I recently cooked a Carbonara according to your recipe for my girlfriend. No corners cut, guanciale, pecorino and absolutely zero cream ;) It was lovely dish.
The basic rule of Italian cooking: Use no more than 5 ingredients, top quality, fresh as possible. ETA: It's now the 27th, and I made this tonight. It was FANTASTIC!
I like how these recipes are not over complicated, just basic food that everyone enjoys and only the necessary ingredients. Even if I don't recognize some ingredients like the cheese, the name is in the video which makes it easy to find it from the store and try it out! As a lazy student I really like to try these recipes

So I made it! Used porcini, morel, and shiitake to really get that woody wild mushroom feel, but Vincenzo, you’re right as always; the burrata was really the hidden key to unlock the magic. SO GOOD!!!!!!!

For those in the US, you can get very good frozen mushrooms just like Vincenzo showed at Trader Joe’s if there is one in your area. A great mix of different ones. Great video!

I have just eaten a plate of pasta following this recipe with the boletus aereus and edulis that I collected yesterday. This recipe is delicious and it does indeed honor the precious funghi. I used a local sheep milk curated cheese similar to pecorino, and then the burrata, which really adds a lot to the dish without covering the funghi flavour. Thank you for sharing this recipe!

I made this for my partner using chitarra instead of linguine and fresh mozzarella slices instead of burrata. We topped it with fresh ground pepper and it turned out amazing. Thank you for the great recipe

I just cooked this (had to use Parmesan, mozzarella and normal white flat mushrooms instead of the genuine articles) and it was delicious! Such an easy and delicious recipe. My 3 year old also loved (and he is much fussier than me). Thank you so much 😊

Amazing! Well done and We're going to try this tonight. Simple, tasty, and fun! I do home-made burrata stuffed raviolis. We call them "Burrataviolis" 😋 . I think you would LOVE this Vincenzo. I'll do a video the next time I make them. I use 1 burrata cut into 4 equal pieces to make 4 jumbo burrataviolis. They are very good with a marinara sauce but I prefer to do a fresh basil and pine nut pesto cream sauce for them. Very tasty!

Fantastic recipe, I love the addition of the Burrata. I ran across a Burrata that has black truffle in it and I think it would be perfect for this recipe.
It’s cream. Italians take water out of cream to make it cheese and then add pasta water back to make it cream again. Plus butter, so there is double cream in this pasta.
The burrata is truly a stroke of genius. I've not tried it yet, but can vividly imagine how good it must be. Would you advise keeping the burrata out of the fridge for a while before? I feel like the problem with for example cacio e pepe is how quickly everything settles into a big clump of cheese as it cools down, so if you get the burrata down to room temperature first it might help blend everything together better?
It's so late right now at my house and I am now hungry from watching this video. I really love mushrooms and I have never tried mushroom pasta and thank you for this recipe I will try to make it as soon as possible in the near future (tomorrow-ish)

@@vincenzosplate Ciao Vincenzo, here's a little trick I learned: put the saffron strands in an egg cup and add a pinch of sugar. Then use the upper round end of a wooden spoon to grind it into a fine powder which you then add to the sauce - or the pasta water. This will avoid any larger parts of saffron which may taste bitter if you bite on them. And, it helps to not overdose it 😉

Just started watching this channel and am now subscribed. In the short time I've watched videos on this channel I've come to understand something that always perplexed me before. I now have a better understanding as to why it is that Italian and especially Mediterranean Cuisine are considered very healthy yet one Americans cook Italian food and eat it we all get fat. It's all the cream we add to the recipes that is unnecessary. Now don't get me wrong. Bless me Father for I have sinned for there was the Boyardee and I did partake of it LOL. But I'm beginning to understand much more about traditional Italian cooking methods and also that we here in the United States and perhaps other parts of the world too want to focus so much on convenience and quick prep. Love it! Especially the burrata on top, never tried that before. However, I would have fried the muschrooms with the butter since the butter adds a lot of flavour to the mushrooms when cooking

I wouldn’t want fresh pasta for all dishes. As I have understood it, the Italians don’t either. Some things are best with dry pasta. Do you make your own dry pasta too? Seems so much more convenient to buy dry pasta.
I love mushrooms, but I don't like to cook with them personally. I will take your advice at the end and try to make this with a protein. I'd love to try this recipe with diced pork cutlets or maybe bacon. Looks great, Vincenzo! Ricetta magnifico!

Obviously he means Heavy Cream (Whipping Cream) Which people usually call simply "cream"

@@vincenzosplate Ciao Vincenzo, here's a little trick I learned: put the saffron strands in an egg cup and add a pinch of sugar. Then use the upper round end of a wooden spoon to grind it into a fine powder which you then add to the sauce - or the pasta water. This will avoid any larger parts of saffron which may taste bitter if you bite on them. And, it helps to not overdose it 😉

Just started watching this channel and am now subscribed. In the short time I've watched videos on this channel I've come to understand something that always perplexed me before. I now have a better understanding as to why it is that Italian and especially Mediterranean Cuisine are considered very healthy yet one Americans cook Italian food and eat it we all get fat. It's all the cream we add to the recipes that is unnecessary. Now don't get me wrong. Bless me Father for I have sinned for there was the Boyardee and I did partake of it LOL. But I'm beginning to understand much more about traditional Italian cooking methods and also that we here in the United States and perhaps other parts of the world too want to focus so much on convenience and quick prep. Anyway love the channel and God bless.
Love it! Especially the burrata on top, never tried that before. However, I would have fried the muschrooms with the butter since the butter adds a lot of flavour to the mushrooms when cooking

I wouldn’t want fresh pasta for all dishes. As I have understood it, the Italians don’t either. Some things are best with dry pasta. Do you make your own dry pasta too? Seems so much more convenient to buy dry pasta.
@@lottatroublemaker6130 yes it is more convenient. But for me the love is in making everything fresh.
I love mushrooms, but I don't like to cook with them personally. I will take your advice at the end and try to make this with a protein. I'd love to try this recipe with diced pork cutlets or maybe bacon. Looks great, Vincenzo! Ricetta magnifico!
