  • Should you blanch your green beans before freezing? In this comparison of blanching vs not blanching when freezing green beans, I will do a test to show you the colour and texture of the frozen green beans once prepared to eat! Also harvest beans with me and find out the varieties we grow!

    Finished the last of last years fozen beans a few weeks ago. I didn't blanch and bagged them in portion size freezer bags after rinsing and drying. I always use a steamer to cook them about 5-7 minutes. Butter and seasoning after draining steamer of water no complaints. Freeze all my peppers pre-cut for cooking too, no blanching they work great in all dishes after months of being frozen.

    • @thatdiyguyraymondmonk1225
      @thatdiyguyraymondmonk1225 11 месяцев назад

      @@kelcritcarroll the color will fade just a bit, but frozen vegetables are not intended for bright crisp salads after long freezing. That would be less than 2 months. Long term freezing is really ideal for cooking without breaking the bank in the off season, when vegetables are imported and far more expensive. I make quite a good living, but still refuse to pay 400% more for cooking vegetables in the off season.. when a $5 pot of chili would cost $25 or $30.

    It sure would be great to omit blanching from the whole process of veggie preparation for freezing, but I’m wondering if a 5 day trial is actually long enough. Since blanching is supposed to greatly slow the process of decay or aging (as I understand it does), by inhibiting certain enzymes, it seems like a period of weeks-if not months-would be required to compare the two. Maybe not, but it seems like the breakdown in food quality would a slower process than a week (or less) would reveal. 🤔

  • @cutley2b
    @cutley2b Год назад +2

    I am also trying to determine the best way to store peas or beans. But not for cooking but just to preserve them for eating raw. They are always mushy after defrosting. In your case, the blanched beans will always turn mushy because you cut them and after blanching the water is trapped inside the beans. When freezing, the insides are now frozen water. Would like to try blanching UN-cut and see if better.

    Enzyme Actions: Freezing just a couple days is most likely not long enough for your test as most of use keep beans frozen longer than that. It is my understanding that blanching stops enzyme actions which can cause loss of flavor, color and texture. I'm curious how the test would do after say 6 months.

    The results may be different in longer term. After a couple of months in the freezer there may be a difference? Thanks for the experiment.

    I suggest you put a bit of fat in a cast iron pan. Lightly stir fry your beans then add enough water to gently simmer your beans until fork tender.

    Just wondering, could the length of time frozen affect the outcome? 5 days is just much shorter than how long I know I would probably have those babies in my freezer lol

    • @alanacawker-therusticwife

      Good morning! I always keep my beans much longer than 5 days too and the beans pretty much have the same texture for quite a long time I found. Now, I do believe different beans have different textures and some do need blanching...these ones were a bush bean and string less. Also, in my test, I should have accounted for the blanching time on the one batch and boiled them for less time than the unblanched ones. I hope that helps...it's a tricky thing to try to get as much as you can stored for winter at the height of harvest time. I'm always looking for ways to save a wee bit of time during the season!
      Take care and have a great day!

      Hi there! Somebody else mentioned that they find their long bean variety was tough if they didn't blanch...that is a good tip to know about other varieties! I always grow a bush bean and so far so good but if I do grow a long bean, I will definitely blanch first!
      Thank you for watching and also for sharing that tip! Take care and have a great night!

    Thanks for testing in a 'scientific' method, so you're really comparing apples to apples (pun intended). This is my first time preserving fresh green beans, and I am NOT going to blanch them.

    I also don’t blanch peas or corn - cut off niblets from cob in bags and ears left in their husks. Honestly, I can’t say either the peas or niblets last more than two months before used. But I have found both taste better than store bought frozen vegetables. Family loves the corn on the cob - I am not a big fan of fresh or frozen corn on cob? Nobody has ever given me an explanation to blanch these vegetables that has occurred when I don’t blanch. The time I keep them frozen before eating could be a factor.

    Thanks for doing this test. But I feel sure that results would have been more comparable if the *total cooking time* was the same. Then you could more accurately judge the real differences.

      Hi there...thank you for watching my video! When I did the test, each pot was cooked at the same temperature for the same amount of time...unless, you mean I should have added the blanching time to the ones that were not blanched when testing?

    • @adamadamadamadam
      @adamadamadamadam Год назад +1

      @@alanacawker-therusticwife That's basically what I mean, except adding time would make them both mushy. The blanched ones are already partly cooked, so when cooked from frozen, they need 2 minutes less.
