    Bri In my 40 plus years of growing my own food I have never ever blanched my green beans I just put them in my freezer bags and remove most of the air and they last me for over 13 months. Never doubt yourself , you are doing great and I love watching you and your entire family stay true to yourself and God . Blessings upon you and your family!

    Thanks for this video! You are absolutely not crazy! As a cook and homesteader, I find it overwhelming to keep up with the harvest even without kids in the picture. I just wash and wipe dry all my green beans and remove the stem end and cut them into 1/2 inch size pieces and put them in freezer bags. This year, I cleaned out my freezer to prepare for the new stuff, and found a bag of green beans from last year. All I do is empty them into a steamer basket and steam them until tender. They always come out fantastic! This last bag I found was no exception.

    I have grown a garden for many years and so did my Mom and Dad. She canned some but the rest she put up frozen. One tip that I will give you is to if you are going to thaw the beans in their freezer bag before cooking to drain them of the 'frost' that accumulates on the beans and then rinse before cooking. I just pour them out in a colander frozen and rinse with hot water till they thaw and then cook them with a tablespoon of bacon grease and a small onion sliced, salt, and pepper and water just to cover. They take about 30 - 45 mins. to cook that way.
    I also want to comment on what we call 'breaking beans' here across the mountains. We sit outside in the afternoon under a tree with in a chair with an unfolded newspaper on our laps to put the beans on. It serves as the vessel to catch the tips and strings. Fill your newspapered lap with beans. String and tip beans, drop them back into the unbroken beans on your lap, break the beans into your dominant hand and toss in the vessel you bring in the house. When you have found all the unbroken beans in the newspaper, you'll have just the strings/tips. Dump that into a bucket to haul to your chickens. You can enjoy the sunshine, the kids can play out in the yard and they can even take a nap on an old quilt under the tree.
    That's the way I grew up - helping my Mom and Grandmother break beans. Grace and Joy will learn from watching you. Maybe Grace could read to the younger children while you are breaking beans, or you could sing songs. You can pack a 'picnic' lunch to eat out there too. I know the weather this past three weeks has been really hot, but it's 5 - 10° cooler under a shade tree. Use the back porch in the morning before the sun hits it and move to the shade trees after lunch.
    Not telling you have to raise your family, just some suggestions from one who's been there before.

      Me, too! That’s how we did green beans on the front porch in the suburbs! We got to talk to neighbors as they walked by. Ah, the good ole days where neighbors knew each other and moms knew how to be real, involved mothers!

    In the 4 seasons I have grown green beans, I have never blanched them first. I do use a food saver to store which pulls all of the air out of the bags. My green beans are crisp, maintain their color and taste delicious!!! Good call on saving time without sacrificing your beans. They will still be delicious promise!! 😀

      I love my foodsaver too- it changed the way we buy food. Now we buy fresh in bulk and dry or freeze it and seal it up. Found out that shredded cheese compacts into a giant clump again though, so... no more shreds, only blocks.

      Clever Kim's Curios I have found with cheese its best to freeze on a cookie sheet first then vacuum seal. It was definitely worth the investment. Prepared foods are so much easier, I can make trays of foods and portion them out, saves time 😀

      How do you cook them? When I didn’t blanch my green beans and froze them in a vacuum sealed bag, they were mushy after boiling them for only a handful of minutes.

      @@MFaith777 I either steam them for 4-5 mins to heat them up, or I add them to soups and stews toward the end of the cooking process. Occasionally I’ll add them to a stir fry right at the end.
      I do defrost fulling before any of those processes.

    we are totally going to freeze the beans we just picked..without blanching...for those who dont know, you can also freeze clean tomatoes fresh out of the garden too. No blanching, no need to can them, it works, weve done it for 2 seasons now. We do vacuum seal them though, i think it helps.

    I've never blanched my beans, I just get fresh beans from the grocery store, trim the ends, stick them in freezer bags. When I'm ready to eat them, throw them in the crock pot with seasoning and veggie broth for a few hours, always great!

      Patricia, how long do they last in the freezer? We’re growing A LOT of green beans thus year! I’m going to ferment as many as I can but I need other methods aside from pressure canning, which destroys almost all of the micronutrients. Thanks so much fir your testimony on how this works!     Thx for sharing this tip! I did something similar with canning tomatoes. Last summer I had a 1 1/2 year old and I had oodles of tomatoes to can.... I was not looking forward to removing this skins from all those tomatoes. I went online and found a recipe where a lady canned diced tomatoes without removing the skins. It saved me tons of time and they turned out great! We mamas need all the shortcuts we can get! Love your kitchen, it is very cheery!

    I LOVE YOU! I just came in from picking more green beans then I have ever picked from the garden. After washing all by beans and changing my soaked tee-shirt...I came upstairs to my computer to relax before blanching, blanching, blanching for the rest of the afternoon. And you know what...I'M NOT GOING TO! You just gave me permission to free up hours of my afternoon. That's why I love you! LOL!

    My short cut is I completely cook, cool, then freeze that way it doesn’t take as long to cook at supper time...mom of 4 small kids too!

    Well my great granny raised me. We had huge harvests every fall and she never blanched any vegetables or fruits before freezing them. I do remember that she would fill the freezer bag half way with water once she filled it with clean vegetables. She would then force all of the air out of the bags, seal them and freeze. Oh, and this is well before the zip bags. We used good old fashion twist ties.

    I wish my husband liked frozen green beans but alas...he doesn't so I go through the whole canning process BUT I love to can and I no longer have little ones to tend too. I will say that there are many shortcuts I take that the "gov't" guidelines wouldn't approve but as long as I don't require them to feed me or put up my harvest, in my house it's my rules!!! And my family is still living to eat Mamas cooking and they haven't had to be mad-dashed to the hospital for food poisoning issues either. Soooo, you go Bri and do as you will with what you are dealing with and enjoy those babies as they grow up all too fast. Love, Love, Love your videos, you keep making them and I'll keep watching!!!

    I stopped blanching my green beans, peas, corn, cauliflower, broccoli & kale about 20 years ago due to 4 children, my youngest dealing with severe health problems, tending my farm & 4 hog's needing to be butchered right at harvest time! I was so impressed with the quality, I never blanched from that year on! Get as much air out as possible from your bags - I stick a straw in there & draw out the air while sealing the bag all the way. Label and date the bags, stick everything into the fridge overnight then into the freezer the next morning.

    Thank you, Bri. I’ve just cut my first harvest of beans from dwarf bean plants. Good thing about those is there’s no trellising required and they yielded a surprising amount of beans. I’m very happy. This is my first garden season ever and I’m in my early fifties 😃🪴

      I've jsut brought in beans from the dwarf bean harvest as well, in Australia. It still seems like work cutting and packing them but well worth it. They are so easy to grow. Well done on achieving your first garden and good luck for the second. :)

    I didn't blanch my beans from last year. I never even knew you were "supposed to" but we just finished last summers harvest of frozen beans last week and they were just fine.

    My mother never blanched her green beans just tossed them in lunch sized paper bags and wala. She also would toss a whole tomato in each lunch paper bag, seal it and then would use those tomatoes in stews, soups and etc. Something about the paper lunch bags helped preserve them. They always come out looking like new and no freezer burnt ices. I too also do her recipe for freezing. Saves so much time. I just today ran across a video of yours and now watching more of them, subscribed, liking and getting notifications. Love them thank you.

    The "old ways" are not necessarily always the good ways! More power to you, Bri! I keep our six-month-old grandson 3 or 4 days a week, and I'm totally overwhelmed - most days I don't even eat lunch till baby goes home. I cannot even imagine doing a third of what all you do!!

    Bri years ago I really wanted to learn how to properly and safely can veggies.I asked some of the older ladies (in their 70's) at church to teach me and they looked at me like I was crazy. They said we don't can, that's hard work. we don't even blanch anymore,just wash, bag and freeze.Works great although I still want to learn how to can.

    I grew up on a farm and have been homesteadding all my life. I have never blanched vegs because she never did. We have always prepared them, bagged them and added water to the bag. The thought was that they would freezer burn without water. Maybe I will try freezing them dry. Love all your videos.

    I never blanch my green beans and they turn out great. On year, I blanched my snow peas following the directions of what you are SUPPOSE to do and I hated how they turned out. They ended up mushy. So the next year, I did nto blanch them and they were SO much better! SO yes, blanching is just a waste of time in my book.

    Good for you! For sure blanching is the best, but if you are short on time and perhaps resources, freezing without blanching is a fine thing to do. I have done that in the past, but I noticed that the longer they were kept frozen the more likely they would be to be freezer-burned. Probably the best strategy is to use the unblanched ones first. If you're eating them quickly enough, then there's no fear!

    Bri, I am 72, been freezing food since early teens with my Mom. She taught me the trick to delishous fresh tasting food from the freezer was to put it on to c9ok without thawing. Anytime I have thawed anything except meat, it has a not fresh taste.

      I always take my beans out of freezer and straight to the pot to cook. My corn to , if my carrots are Froze and I’m making soup I’ll throw them in the pot froze with the rest of my veggies and I’ll throw in my ground beef froze and pour a can of tomato juice in the pot and half can of water and cook till all is don and it’s Delicious!

    Good for you! I love it. I also found several sites/bloggers who said they didn't blanch their green beans so that's what I've been doing also. I decided to try a method with one bag that my grandmother used and what she did was freeze her beans in bags with water. I'll have to find out later when we eat them and compare them how they are but my mom said they seemed very fresh after being frozen in water. I love your beautiful homestead! The animals are obviously making some excellent fertilizer for your beautiful plants.

    Hi there Bri. Just wanted you to know that I have tried the blanching method and was not happy with it because my beans would end up kinda of mushy when I cooked them. I know simply string and break my beans which have been washed, bag them squeezing out as much air as possible then place into the freezer. The beans are dumped into the kettle with some water and cooked then seasoned as usual. This method keeps them tasting more like fresh. I also use this freezing method for greens such as kale or Chard etc.

    I prefer not blanching my beans. As far as freezing them on a cookie sheet it makes no sense to me either. I pull a bag of beans out of the freezer in the morning to DE thaw and by lunch they are unfrozen and ready to use. Good video!

    Was going to check internet re blanching beans as I had gotten to the point of not freezing any this year. So disappointed in how they cooked up. So glad you put up this vid. No. More. Blanching!

    i have done that with corn and tomatoes too and actually prefer it. Going to try it on beans this year for sure. One year i froze corn three ways. 1) still in the husk ended up tasting too grassy to me 2) blanched and we all know that taste 3) shucked and individually wrapped in plastic wrap (freezer to microwave so easy). What i discovered was that i preferred the taste of number 3 best and it lasted several years still tasting fresh.

    Matter a fact I just picked a big bunch of black eyed peas and green beans to day, I shelled the peas washed them now towel drying and freezing them. The green beans I washed towel dried and putting in freezer bags. The only thing I blanch is corn. I’ll put them in boiling water about 5 min. Take them out towel dry and in freezer bags for freezer.

    good for adapting and gaining more ! my mom last 2 years started doing Tomatoes straight into the freezer and when they thaw she said the Skins peel right off. She is doing that from now on and I think I might try it again this year because I still Have some canned from last year. i usually can tomatoes one year and applesauce the next but double so i only have to can once a season. then i just grow a few tomatoes for fresh eating those off years.
    too bad the rabbits ate most of my green bean plants or I would try this too.

    Truthfully I'm with you, if you can save time go for it. I have very little experience with freezing and none with canning. I tried freezing fresh unblanched zucchini /squash from the garden last year and it turned to mush! I tossed em out. So I would love some advice on how to keep my zucchini in the freezer for next year. When making anything with tomatoes I do blanch to remove the skins, thats my only experience with blanching anything. I froze a bunch of strawberries using the cookie sheet method then put them into freezer bags, that seemed to work really well. I really need to learn more about this now that I am working on expanding our veggie garden to grow more food. I hate to waste anything after all that hard work. Good video Bri!

      Rhonna Marsden i shred zuchinni and freeze but it is watery too. i thaw and squeeze out the liquid and i use it for bread waffels and putting it straight from frozen into pasta sauce Or hiding in sloppy Joes and such. i think dehydrating might be better for zuchinni.

    Hi, I wash my beans in a mild vinegar solution to kill any bacteria that may be on them, it also drives out any bugs that may be hiding in the produce. Allow them to drain in a collender before filling freezer bags. Never blanched any and the beans were still amazing after six months or longer in the freezer.

    I also researched the freeze without blanching for green beans year before last, so I just washed dried and froze my green beans, ////when I removed them from the freezer and prepared them for a meal, to me they tasted like grass, So last year I went back to blanching, I hope you have better luck then I did.

    It is ok to tell people that you are doing things your way. I freeze tomatoes, peppers, green beans, and chop onions. I love it because I can grab them out and toss in a soup, stew, and chilli for a quick meal.

    Harvested or bought. I slice and dice all my veggies and put them strait n the freezer. Thruth said the are used within 3 month time. The harder the veggie the longer time it can stay frozen. O, they are washed and dried with a towel so less ice forms when they are going to stay in a long time.

    I didn't want to blanch either , didn't want to heat the whole house up . Online I found info on putting the beans in a steamer for a short time , cool then and freeze . Worked really good no problem heating the house up and the beans taste great . I saw the same info you did, loss of 30% nutritional value without blanching. Good to know what you did worked out just fine . Looks like you have your hands full !

    Do whatever you want and have time for. If it doesn't work, well you know for next time. If it does work, great it saved you time and sanity.

    I'm inclined to agree with you ma'am. I went bean heavy this year in my gardens and honestly don't have the time to blanch beand every few days. I'm gonna follow suit and go no blanch this year. I'm confident we'll be just fine =) Thanks for the re-assuring vid!

    I have never blanched green beans and they always turn out great. Same thing with potatoes. I just cut them into about one inch cubes and chuck them into the freezer.

    I see a lot of people on here agree with you, they don't blanch them either. So glad I saw this I won't blanch mine either cause it looks like they are better not blanched. Thanks for posting.

    I got so many criticism for not blanching my green beans. The die hards will criticize but it’s fine.

    I say whatever works for you...my sister in law used to put her tomatoes in the freezer whole (washed of course). She used them for soups, stews, chili, and spaghetti sauce. That saved her a lot of time over canning them which required washing, dipping in boiling water,peeling, cutting them up, putting in jars, canning them, cooling them down, washing off the jars and storing them. That is a lot of steps for a busy Mom...especially a busy Mom with very young children. Since she did this method for years I would have to assume it was successful. Relax, and have a Blessed day.

    i freeze tomato's on a cookie sheet and dip in warm water pull the skins then freeze in bags .. i still can some tomato's every year because i enjoy doing it ....i pull tomato's from the freezer in the winter and can them if i want i just use 2 gallon bags and work them when i have time ...

    Whenever I buy a huge abundance of fresh corn on sale, I just husk the corn, then I bathe them in cold water; and finally, put them in freezer bags and squeeze as much air before sealing bag. When I boil them they turn out like Church's Fried Chicken corn on the cob.

    I've never blanced beans or any vegetables except root vegetables. One thing I do is iqf or individually quick freeze on cookie sheet then bag so as to take out just what's needed versus a big frozen glob I hope it helps. Marc

    I am always put all my vegies right after harvest ( clean them first ofcourse) in my freezer w/o blancing. My opinion : this method is way Much better than blancing them bfor freezing.

    I was trying to decide which video to watch and you look super happy about it so I chose your video!! Blanching isn't as wonderful as what they say if you really look beyond all the information that's pushed. Also I am about to try the option you gave with washing them, putting them on a cookie sheet in the freezer and then putting them in their bags. I didn't catch you saying how long however I will give it around an hour or so.

    I will join the group that doesn't blanch. Been doing it for yrs. Cut them fairly small so that they are bite size in soups, stews etc. My other favorite way of course is to stir fry them in a hot pan (right out of the freezer) in some (shhh) bacon or bacon fat until bright green and then add tad amount of water, cover, cook until you like them, take lid odd and let them carmelize

    No way are you crazy Miss Bri, your beans are going to be just fine. Clean them, cut them, freeze them, put them in your seal a meal bag(zip loc works too)... Ta Da! I do suggest y'all try and get a seal a meal, don't purchase a cheap one either. Buy one of the better ones, it'll be well worth it in the long run. (The bags don't have to be specifically seal a meal brand, but you should get a higher end meal storage style thing like the Seal a Meal.) We use ours whenever we bring meat for the table(hunting) or have to prepare one of the cattle for storage.

    I live in the Netherlands and we never blanche them before freezing. We dont do it with any vegetable and we put all freezers full for a year. Only thing we do before freezing is wash the vegetables such as beans or sprouts, but not the cale.

    Have you thought of using some of the jars stored under your house for your own canning. Maybe you could open a few at a time and put the old food in the compost and wash the jars for later. Just give them a very good once over for small chips or cracks on the rim. New lids with the good older tings would save you a ton of money. When it is really hot you can do it outside. Just use a good sturdy grill to boil the water in the canning kettle.

    I also freeze my beans this way. I just dont take the time to blanch.. and we all liked them fine.. My only advice is to store the small bags in larger freezer bags in several portions at a time. It will increase the length of time before freezer burn. Good luck.. I also freeze my peppers, radishes for stews and peas this way. I have also done zucchini and any berries.. just cut them into manageable portions and double bag.. I like to freeze cooked beets in portions too.. Tomatoes also freeze fairly well this way

    I can't even begin to imagine how many green beans I have snapped in my lifetime! We usually would can them, but that is definitely a longer process. Since I don't have as many green beans this year I'm going to just freeze them without blanching in vacuum sealed bags. I'll have most of them all ate up within a few months, so I think the no blanch method will keep them just fine, especially after being vacuum sealed. That's the plan at least.

    Hi everyone, just a tip if you don’t have a vacuum sealer.
    1. Full the sink with water.
    2. Full the ziplock with food
    3. Close the ziplock almost all the way leaving as small a hole as possible
    4. Submerge in water but not the hole to push out the air.
    5. Finish closing the bag

    I've never tried green beans by not blanching. But corn is wonderful by not blanching. Cut off or on the cob it's just like fresh picked.

      Deborah Traylor I love to fill my grill with my corn long enough to get grill marks. Take off cool, cut corn off cob, scrape cobs. You can put cobs in some water to boil to get great broth for extra bonus if you have time (just some corn, not all).

    Bri, I would like to add a comment about Dolly. The same symptoms that indicated she was about to Calve are also symptoms of being in heat. Please check with a vet to see if she could still be viable to breed this year. The symptoms I am talking about are the winking and slight discharge.

    As a person that has put up fresh vegetables and fruits by freezing for many yrs it has been my experience that freezing without blanching causes the vegetables to become 'freeze dried'. They loose substance, become wrinkly and are not as tasteful. Their moisture is drawn out by the freezer. IMHO they were chicken feed. But it may work for you. Food saver wrap is costly and I have only used it with fish. I can honestly say however I have had a great deal of success with Freezer Wrap paper vs the Freezer bags. Less costly and it keeps your frozen goods fresher longer and no freezer burn. Since you have such an abundance of green beans I would do the both ways of freezing to see which way works best for you. That way you're not putting all your eggs in one basket so to speak. Thank you for sharing.

    We leave our beans whole - cutting out one more step. Person cuts their own beans as they dish them up on their own plate. So many steps cut out leaves better timing for younger beans as they all come on so fast and we stagger our plantings to two weeks apart for less beans in a bean haul and longer eating fresh out of the patch.

    Thanks for the info. Will be harvesting my first peas ever in a couple days and I knew there was a reason why I didn't want to blanch them like everyone recommends. I know that boiling for any amount of time destroys all life, and if even one person is freezing without killing them first I'll be doing it as well.
    I have about 20 pea plants and I already know I'll have more than enough to eat for my family and I'll have to freeze some.
    Hope to homestead very soon, but for now we have a decent amount of food gardens.

      Margaret Bedwell, I've done that and they turn out perfect. Just trim the ends, pull off any bad looking husks, freeze in gallon bags. When ready to cook, I pull off a 1 inch strip of the husks and cornsilk off of them, butter them, salt them and bake covered with lid or foil until tender. Taste just like fresh corn.

      You're welcome! Maybe someone will see the info I posted. Just confirming that corn doesn't need to be blanched either, and can be frozen in husk/without shucking as you suggested. The husks protect the corn from freezer burn, and somehow stops the enzymatic action as well. It's my favorite way to freeze corn. I agree - Art and Bri have a beautiful garden!

    I just finished canning green beans ... I was thinking I winder if I could just freeze them next time so I went on here and found your video. Guess what. Next time I’m going to freeze. Sounds very simple. Canning is an all day chore 😕

    Literally just picked up two bushels of green beans TODAY to freeze (I've canned tons before and don't care for them canned)... I think I will also skip the blanching and hope for the best!

    In kashmir we dried the beans under the sunlight in the summer and many vegetables for winter.
    I can't understand how frozen the beans. Till year stay in the Freezer But in kashmir there is a different way we dried vegetables and packs in the jars not in the freezer

    I didn't blanch any of my vegetables this year--carrots, onions, beans, squash--wash, cut up, and throw into freezer storage bags, I started doing this last year, and have since used the vegetables, they do great without blanching.

    There was a lady in church, who has gone on to Glory now, who threw her green breans in a gallon tub that was left over from ice cream. She would scoop out a handful and cook them. It was just her and her husband. I like how you cut your beans. Did it leave a brown edge? That was always my fear. Going to need a short cut this year and that will be mine, stringless beans and cutting them instead of breaking them. Thanks for the idea!
