Thanks for this! I just harvested our first ever green beans from the garden and wanted to prep them for the freezer :)

I love freezing beans this way. In my video I cook the beans in my steamer. Another thing I started to do is fry them in a frying pan with a little bit of olive oil, salt & pepper & crushed garlic. Just something different. 😉

Very helpful, thanks. I blanched, dried and flash froze individually, and then bagged up yesterday after fretting about whether color would fade if I didn’t blanch before freezing. Would love to skip blanching step. Do you see color degrade much, and how long are they nice and viable without blanching, please? Thanks so much!

I’m glad you found my video. I never blanch my beans. The colour changes slightly but not a significant amount. I typically use my frozen beans within 6 months. Beans are a favourite of ours.

After freezing the beans, do you have any problems with them being soggy after you defrost them. Thank you

That’s a great question! The texture does change. Once frozen the texture is similar to frozen beans you would buy at the grocery store. I always steam my beans. Fresh beans steamed from the garden are definitely better but during the winter these are the next best thing. Please let me know if you have any other questions.
