How to Make FRIED ZUCCHINI PASTA Like an Italian (Spaghetti alla Nerano)

- Fried Zucchini pasta known as “Spaghetti alla Nerano” is a classic example of a local dish. It was born in the small fishing village of Nerano back in 1952 thanks to Maria Grazia and became famous because it was served in her family restaurant (and it still is)! The complete recipe has never been revealed, but this is an authentic local take and sure tastes like a plate of Italy to me combining fresh zucchini and basil along with delicious cheese. The creamy sauce and aroma of basil work so well together and infuse the zucchini with the most delectable flavour…now all we need is a beautiful sea view..!

Oh man! Pasta and zucchini are two of my favorite things! I am so excited! I am a huge tomato sauce fan. Is there a tomato sauce version of pasta with zucchini as well? I will definitely be trying this!

You could add a spoonful of tomato sauce on top but I would not

My friends Mom used to make it often but she patiently pan fried the zucchini in batches in skillets and she cooked for 6 plus people
I later made itself the same way in a skillet I think it's better yiu get the browned bits in the skillet u can't get from deep frying n yes get the smallest zucchini possible..soooo good
@@samthunders3611 Tomato completely changes the taste of the zucchini. It is not the same at all. Zucchini absorbs flavors of what it is cooked with.

I've never seen Spaghetti alla nerano all over the world!! These are recipes that you can only find in Italy. Vincenzo, I live in Liguria region and we have a very particular local zucchini, which is called " zucchina Trombetta". When you prepare it with pasta, it's soft and you don't have to deep fry them. Just a little olive oil, simmer them in sweet flame. A typical dish is Linguine with Trombetta and Sanremo's shrimp or you can always make the same recipe without prawns, but with a lot of parmigiano.
Yeah it's difficult to find, but the recipe is very easy try it!
@@vincenzosplate look, the best period where you can consume this kind of zucchina is summer. Last summer i made pasta with trombetta and pesto mix together. It's very zesty.
Hey Vincenzo, great video as always! Is there a specific kind of provolone to use that would be more authentic? I saw an online recipe that calls for Provolone del monaco as the authentic ingredient and to only use Provolone piccante as a substitute. Thanks!!
Yes there is a specific provolone to use but it will be almost impossible to find it outside of Italy so any provolone will work. And yes the pizzante is the best option.
