mine for a year and it has been a game changer. It is faster heating up and so much easier to handle without all the water. I love it!

    Back in the days, my father's family ( lived in the mountains over 1000m above sea level) would use branches with leaves to feed their animals in order to extend the hay. They also grew fodder beets. I hope you got your cumin for the salsa:))))

    I love cowboy candy. I run mine in the food processor like I do relish. I love it on every bite of say a hamburg I add a little bit as I go. Then you can use as little or as much as you want.

    You could use your new french fry maker to chop your veg. A restaurant I worked at that is how we chopped our veg for western omelet mix.

    I love my steam canner. Less time and less water too. I cannot imagine doing that much canning in one day! You are amazing❤️ This year I made red hot cinnamon pickles with overgrown seeded cucumbers. They are like candy.

    I got the same food processor and I love the dicer that came with. It makes life so much easier.

    We are in Northern Michigan, tip of the mitten area, and our drought has hugely affected our local farmers hay production as well. We saw a few farmers that cut for a second time, and literally it looked like if I cut my grass after letting it go for a month. The cutting was pathetic. It may give him one or two round bales to the entire field.😢😢😢

    I envy your heat! We here in south Sweden, had a warm and dry June but then it got very cold and we've had so much rain. I've hardly been to the beach this summer, disappointing! At least the garden is doing good with all the rain! Fun to see you can, love your videos!

    Put your carrots in large crocks laying sideways with wet sand in between layers. Put in root cellar.

    I diced a jalapeno pepper once then rinsed my hands and later rubbed my eye. MY eyes burned for several houses and constant face washes. Jalapeno will stay on your hand through multiple hand washes. I now use surgical type gloves when cutting peppers.
    I use onions in almost everything I cooks and never have any issues with them at all. I always put the cut surface face down on the cutting board.

    I didn’t know those are White Jalapeños. My husband and I go to an awesome Taco place here in LA that serve those as a side but the are pickled whole. The restaurant is called Taconazo. It’s a delicious pepper… so flavorful
