Red bean soup - How to make it at home (Cantonese style)

  • Today I want to show you how to prepare a traditional Cantonese dessert which is called red bean soup 红豆沙.
    Red bean soup is in the category of Cantonese desserts called tong sui (糖水), literally means sugar water. It is a popular item on the menu of most Chinese dessert houses in Hong Kong, Malaysia, and Singapore. The red bean soup is also regularly included in the Chinese banquet package as the concluding dish to wrap up a meal.

    Recipe:

    Ingredients
    300g (10 oz) red beans
    3 pieces pandan Leaves
    3 pieces (about 3-5 grams) of dried tangerine peel (chenpi 陳皮)
    1500ml (6 cups) of water
    A pinch of Salt
    150g rock sugar
    2 tbsp of sago
    Instructions:
    1. Rinse the red beans with water to remove the impurities.
    2. Soak the red beans overnight. (Optional: keep the red beans in the freezer to speed up the disintegration of the beans.).
    3. Add the pandan leaves and dried tangerine peels.
    4. Boil the red beans with water for one hour.
    5. Separate the beans from the liquid, mash the beans and then return to the pot.
    6. Add the sago and rock sugar. Add water if necessary.
    7. Boil for a further twenty minutes. Serve.

    Thanks for the tips. Never though of mashing it up to make it looks thicker. Cooked this in the 60s and was told by my later mother to place a porcelain spoon in the pot to mash the beans while cooking. You mentioned 3 ingredients in the beginning. It should be 4 at least - you need water as well. Also in my old days, we add some rice to the pot from the start to have the dessert looks thicker too. Adding coconut cream is always my favorite but unfortunately this is bad for high cholesterol.

    I followed your instruction and the soup turned out really nice and creamy. Only I didn't scrap the tangerine. I felt it was a waste of my very old tangerine peels. The bitterness is not noticeable, or at least, it suited my taste buds. Thank you once again.

    Thank you for the tutorial. I tried to cook the same way without the citric skin. I put a little bit of corn starch to make it thicker. It is yummy.

      You can also add sagu (sago)

    My mom used to make this sweet soup, but using mung beans. Tangerine peels were perhaps 1 year old.

    Brilliant idea to freeze the red beans overnight. I have a problem boiling the beans for so long, still can't turn soft. Thank you.

      Also, only add sugar last minute. It is hard to turn soft if you add sugar during the early stages.

      Soak overnight (before bedtime) next morning you are ready to cook. Easy and less cooking time.

    I've never seen any beans that have sugar.
    In USA, we eat great northern, navy, pinto, etc. We usually serve with a cut-up mild onion, & a big piece of cornbread.

      You can find it on the menu in Chinese restaurants if you have any in the area you live in. This is more of a dessert item

    I make this in UK occasionally ; I soak beans overnight, and use brown sugar, sugar that comes in small bars from Chinese super markets.
    Tangerine peels are home dried and
    Saved after eating the fruit.

      Either, you can put an orange, cook about an hour, take it out, just for flovour.. When the beans is totally break, add sugarcane-sugar cubes, more aroma, then sagu (sago)..

    Can u explain use high heat or low heat when boiled it for 1 hour?? And lastly 20 minutes using low heat or medium heat?

    If there are no pandan leaves, can you substitute the green part of the leek?

      Pandan leaves have a unique flavor and cannot be substituted. You can omit if it is not available.

      There is no substitute for it. Fortunately, you can omit it, and it will still be tasty.

      Try using a pressure cooker? It's the easiest way to soften the red beans

    Is there a substitute for Pandan Leaves?

      Unfortunately, there isn't. Just like vanilla, you can't substitute it with something else. However, you can use good quality pandan leaves extract. If you can't get it, please omit it. It will not make a huge difference.

      Discard the water after the 1st and 2nd boil. Only then can you rid off the bitterness. This was taught by the Japanese while making azuki bean paste,

      Many reasons. One of them is adding sugar too early. Always add sugar when it's nearly done.

      Red beans are smaller than kidney beans and are round.

    Can you tell me please if the 'red beans' that you use are what we in the U.K. might call 'kidney beans'? I would like to try making this as I'm curious as to how it can be a dessert! I don't want to make a mistake and maybe use the wrong beans though.

      It is not. These beans are slightly smaller than kidney bean, and round. Also called Azuki beans.
