Thank you for the compliment. If you do make a stock from vegetable's don't use potatoes. Usually celery, carrots, leeks and onions. You could add herbs of your choice. Any bones from fish, chicken, beef etc add those to the stock pot. You're making what most people would throw out a really tasty stock which makes success, soups, gravy and more. If you don't use it all pour any into an ice tray and freeze until you need it. Saves money buying stock cubes full of salt too. Bon appetite!
You said...Waste Not..Want Not....I cut off the bottom section of the celery... ..a bit more than you did....place it in a glass with a bit of water....change the water regularly...roots will shoot...plant the bulb...cut off stalks when thin and tender..they are sweet at this stage...do not remove the bulb from the soil as it keeps on growing more stalks... Hi Kevin, I got 3 bunches of celery to freeze for winter. I use it in soups and a handful in chili. I really like to wash the leaves dice and sprinkle them in chicken noodle soup.

I freeze both celery and onions. It’s just a great time saver, and eliminates the messy part of making soup or stews. Rather than compost the leaves and stems pierces that are not perfect, I wash then freeze them separately to throw in the pot with making bone broth. They still have all that great flavor. I don’t blanch and it’s works just fine.

Hey, thanks for the suggestion. I've either dehydrated celery or made soup stock with it; both work fine, but I still wish for a frozen vegetable's convenience at times. I assumed that celery could be frozen this way, but it didn't occur to me as an option because I didn't know of anyone who did it. Now maybe I'll think to try it.

Having lost my darling wife last year (Covid), I had to learn to cook fast or eat supermarket ready meals, which I couldn't eat, or starve. After eating fab food cooked by my wife, I was wasting more food than I was eating and celery in particular became a real problem, because I used it in a lot of meals I batch cooked, but still ended up throwing away 90 percent of the celery. Your video is clear and simple for a rookie like me and I'd like to tha nk you from me as well as my wife, who hated waste.

Put the wilted celery in cold water and refrigerate it. It will firm/crisp it right back up.

Oh please don't throw away the celery leaves they are the best part! Chop them up and put them in a lettuce salad, it adds so much flavor.

You can grow new cerlery (cut and come again) from the root end instead of composting.

I've never discarded the celery leaves. I've always minced them and used for flavoring chicken stock and soups, or added it to stuffing/dressing.
Hi Kevin. Great tip. I do a lot of freezing, but I make small or medium size portions and vacuum seal them. Saves a lot of space and lasts longer.
