I think you can use pastarami if it's available in your country too. But make sure to not add salt till the very end after you taste it because pastarami will be super salty by default. A tiny bit of neutral flavor oil on low heat with the pastarami will render out its fat like guanciale and extract super nice flavors flavors..
I’m not 100% on board with turnips in a chicken pot pie but I’m 100% for this mushroom carbonara. Perfect for the people who are observing lent or looking for a meatless option.

I am a big fan of “happens to be meatless, but that’s not what it’s about” food. I often make accidentally vegan meals, where I’m not necessarily aiming for it, but I realize after I make it that it happens to be vegan.

Just made this, and it was so easy, and SO good! Well worth taking the time to brown the mushrooms properly. I threw in some chili flakes with the shallots and garlic for a little extra kick, and boy was it delicious. Had to stop myself from eating the whole pot. Thanks for the amazing dinner, Molly!

I made this and I think you can really brighten this dish up by adding in fresh thyme leaves towards the end of frying the mushrooms and stirring in a generous amount of finely chopped fresh parsley at the end of cooking.
I know this isn’t being marketed as meatless but I just went vegetarian and carbonara was one of my favorite things to cook before so oh my gOD THANK YOU for this

I actually think he used cashews and nutritional yeast and lots of other spices??? Can't remember correctly but it was soooo smooth and heavenly❤️ He made both dry parmesan and a parmesan sauce sort of, and put them both on pizza and the foodie in me died💀💯
I made their crispy smashed potatoes with walnut sauce the other day. Omfg, that one went straight into the dinner rotation. My family annihilated it. One of the best potato recipes I've ever tasted

Made this tonight for dinner and it was great all the little tips throughout the video really helped me. I was forced to be patient with my mushrooms and boy did pay off. If you haven’t tried it yet you definitely should. My family that’s not fond of eggs or yolks gobbled it up before I could tell the what was in the pasta 🤣🤣🤣🤣🤣
I just wanted to say that I made this just now and it's amazing! One tip I might leave is to buy maybe 2 lbs of the mushrooms instead of the 1.5 in the recipe. I found once I pulled all the stems out and pulled them apart there were fewer than I thought there would be. The dish was amazing but I'd have liked more mushies per pasta.

I'm surprised that she sauteed the mushrooms in oil when I read that mushrooms shouldn't be treated like vegetables, since they're fungi. They should be added to a hot pan without oil, since mushrooms have a high water content, and the water will make them soggy and the sauce watery. So to get them golden brown and sweated, no oil should be added. I'll try it both ways and see if the taste is affected.
I’ve been trying to make carbonara a few times and I can never get the ratio right. Either I put too much or too less cheese, or too much or too less egg/egg yolks. You gave all the knowledge and made me understand what I’m cooking to make it the best version. Thank you!

Made this last night. Tbh it was a bit more work than I expected (I was tapped for mushroom wiping duty) but it turned out fantastic! Thank you Molly and ba!
Very, very, very debatable. You like it, eat it, but Jesus how can such a simple recipe be butchered so often, jees. The parsley was unnecessary and unwanted, the recipe doesn't call for it and makes no sense even for this version. Parmesan instead of Pecorino is a neglectable mistake since pecorino isn't as common outside Italy but you lose a ton of flavour. Thirdly that pasta shape is not good for creamy sauces, you may think that all shapes are the same but it's not true. Also you want the pasta to finish cooking with the fat from the guanciale, but you know mushrooms don't contain fat. Anything above isn't a terrible mistake, but is still a mistake. Lastly and most importantly, the whole carbonara recipe revolves around the egg and cheese mixture, while this one looks like it has mushrooms as protagonists, the sauce almost looks like some sort of garnish instead of the main part of the dish. Finally there are tons of meatless Italian pasta recipes, I myself try to reduce meat consumption as much as I can, and don't get why people keeps on trying to make a vegetarian or even vegan version of and extremely veg-unfriendly recipe

I'm sorry but there's no debate. The rule is that if it's unhealthy, it's a carbonara. Chocolate cake is technically carbonara and is celebrated as such in old Italia.

More footage of knife work please! It is so helpful to be able to see the techniques being used!
Remember to use a very sharp knife otherwise these techniques are dangerous. Oddly enough the sharper the knife in the kitchen, the safer you are.

I messed up the egg tempering, and ended up eating scrambled egg carbonara lol
But still an amazing recipe! 10/10
I think it helps to leave your eggs before you crack them to help bring to room temp .
Safest to already be whisking THEN drizzle hot liquid in.
Pouring hot liquid all at once into "still" egg mixture is risky.
I made these a few times already and they became my go to carbonara! Delicious!!

Seasoning the mushrooms with a touch of tamari, powdered porcini, smoked paprika and smoked salt would really help bring in some more bacon like umami
3:12 yeah gotta be careful, the alison, you know the two-part apoxy or glue can really ruin a mouthful.

Very, very, very debatable. You like it, eat it, but Jesus how can such a simple recipe be butchered so often, jees. The parsley was unnecessary and unwanted, the recipe doesn't call for it and makes no sense even for this version. Parmesan instead of Pecorino is a neglectable mistake since pecorino isn't as common outside Italy but you lose a ton of flavour. Thirdly that pasta shape is not good for creamy sauces, you may think that all shapes are the same but it's not true. Also you want the pasta to finish cooking with the fat from the guanciale, but you know mushrooms don't contain fat. Anything above isn't a terrible mistake, but is still a mistake. Lastly and most importantly, the whole carbonara recipe revolves around the egg and cheese mixture, while this one looks like it has mushrooms as protagonists, the sauce almost looks like some sort of garnish instead of the main part of the dish.
Finally there are tons of meatless Italian pasta recipes, I myself try to reduce meat consumption as much as I can, and don't get why people keeps on trying to make a vegetarian or even vegan version of and extremely veg-unfriendly recipe

I'm sorry but there's no debate. The rule is that if it's unhealthy, it's a carbonara. Chocolate cake is technically carbonara and is celebrated as such in old Italia.

I made this last night and it was everything I wanted and more! Only used 1 egg, 2 yolks and still achieved creaminess heaven.
IDK whether Molly picks the best dishes, or lucks out with the producers, but she always does the best recipes in the Test Kitchen. (She got the best episode in the Perfect Pizza playlist too. Okay, tied with Claire.)
