When I've had carbonara in restaurants I'm sure it has always had garlic in it. Its pretty good like that, but I assume it is not authentic. You didn't use garlic, so I'll follow your recipe to see the difference. Thanks very much and subscribed.

@@vincenzosplate I think you are holding a piece of pancetta and not guanciale. Guanciale has a very specific meat striation, not found anywhere else on the pig. I could be wrong but it looks very much like a piece of pancetta because of the multiple meat layers but specifically because of the flatness of the skin, not found on the pig's cheek.
That's a big leap! I mean lots of people probably make pasta as they're first Italian dish, but I've never thought carbonara would be their first pasta dish.
@@prospus468 I agree but problem is that it's not so common like for the italian food to see things like "american restaurant" or "real american food" everywhere, with some american surname in the name of the place, like they are making real american food. For the italian food is more common in the world, I traveled too and the situation for italian restaurants was like this. I perfectly know my hamburger is not like the real american one but I won't spread in the word my version without saying it's my version or restaurants here don't say this is the american hamburger. In general what I find funny is that sometimes if an italian say this is not how you make an italian dish, everyone get upset. If a japanese say this is not how you make sushi, everyone is like "ohhh * ___ * interesting!!" Be honest, you would have said the same thing if this was about a japanese dish and the comment was written by an american from a japanese family?

I worked as a pizza maker in a small Italian restaurant where most of the cooks were Abbruzzese. But...we had one lady working there who was born and raised in Rome. She even worked in a small cake shop where a regular customer was Truman Capote before emigrating to Australia. She taught me how to make carbonara exactly as described in this brilliant recipe. Unfortunately in my town, guanciale is almost impossible to get. So I use the fattiest speck I can find. Don't hate on me - I work with what's available.
I love and miss Italy! I was fortunate enough to go there when I was in the Military.. The people, the food, the country are all FANTASTIC!! The best country in all of Europe!!!! Nothing but good memories and fun times. One day my wife and I will go back to visit but as civilians to tour the beautiful countryside. This Hotel is now on my Bucket list of places to go and visit..

i have just used this recipe and technique today. probably the best food i have ever eaten. ive copied your bolognese recipes before and wow they are just amazing. it may just be my family, but i was brought up believing bolognese was tomato, beef, onions, mushroom, and any herb you have in the jars in the cup boards. the authentic bolognese is just out of this world. so fresh, delicate, rich, and complex. ive tried some of your pizza recipes but i need to buy a pizza oven... I've also started copying your recipes / techniques to make pasta and my 3 year old loves to help make it. today she was in charge of mixing the pecorino and egg. she helps to make dough etc. so thank you so much for all your content. it means myself and my family get to eat some amazing food. Thank you very much for the inspiring recipe. Having watched several other "carbonara originale" videos and picked out details I found reasonable, I perform the carbonara this way: - heat up the black pepper in a dry frying pan an crush it (gives an incredible taste, that harmonises perfectly with the dish) - fry the guancale very slowly and separate it from the oil, when it is crispy. Keep it warm - cook the spaghettoni for half the recommended cooking time in a relatively small amount of water with a small amount of salt (more starch is in the water) - prepare the egg-cheese mix as shown in the video - stirr half the oil from the guancale into the egg mix - move the spaghettoni into the fryingpan with the remaining part of the guancale-oil and add some of the toasted pepper - add starchwater from the pot to the pan (one ladle at a time) and reduce it until the spaghettoni are almost perfectly al dente - remove the fryingpan from the heat, add one additional ladle of starchwater and the egg mix and stirr or swing the spaghettoni thoroughly until they are perfectly covered with the egg cheese cream. Taste the pasta and add some salt, if necessary. - move a portion to each preheated plate, add toasted pepper, crispy guancale, some grated parmigiano or peorino and some basil leaves (the blasphemic ingredient ;-)) on top - serve and savour immediately
Absolutely the true Roman Carbonara. My husband is Roman and this was one of the first recipes I learned to cook from his mother. It's one of my favorites. 👍
After coming back from Rome, my partner and I had a carbonara hangover and wanted to recreate our experience. Watched this video and has become a staple recipe for us! We live in New York so the ingredients are easy to get. We also tried carbonara from different restaurants but none hits the spot compared to cooking this recipe at home. We always make sure that we use the spaghetti or rigatoni, cooked al dente and the sauce is never too creamy/watery. Easy and feels like we're back again Rome! Thanks so much!!
This is exactly how I make it but one added thing I do is remove the guanciale from the pan and leave the remaining fat and add it halfway through mixing with the egg and cheese mixture it as I find the pasta water can make the guanciale soggy and loses its crispness when added. Nice job Vincenzo

@@Thekiko2501 both are wonderful, but in different circumstances... pecorino is more salty. In certain dishes, Italians will use both to mellow out the dish... and they're usually right!

I finally got to make the carbonara. I found Guanciale and Peccorino in my neighborhood. Up until now I used bacon and parmigianno as a substitute but the original is MY GOD delicios. The saltiness from the Guancialle and the subtle flavor from the Peccorino along with the farm raised eggs I added just brings it to a whole new level. I served it with some nice spaghetoni. Definately one of the tasties sauces from Italia. Much love from Romania , Vincenzo!

I loved it where you tell us 100 g of pasta per person 70 g of cheese per person. It makes it enormously is easy. And then the way you add the water. I'm not a cook, but this looked so delicious, I told my wife this morning I wanted to try this carbonara. Just returned from the market; and luckily they had Guanciale, and Pecorino Romano. Got Liguori pasta. Fingers crossed how this goes. Just try to remember the most important stuff by hart: Big pot, lots of water. And nice amount of rocksalt. I made this for my girlfriend exactly how you said to do it! it turned out fantastic. And I didn't use any garlic!!! I think I used a little too much pasta water though because it was a little watery but still delicious.

I think high quality pasta, eggs, guanciale/pancetta and cheese matter a lot to the end result. Also let it thicken quite a bit. If it seems much too liquidy after adding the pasta water to the eggs and adding the pasta water to the pasta, just keep it on low heat and it will thicken over time.
MiNi Weeddeerz infact at the end was all wrong! We don’t do it like that in Italy! That was so wrong the entire water it do not go to add with the egg’s cream!!! U must switch off before u put only the egg’s cream!!

This recipe is really good. I have made carbanaras so many different ways.. I dont know which one I like the best. I guess all of em. One I make is made with a creamy white wine sauce with melted blue cheese crumbles, pancetta, bacon, shallots, garlic, mushrooms and parmesan With scallions and basil on top. Its a dang good pasta.

Could not make it absolutely traditional as you did (had no Guanciale) but used the Panchetta I always keep some of in the freezer and only had Parmesan Cheese.. but man, that was a breakfast!! ive copied your bolognese recipes before and wow they are just amazing. it may just be my family, but i was brought up believing bolognese was tomato, beef, onions, mushroom, and any herb you have in the jars in the cup boards.

Actually pizza stone can work well I normal oven. It's cheaper alternative. It's not same good as pizza oven but close

Thank you very much for the inspiring recipe. Having watched several other "carbonara originale" videos and picked out details I found reasonable, I perform the carbonara this way:
- heat up the black pepper in a dry frying pan an crush it (gives an incredible taste, that harmonises perfectly with the dish)
- fry the guancale very slowly and separate it from the oil, when it is crispy. Keep it warm
- cook the spaghettoni for half the recommended cooking time in a relatively small amount of water with a small amount of salt (more starch is in the water)
- prepare the egg-cheese mix as shown in the video
- stirr half the oil from the guancale into the egg mix
- move the spaghettoni into the fryingpan with the remaining part of the guancale-oil and add some of the toasted pepper
- add starchwater from the pot to the pan (one ladle at a time) and reduce it until the spaghettoni are almost perfectly al dente
- remove the fryingpan from the heat, add one additional ladle of starchwater and the egg mix and stirr or swing the spaghettoni thoroughly until they are perfectly covered with the egg cheese cream. Taste the pasta and add some salt, if necessary.
- move a portion to each preheated plate, add toasted pepper, crispy guancale, some grated parmigiano or peorino and some basil leaves (the blasphemic ingredient ;-)) on top
- serve and savour immediately

After coming back from Rome, my partner and I had a carbonara hangover and wanted to recreate our experience. Watched this video and has become a staple recipe for us! We live in New York so the ingredients are easy to get. We also tried carbonara from different restaurants but none hits the spot compared to cooking this recipe at home. We always make sure that we use the spaghetti or rigatoni, cooked al dente and the sauce is never too creamy/watery. Easy and feels like we're back again Rome! Thanks so much!!
This is exactly how I make it but one added thing I do is remove the guanciale from the pan and leave the remaining fat and add it halfway through mixing with the egg and cheese mixture it as I find the pasta water can make the guanciale soggy and loses its crispness when added. Nice job Vincenzo

I've always made this with parmesan. I tried to use pecorino just recently, and now i'm never going back to parmesan again.

@@Thekiko2501 both are wonderful, but in different circumstances... pecorino is more salty. In certain dishes, Italians will use both to mellow out the dish... and they're usually right!

Its a spagettini with kerry bechamel and portobello mushrooms with sage oregano and thyme and bimmi.
Almost like a Ragu Verde, instead of bianchi or rosso.

I finally got to make the carbonara. I found Guanciale and Peccorino in my neighborhood.
Up until now I used bacon and parmigianno as a substitute but the original is MY GOD delicios.
The saltiness from the Guancialle and the subtle flavor from the Peccorino along with the farm raised eggs I added just brings it to a whole new level.
I served it with some nice spaghetoni.
Definately one of the tasties sauces from Italia.

You can also use Pancetta if you can't find Guancialle. In Naples almost everyone uses Pancetta

Yesterday my family dinner was carbonara, but it tasted kind of weird. Apparently my mother used cream and soy milk with onions. So today I made carbonara following this video( although I had to use bacon and Parmesan powder) and the flavor was incredibly powerful and great! Thanks for the video!

I think high quality pasta, eggs, guanciale/pancetta and cheese matter a lot to the end result. Also let it thicken quite a bit. If it seems much too liquidy after adding the pasta water to the eggs and adding the pasta water to the pasta, just keep it on low heat and it will thicken over time.
MiNi Weeddeerz infact at the end was all wrong! We don’t do it like that in Italy! That was so wrong the entire water it do not go to add with the egg’s cream!!! U must switch off before u put only the egg’s cream!!

This recipe is really good. I have made carbanaras so many different ways.. I dont know which one I like the best. I guess all of em. One I make is made with a creamy white wine sauce with melted blue cheese crumbles, pancetta, bacon, shallots, garlic, mushrooms and parmesan With scallions and basil on top. Its a dang good pasta.

Well here I am, 9 o'clock in the morning and cooking Carbonara after watching your video. Could not make it absolutely traditional as you did (had no Guanciale) but used the Panchetta I always keep some of in the freezer and only had Parmesan Cheese.. but man, that was a breakfast!!

I couldn't find guanciale, but I found a nice piece of pancetta.
First time trying without bacon and cream, and used pecorino instead of parmesan and it turned out great. Much more flavors than before. Wife liked it too. Thank you. 👍

This is so unbelievably good. Today was the second time I made Carbonara at home and I'll follow your recipe from now on. So creamy, so luxurious and in contrast to the last time where I followed a different recipe no scrambled eggs :-D But I still need to find a source of Guanciale arround here…

Make your own guanciale. Find a butcher with some pig cheeks.
