Food was so bad I thought about how sad it was that an animal gave it's life for this. I've never had a philosophical dilemma eating a meal before but I was forced to seriously question the state of the world while starinh at the most expensive pile of shit I've ever had the displeasure of throwing away.

@@vincenzosplate we will try it tonight. I have started keeping different pasta types and making your sauces and keeping them. They love to help too. Everything here is in my fridge or pantry. Like I said thank you for teaching these meals. It has made my kids happy! Normally just grilling and smoking meat, but adding in meals or combining them has done wonders. Getting rid of box meals and actually just cooking clean good food has been amazing. Healthy and wholesome food would have meant the world to their mom. Thanks for helping me do better. And have fun doing it!!! They look forward to cooking every single day.

Hi Vicenzo! I have just cooked this recipe and the result was so tasty. The provolone instead of buffalo mozzarella does a good job. My further experiences: The potatoes needed much more time than the 10 minutes You wrote in Your recipe to become soft. Maybe the cooking time also depends on the sort of potatoes: I had a rather compact cooking sort, a softer and floury cooking one might be better for this dish. I needed much more stock than the proposed 500 ml, approximately 1000 ml to get the pasta covered ( in a 28cm steelpan). Finally the pasta took 8 minutes more than written on the package to become al dente. Anyway, this dish came out unbelievably delicious and even creamier than shown in Your video!

thought that pecorino and broth is salty enogh so i just added salt &pepper instead of pecorino.. it vas delicous. You see, Hungary have this similarly national dish called granadyr, they put ,,pasta" in to the mashed potatos and add a lots of paprika. They serving it with pickled cucumbers i grew up on that dish but yours potato pasta is much better of course , i guess they somehow stole this recipe from Italy in 18 century or sh1t 😃

I'm not Italian, but I love to start with sofritto for many dishes because it's the best and natural flavour enhancer
