I made this last night for my girlfriend and it was a huge success! I had never used burrata before and it was a pleasant surprise! The sauce became so creamy when it was all mixed together it's a little hard to put into words how good it really was. Thank you for so many good recipes! I made this with my family and it was amazing, first time trying burrata cheese in a recipe ! I thought I might eventually add shrimp to it but after trying it, found out there is no need. The cheese is very savory ! its complete !
I used to bake/broil cherry tomatoes cut in half tossed in extra virgin olive oil then put that on top of bruschetta toast and top with cheese and broil a minute to melt. And I would sometimes saute them just like this but never thought about using it as sauce. I love the skin on because I prefer the texture. I have never heard of either of these cheeses before. I will have to try them one day but I bet they don't have that here in Alaska.

I haven’t tried this Burrata, but my wife’s favorite pasta in the world now is my cherry tomato Pomodoro, learned straight from your channel Vincenzo. Only difference is I found I like the tomato flavors even more with the richness from a table spoonful of Tomato Paste. Growing up I always thought I liked thin pastas the most, but now my whole family is in love with thick square spaghetti. I even tried with angel hair one time, but my kids demanded we go back to “same pasta as Vincenzo.” 👏👏👏

I make pasta more or less like this (without burrata (but sometimes I use with mini mozzarella di bufala), without blending... using parmigiano instead of pecorino) almost every day in summer. Convenient (it takes very little to make), very good. I just love it. Every once in a while I add some paprika or I try to use different kind of cherry tomatoes. The last one I tried was the "Pomodorino del piennolo del Vesuvio", I found it by chance and it was a discovery. Releases a lot more juice without doing anything, really good... so much so that I'm thinking of replicating the thing (just leave it to dry in the sun... doesn't seem too complicated, although obviously the soil is different here). I will try it with burrata next time. It looks delicious (not today... Today I'm doing Bollito Misto alla Piemontese, the best way to do boiled meat)

I actually love the texture of the tomato skin :D I love my pasta sauce to have some kind of texture. My favourite pasta with cherry tomatos I put roasted chopped almonds in there too. Gives awesome flavour and a nice crunch :D

Ciao! When using San Marzano tomatoes, you can certainly make a delicious sauce by crushing them by hand or blending them lightly for a slightly chunky texture. It's a great way to showcase the flavor of these premium tomatoes. You can also use pure passata if you prefer a smoother sauce. Both options work well, so choose the one that suits your taste. Since I had a batch of fresh Sm tomatoes from my balcony I went for something in between in the end: I made a passata but using the coarsest disc available in the passata maker. That way I get rid of the skins without peeling every single one but I also get the chunky consistency that you would want for pizza sauce. I hope Johnny would approve :D In any case, the taste is incredible
Vincenzo, I've learned so much about cooking in general and Italian food specifically from you. Thank you for the great meals I've shared with my friends and family, even if I mess up 1/3 of the time XD it's always fun. Pecorino is so dry! I can't get it to emulsify yet for sauce. It always turns to curds.
Lower the heat level and add in earlier, not off like a Carbonara but very low. I use it all the time when doing risotto and it NEVER curds. Your pan is TOO HOT.
I love this recipe, I made the other cherry tomato recipe many times this summer. I had fiaschetto di manduria tomato I loved so much, too bad the autumn taking away. Only one thing I would change on the recipe, I would use stick blender in the pan carafully to not touch metal with metal. I think I will do it that way :-)

I've been making this dish ever since I found your other video with the same recipe a year ago (Spaghetti al Pomodoro). I love the simplicity of the few ingredients and I'm still amazed by how creamy the sauce gets without adding cream or anything else. One of my favourites!

I actually love the texture of the tomato skin :D I love my pasta sauce to have some kind of texture. My favourite pasta with cherry tomatos I put roasted chopped almonds in there too. Gives awesome flavour and a nice crunch :D

You can use ricotta or mozzarella 😋😋
I like to put a full stalk of basil in early so it is easy to remove later before you add fresh basil at the end.

Since I had a batch of fresh Sm tomatoes from my balcony I went for something in between in the end: I made a passata but using the coarsest disc available in the passata maker. That way I get rid of the skins without peeling every single one but I also get the chunky consistency that you would want for pizza sauce. I hope Johnny would approve :D In any case, the taste is incredible

Vincenzo, I've learned so much about cooking in general and Italian food specifically from you. Thank you for the great meals I've shared with my friends and family, even if I mess up 1/3 of the time XD it's always fun. Pecorino is so dry! I can't get it to emulsify yet for sauce. It always turns to curds.

Lower the heat level and add in earlier, not off like a Carbonara but very low. I use it all the time when doing risotto and it NEVER curds. Your pan is TOO HOT.
I love this recipe, I made the other cherry tomato recipe many times this summer. I had fiaschetto di manduria tomato I loved so much, too bad the autumn taking away. Only one thing I would change on the recipe, I would use stick blender in the pan carafully to not touch metal with metal. I think I will do it that way :-)
