    I have always blanch ed my vegetables and I do have a vacuum sealer. I have been vacuum sealing after blanching and cooling on a large towel. Do the beans taste as good not blanching? How long will they last in the freezer?

      Hello there and thanks for the comment! As far as I can tell the beans taste the same and the texture is the same. I also use a vacuum sealer and the beans last us about six to nine months in the freezer. By then we've had enough of beans for a while!

    So I was taught (by the Univ of Georgia which does the preservation guides for the US) that blanching actually breaks apart the enzyme that destroys nutrition over time in the freezer. Did the source that you learned this method from mention this issue at all? I agree it’s a pain to blanch (and I hate to use all that ice) but I also hate to to think the nutrition won’t be there after all that work growing it.
    My brother is actually a professor at UGA (different department) so I may get him to ask the Preservation Dept how much nutrition is lost without blanching and how long it takes (if they know that). Does it only drop 10% by the end of 12 months or 90% in the first 3 months? That would be so helpful to know ;) If I find out, I’ll let you know….

      I would absolutely love to know the answer to that! I have read that it stops enzymes degrading the nutrients, but I would think those enzymes wouldn’t be active in the freezer! From what I understand blanching is mainly to preserve colour and texture. But the beans seem similar either way. Let me know if you find out about the nutrients! Thanks for watching!
