      Interesting historical note: The Aztecs used to make a drink with chocolate (unsweetened, of course,) with chilis. While chocolate is amazing with sugar, it can also be used as a savory/bitter ingredient, like in mole sauce, and many chefs forget that.

It seems that you really have a heart for people, and you are a very encouraging host and a good mentor. You are quite likeable once we get past the swearing. I suppose your vocabulary, or lack thereof, is your choice.
      However, you frequently use 'Jesus Christ' as an expression of disgust or exasperation. Not sure what your religious views are. But I wonder if you're not afraid to use Jesus' name disrespectfully like that?

      I’ve never had chocolate with chili. Doesn’t sound terrible. Considering I’ve had chocolate in bbq sauce which is pretty good.

    I put a couple of raw cacao beans in a pestle and mortar and threw them in my chilli just 2 days ago and it was the best chilli I ever made. Even a touch of agave syrup which is also Mexican to add sweetness.. but you're not making a dessert so don't add too much or it WILL ruin your dish. Flavours are about a delicate balance of sweet, salty, spicy, acidic...

      Yeah, also more of a fan of raw cacao beans/powder instead of the chocolate. Also pairs really well with cumin and/or cinnamon in the chili.

    There are two secret ingredients for a good chili that most people would never think of. A little bit of chocolate, and a little bit of cinnamon. Yes, cinnamon. You wouldn't think it works, but it really does.

    Super dark chocolate isn't chocolatey. It probably just makes the texture smooth and adds bitterness not sweetness. Seems good

    Gordon uses a garden shovel as a teaspoon! He must have poured 3-4 tablespoons of soy sauce, not that flavoring by eye is a bad thing but if you were to follow his verbal instruction here you will have a very different dish than what he is preparing. I really do enjoy the bit of friendly ribbing between the chefs.

    I have more respect for the man that didn’t need to talk smack to do good , yes Gordon eventually says good job and the other guys says a tease eventually but only after Gordon tries soo hard to rock him, but I respect a man that doesn’t have to talk smack when intimidated…

    Chocolate on chili isn't really all that bizarre in my experience, regardless of how you define the word "chili". Then again, I lived in Cincinnati, Texas and several other places where "chili" takes many forms, each with myriad flavor profiles.
    Of course, Gordon relents at the end and admits it's delicious, though frankly his rice bowl seemed more appetizing and more likely to be made by myself at home.

    Chili goes with dark chocolate brilliantly, it’s earthy and sweet and compliments both the beef flavour and the spices, hell he’s using cumin and cinnamon which are perfect for it. He’s a chef how does he not know that?

    Go back to Ramsay's Boiling Point (early 2000s documentary about Gordon opening his first restaurant - it's brilliant. The man was a mentalist) and if you're eagle eyed you'll see Paul Ainsworth getting a bollocking from Ramsay in the kitchen! Interesting to see them cooking as equals now, as Ramsay was certainly the boss back then!

    i used my offset smoker and lightly smoked it. then fried it and put it in a Bolognese sauce. added onions, carrots, broad beans, sliced mushrooms, corn , garlic, herbs and spices and a touch of red wine.

    I always use a little dark chocolate in my chili...it gives it an amazing smokey flavor. I'm shocked Chef Paul is using 70%, i prefer 100%. Also amazed he's using Demerara's Sugar, as a dark brown sugar would work the same since it'll melt down into the dish in the same way and impart the same flavor.

    Last time I made chili, I added 1/2 can pureed chipotle peppers in adobo and a tablespoon of cocoa powder to my usual recipe. Totally blew our minds it was so good!

      You can use also a tablespoon of fresh coffee powder, it's a little bit different(a little more bitter, but with way more aroma) but really good as well!

    paul made skyline chili. its a thing in cinnnati or however that is spelled. chili ontop of pasta with cheese. cinnamon and chocolate are the two big ingredients, look it up, greek immigrants brought it over to usa, so delicious
