      I wish I could convince my mother to can. She's almost stopped cooking altogether because she's alone. This would work great for anyone that wants to make a nice pot then can the rest.

    I'm fairly new to canning though watched mom can our summer garden while growing up. both freezers full forced me to take the next step. I began this past August. I think I called her for the first ten canning projects. I then found youtube, you, and many others I do like your innovation/style of canning as I.m not rigid with flavor profiles but with safety. I am serve-safe-certified as I've been in the restaurant industry for 35 years. pre covid for some reason I began to be a "prepper" though we live in a tiny apartment. It's the little things that you give as inspirations, ideas...I try to be frugal and I kept losing carrots but duh you can freeze and can carrots in many ways. this whole preserving thing has really opened doors and inspired me so Thank you. Now onto all of your videos. p.s. I canned 7 quarts of chicken noodle base soup. I was nervous that I broke a jar. I did have a little siphoning but not too bad. and yeah they sealed and none were broken like my second adventure where I had two jars break. Thanks again and keep inspiring us. love it.

    Can I tell you how happy this makes me? I'm 63 years old and have just, this past harvest season, learned how to can watching all these video tutorials. My freezer has never been so empty! Loving it! I was able to take canned dinners to my mom for when the menu is less than appealing at the diner where she lives. Now I just need to find her one of those awesome jar openers! Another canner is on my wish list so I can pull double duty with my planned double garden this year. 😁 Thanks for all of your videos. You've taken the fear out of preserving my garden harvest for me as well as all the subsequent yummy recipes! Can on!

    the mrs here... Girl, I just love you! I love making taco soup (yes, my recipe is different, lol) because everything can come off your shelves. I would always freeze the extra 7-8 qts, but now I'm trying to not rely on my freezer. So I canned 2 batches...EPIC FAIL! I don't know what I did wrong and I've been canning for years, but every single jar failed to seal...both batches. This was the only time I've ever had this happen. I have been afraid to try doing Taco Soup again. You've inspired me to try it one more time! Thank you!

    That looks delicious. I usually like to eat soups and beans like this with cornbread, Fritos, or corn tortillas. One time I ran out and my son suggested making some stovetop stuffing cornbread dressing. We put dollops on top of the smoked turkey and bean soup and it was fabulous. You are right. Use what you have and sometimes you find a new favorite. Great video and I plan to make this soup.

    I love that you didn't edit the broken jar out. It does happen. I also love that you "shopped" from your homemade pantry. We sometimes forget we can use things that we've canned to make something else that we can also can. Thank you!

    We love taco soup and this looks delicious! We usually eat our taco soup with tortilla chips, shredded cheese and sour cream. This would definitely make for quick last minute lunches and dinners.

    I love when recipes are put together using ingredients that you have and not necessarily what's listed in the recipe. Growing up, my mom would open the fridge and use up the leftovers ending with the most delicious dinners. I've made turkey soup and threw in so many leftovers, it was so good but don't ask me to duplicate! LOL Anyway, thank you for sharing your talents!!

    I hate it when a jar breaks, or a lid pops a leak. Doesn't happen often, but sometime in your canning journey it will happen. Your Taco Soup looks wonderful! Thank you Rachel!😊

      Sometimes it will seep out of the jars while canning as well. Not always a broken jar.

    Broken jars are always a sad thing. I like how you just make your own recipes. I have noticed that about you. This is how I cook, I am beginning to feel confident in canning that way too.

      Try chicken tortilla without tortillas..extra cumin, coriander, cilantro, garlic, some fresh corn off the cob..fantastic!! Yes, green tomatillos or salsa too in it..oh..yeah...!!

    I thought it was 90 minutes on quarts and 75 minutes on pints. But it sounds like a good recipe. I love spicy soups.

      Jeanne, that's the timing for a jar full of meat. The timing for soups is different because the jars are supposed to only be half-full of solids and filled the rest of the way with liquid. See section 4-18 of the USDA's book The Complete Guide to Home Canning available for free download at: nchfp.uga.edu/publications/publications_usda.html
      (However, please note that if it's a seafood soup, the times are longer). :-)

      It is. Meat and beans are 90 minutes. If there wasn't any in there then it would be 75.

    One of the most disappointing canning days I ever had was last year when I was canning Hubbard squash. I was using some of my mom’s vintage Kerr jars in the pressure canner and 3 broke in one batch! I had never had any problems from them before. Now, I only use those for water bath canning and only use newer jars in the pressure canner. I have retired my oldest jars to dry goods storage. Your soup looks totally delicious! Great way to use up those canned goodies.

    Don't feel to bad breaking that jar, this past year I lost 3 cases of jars that were my mother's. I think it was because they were over 40yrs old. I like this recipe using 2 different kinds of beans.

    Hi Rachel, I'm fascinated with the decoration above your doorway--it looks like part of an antique tray template. My step-mom was an Early American Decorating master teacher, and I love that decoration! It just caught my eye, as I was watching this great video on making a wonderful soup, as I am in love with soups and stews. Thank you for this video.🌻🥀

      the one with the chicken on it? it's actually a cast iron door mat, that's supposed to go on the ground in front of a doorway. but we hung it up there (securely).

    I am so glad that you all show the possible failures, so when one happens to me I won't freak out. I have learned so much from watching these videos that I got brave and borrowed my Mom's pressure canner. I canned up kidney beans to make it easier when my husband makes chili. He uses the tomatoes I grew and water bath canned up last fall, with a jar of beans I just did. He says they taste better than store bought. I am going to can the block of frozen chicken breasts tomorrow. Wish me luck.

    We love Mexican/Taco soup! My favorite spices are cumin and Mexican oregano, in addition to the taco seasoning. When I open a jar and warm it, I add a package of Ranch Dressing mix. Delicious!

    I made this Taco soup this weekend and oh my yum!!!!!!! so good and the house smelled amazing. Instead of ground beef I used 1 pound of homemade Chorizo and 1 pound of ground pork

    This looks amazing. I'm sorry for the loss of a can of soup. Too bad it just didn't seal and you could refrigerate it for a meal. The cans you pulled out of the canner were beautiful.     As I've told you I am new to canning. I am also the only one in my group to garden and can/dehydrate and they really like all the herbs that I give them. I really appreciate the canning recipes that you show so that I can branch out. To date I gave canned chicken broth, chicken soup, black beans and hot sauce (although we haven't tried the hot sauce yet) Thank you for showing me/us how to do this and include even the oops. I really do appreciate it.

    I found your channel a month or so ago! I’m 31 and taught myself to can this fall, with my moms canner. Would have enjoyed having my mom with me to show me, but she couldn’t due to distancing. But it’s been fun watching you carefree, mixing flavors and not worry so much about it all. I haven’t had a jar break yet and I’ve began collecting estate jars that are vintage so I don’t look forward to my classics breaking but that’s the joy of the whole process. Just getting in there and trying! I would adore a canner of my own that I can continue to learn to provide for my family and myself each season with the freshest, purest form of food. Loved this taco soup recipe! Pozole would be a delicious idea to can too! I’ll be working on canning that I soon, I think! #canuary

    I've been canning for over 30 years and I had a jar break just like yours did for the first time this year.

    Argh! I feel for you when a jar breaks during canning! I got an entire box of jars that had some kind of unseen flaw and until I realized what was going on and could get rid of the few that didnt break during canning, I had mess after MESS to clean up. But, things happen during canning and knowing how to fix or take precautions is just as important and as knowing how to can correctly. THANKS for the great recipe!!!
