    What is surprising to me is that my Mom cooked it for my sister and me when we were children, but we never knew it was an italian dish. And by the way, I truely admire the way you respect all of your ingrediences... Greetings from Germany 🇩🇪

    Great recipe! Who doesn’t love pasta con la mollica. My Sicilian mother in law added a handful of lightly roasted walnuts to the bread mixture with all the other yummy ingredients and my god it takes you to pasta heaven!

      @@vincenzosplate Yes I did try some of them. It is just that it is a quite hard to find fresh herbs in my country. So I had no choice but to use dry ones.

    What I like about your cooking is that you never rush things. "just" "quick" and "easy" doesn't make a good dish.

      thank you very much, you must know that Italian cuisine is this! Simplicity and attention are the two main characteristics, it is useless to prepare a dish by running if then while you eat it it does not give you emotions! ❤

    A sicilian friend of mine just made this on friday. Absolutely delicious! He made it exactly like you made it here. Great flavour of pepperoncini, garlic, parsley, anchovy, olive oil and salt and pepper...and pecorino or parmigiano reggiano. He added a bit more olive oil than you did...coating the spaghetti. Very nice.

    I host a St. Joseph's Day dinner every year in my home and I make this! The breadcrumbs represent the sawdust as St. Joseph was a carpenter! It's delicious!

    My favourite pasta is Rigatoni.
    It was my Nona’s favourite as well.
    And this dish you’ve done is one of my very favourite pasta dishes EVER! It doesn’t get enough attention, so thank you for doing a beautiful job.

      @@vincenzosplate It's me who should thank you. Since I discovered I can order quality pasta from Amazon, I've been making all sorts of pasta dishes myself. I don't even buy the store-bought pasta sauce anymore, but prefer to make it from scratch. You reinforce my belief that Italian cuisine, at heart, is flavourful and healthy and the junk served at the restaurants in the name of Italian cuisine are but cheap imitations. The next step for me is buying a pasta machine, which is kinda expensive, but I'll eventually get there. ☺

    pappardelle is my fav to make, i followed one of your recipes for making it i only had a rolling pin and a sharp knife and i love it and still make it today. i now have the brass dies to make my own shaped pasta and other pastas too. You gave me the homemade pasta bug and i love it.

    I use breadcrumbs with all my seafood pasta dishes. Shrimp, vongole etc. I also use it on salads. It’s a secret ingredient.

      @@vincenzosplate I used to take care of this Italian woman from Sicily. On the holidays she’d visit family and always brought me a plate back. I remember one Christmas she brought me something similar to this. She said it had fish in it, the breadcrumbs, and golden raisins. It was so good. When I saw you make this that is immediately what I thought of. Thanks for the memory. This same woman always told me to cook my paste in olive oil until it was darker in color when I make my Sunday sauce. She said it brings out a much better flavor, then she said you can add a wine or whatever liquid to deglaze it. ❤️

    I was surprised to find this recipe on youtube. My mother made this for us whenever we wanted a quick snack. I thought she made it up because I like a pasta she made with breadcrumbs but didn't like the other ingredients. So she just toasted up 4C seasoned breadcrumbs in e.v.o.o then she would butter the pasta, add a touch of cream and load it up with breadcrumbs. I just made it for my daughter. I will try this version soon. Thanks for bringing this dish out in the open. I just made it with Gemelli! It holds onto the BC's nicely. Enjoy!

    Fantastico, Vincenzo! It could be incredibile that I learn a Sicilian excellent recipe from a guy in Australia!! I made it today 2.11.24, just add 3 drops of "colatura di alici" (anchovies syrup similar to the ancient romanic "garum") for little more flavour.
    (but any pecorino, by my taste) I am from North Italy, but Sicilian cousine is probably the best ones

    Very Sicilian!!!! I grew up eating breadcrumbs with pasta con sarde for St. Joseph's Day but I love garlicky toasted breadcrumbs on all of my favorite pasta dishes.

    Favorite pasta? Orecchiette. Its literally the type of pasta that allows you to pick the perfect amount of sauce in every bite. Perfect.

    Favourite pasta- lorighittas with sausage Ragu or pesto gnocchi 🤤. Tried the pasta ca muddica. The bread crumbs were a different touch to a pasta dish.

      @@vincenzosplate I will be making it within the next couple of days. I always have breadcrumbs to hand because I make all my own bread and never throw any away. Leftover bits and pieces get made into crumbs and stored in the freezer.

    bucatini is my favorite, I even have bucatini press for my kitchen aid. I use it for almost all my dishes but I do like the gnocchi and others but bucatini is always my first choice

    Been having this on my list for months and finally did it. It doesn't sound like much, but the toasted homemade breadcrumbs really bring it up a noch and are so great. I didn't have any parsley though as it was a last-minute decision, will use next time. For the record my food processor wasn't able to make the breadcrumbs so had to do like 15 runs on the coffee grinder, lol. Definitely something to add to the rotation.

      @@vincenzosplate You should also try adding currants. It sounds weird, but the added sweetness really rounds out the dish. This was a common variant in my Sicilian family.

    Many thanks for your amazing pasta authentic dishes. I’m going to try a couple for sure. This one I will try first and greatly appreciate your tips about pasta, olive oil and pans for cooking. May I ask if you would be so kind to recommend which pans you would use on Amazon please. I want to get two good pans for my simple cooking life. One for sauté and the other for boiling. I’m a vegan but will cook with the Romano regalianno as I can’t get the pescorino you mention. I guess the occasional cheese won’t hurt me unless you can recommend a vegan substitute?
