    Having trouble using up unwanted zucchini? It's not the most popular vegetable, and many of us are either sick of zucchini bread or just don't like zucchini at all! But maybe the people who invented zucchini (yes, you read that right) have some secrets up their sleeves that could help us all out... Time to ask an Italian!
    In today's video, my Italian wife Eva cooks me a five-course meal based around my least favorite vegetable. Can she change my mind?

      Unlike Harper, I like the taste of zucchini, so if it is simply prepared, then I like it best. Sunset Magazine had a technique called "butter steaming" in one of their cook books. Simply put, you melt about 2 teaspoons butter in a pan, add prepped vegetables and toss, then add a tablespoon or two of water and cover - steam until done to your liking. Season and serve.

      Here's an antipasto I tried made by someone from Puglia:
      Half a zucchini hollowed out a bit, then grilled (I think). Then filled with a mix of tuna and ricotta, plus some balsamico vinegar on top (and maybe some parsley).

    As a Greek, one of my favourite ways to eat zucchini is also very simple. Slice the zucchini into rounds about 1/4-1/3" thick. Season with salt, pepper, and granulated garlic. Also season some flour with the same spices. Dip the zucchini slices in the flour and dust off excess but don't go nuts. Fry them in oil, vegetable or olive oil, until a deep deep golden brown on both sides. Lay on paper towels to drain and enjoy. Great hot, warm, or even at room temp. Great summer side dish. The sweetness of the zuke and the saltiness and spice, along with the rich taste of the browning combine to make this a delectable dish.

      Im Hungaryan, doing almost the same (just like snitzel) after you flower it put it in whisked eggs , andd then in breadcrumbs and then fry them. "Mind a tíz újjad megnyalod utána!"

      In Ukraine we have a similar dish, but using only salt and pepper for spices when frying and then putting garlic mayo and dill on top.

    My favorite zucchini recipe is stuffed zucchini! Just cut the zucchini down the middle, core it, mix said core with olive oil, parmesiano, bread crumbs, pepper, etc, and fill the halves back up with the filling, and then bake! It's pretty good, and how my mother convinced my sister and me to eat zucchini (though at first we just ate the filling).

      Zucchini boats! I love them too. Also pan-fried (like at 5:43) and zoodles. I had to teach myself though because my mom only made zucchini bread or tried to hide shredded zucchini in chocolate cake, neither of which I would eat.

    I made what I call "Zapple Crisp" and served it to a group of ladies tonight. It tastes exactly like apple crisp, but has no apples in it...only zucchini slices that had been cooked for a few minutes in lemon juice, then with cinnamon and nutmeg and other ingredients. Topped with whipped cream, they thought it was delicious. :)

    My favorite zucchini dish is what my nonna called “Dorati”. Just sliced, dipped in flour and fried. Sprinkle of grated pecorino on top. Great warm or cold.

      I love zucchini fries - just sliced, covered with some kind of breadcrumbs or seasoned flour (maybe with egg if you feel so inclined) and then baked or fried… then season them with any kind of delicious stuff: I love them with parmigiano, sea salt flakes and rosemary - but the sky is the limit

    Thank you for all the wonderful recipies with zucchine. My mom used to make italian mashed potatoes using olive oil and zucchine which went really well together and were delicious. Love and blessings from Toronto, Canada

    My favorite zucchini recipes include zucchini lasagna for a low carb alternative to my original lasagna and my homemade pizza sauce. I jam-pack my pizza sauces with zucchini and blend it up - It is a great way to get extra vegetables in the diets of the picky eaters of my household. I use zucchini is almost EVERYTHING, it is such a versatile vegetable even if you dislike it plain (I also am not a fan of zucchini just on its own)

    Thanks for your recipes Eva!!! I have had zucchini all my life. As a child my mother would make a pureed soup of zucchini and fresh peas with formaggino. My grandmother would make a dish made with strips of zucchini coated in flour and egg and deep fried and layered with a light marinara sauce, fresh basil and parmigiano like a lasagna that would be eaten at room temperature. I also love pizza bianca with thinly sliced zucchini, potato, onion, oregano and parmigiano.

      Ok, so my pizza last night wasn't inauthentic. The zuccini was not sliced thinly though, it was just cut up thicker than a julienne

    Love zucchini, we slice it very thinly (into ribbons with a mandolin or julienne/sprialise) and saute with white beans and lemon juice. On it's own as a side dish or you can add pasta for a more substantial meal.

    I’ve made pasta ala nerano before and it’s great. Thanks for all the rest of these recipes I haven’t heard of before, Im excited to try them. The one zucchini dish I’ve made before that is great is a Palestinian dish called Lib Koosa.

    My favorite way to eat zucchini is with lasagna. When I was on Keto my mom would make a lasagne with zucchini instead of the lasagna pasta. Great substitute for a lot of other pasta dishes too. It can absorb so many flavors

      I make a dish we call Pizzagna (Rachel Ray 30 minute meal recipe, basically it is a pot lasagna but you use pizza sauce & your favorite pizza toppings) but with Zucchini instead of noodles. Very yummy!

    I LOVE THIS!!! We grow Costata Romanesco zucchini AND Zucchino Rampicante on our organic farm. I LOVE zucchini and we never grow enough! Here’s what we make…
    1. Dehydrated zucchini chips
    2. Zoodles (spiralized zucchini “noodles”) marinara using Eva’s tomato sauce recipe!!!
    3. Cream of spinach, zucchini and broccoli soup.
    4. Zucchini pickles water bath canned
    5. Stuffed zucchini boats
    6. Sautéed zucchini, yellow squash, carrots and broccoli with olive oil, garlic and Parmesan
    7. Raw vegan PIZZA CRUST (recipe from Raw Advantage channel)!!!!

    I believe there are two types of zucchini, Dutch and Italian, each with multiple varieties. The fruit of the Dutch type has a spongy core around the seeds, and is the type favoured by supermarkets here in the UK. If these were the only type of zucchini someone had experienced I could totally understand if they didn't like them. Of the Italian varieties I have grown my favourite is definitely the Romanesco, a striped and lightly ridged zucchino from Rome with a nutty flavour.

      I was going to say the same! I'm Italian and here in the UK I really struggle finding the striped ones I was used to. The black courgettes are ok to have as a veggie in your pantry when you're bored or lazy, they're really not worth the struggle.

      In Ireland the closest thing to American zucchini I found are courgette

    I love zucchini. Can't get enough of it. I use them in Chinese, Japanese and Korean dishes often. I love them in soups and stews, blanched and mixed with seasonings to be served as cold side dishes in summer (Korean hobak namul), or simply sautéed with soy sauce, sugar, garlic, salt and pepper, finished with a bit of sesame oil. And, of course, I love it with pasta. A simple pasta dish I make consists of sautéed sliced zucchini, chopped onion, minced garlic, chopped basil and pine nuts mixed into linguine.
    These dishes look amazing. I will definitely have to try them out.

    My favorite zucchini dish? It isn’t Italian, but it’s Argentine. Simple but delicious. Grill a ribeye steak. While that’s grilling, blend together a chimichurri sauce out of some fresh Italian parsley, fresh garlic, olive oil, red wine vinegar, salt, and crushed red pepper. Then toss some sliced zucchini, carrots, and red bell beepers in olive oil and lots of Italian seasoning. Take the steak off the grill and grill the vegetables for just long enough for them to get charred, but still crispy. Serve up and spread the chimichurri sauce over the steak.
    Wonderful dish I love to make for the summer! And that Italian seasoning and olive oil marinade make the zucchini perfectly flavorful.

    Fried or in Minestrone. I would call Mama's Rosa's dish, "stewed" zucchini. Looks delish. One of my favorite vegetable dishes' is stewed okra, another vegetable that a lot of people don't like.

      Okra Gumbo, served alone or over rice - yum!
      My youngest daughter loved it so much, but couldn't say "okra gumbo" so for her, it was "oka bongo"
      All the kids loved seasoned breaded fried eggplant (or zucchini, whichever was ripe at the time)!

    Probably the "Maria Stuada" dessert received his name beacause of Donizetti's Opera (early XIX century) based on the Schiller's text and/or to homage Maria Malibran (the opera singer who "nailed" the main role in the premiere)... My favorite zucchini recipe: stuffed (with minced meat or chicken or fish and shrimps, mixed with lots of bechamel and cheese)

      It's possible that the pastry and the play were just collateral effects of the same cause. There was actually a whole truckload of operas in Italy about or involving Mary, Queen of Scots, but even before those, an Italian play about Mary QOS was popular, as was the Friedrich Schiller play. 19th Century Italians just had a fascination with Stuart and Tudor Britain. Historical fiction is ever popular I guess.

    My favorite: A zucchini sliced into rounds, dredged in flour with salt & pepper & then beaten egg & fried. I also have a friend who regularly makes me blueberry zucchini bread.
    These dishes look great as well. It makes plenty of sense that my Italian ancestors would come up with so many great dishes,
    That aside, how can anyone not like zucchini?

      Same here favorite is fried , my dad always dredged in flour then dipped in egg wash or buttermilk ; put in mixture of half flour and corn meal, fried till crispy then salt and pepper. Yummy. He also stewed with tomatoes was good .

    I grow and can buy many different squash varieties here in south Texas from farmers markets and roadside produce stands.
    For zucchini I like it the most when it is young and sweet maybe 6 to 8 inches long to harvest.
    Cut it into 'coins' about twice the thickness as the second recipe, dredge lightly in seasoned flour and then shallow fry in olive oil. Sprinkle with flaky salt and you have a great side dish.

    This was really good,most of what she did I have never seen before but it was quite simple and easy to make. Having only grown up with American version of Italian foods,this show has made be rethink Italian pasta. And cooking.

    I love Zucchini boats! cut in half, scooped out like a canoe, and mixing the scooped out flesh with mince, tomato sauce, breadcrumbs and cheese and baking in the oven 🤌🏼

    Wow, what a great episode! I have to admit that I love zucchini in all forms, and I can't wait to try some of these. I was also so excited to see the recipe for Spaghetti alla Nerano because on my first trip to Italy years ago, this was the very first dish I ate there! I had no idea what it was called until this video, but that zucchini pasta dish was so delicious that I told people about it for years, lol.

    My favorite zucchini (the Lebanese variety not the Italian one, but in all honesty they don't differ that much in taste) dish of all times and probably one my favorite dishes ever is a humble zucchini fritter. In Lebanon, like in several other surrounding countries, we stuff a lot of vegetables with meat and rice, and in the case of zucchini, you are left with a lot of its core content. As we hate waste (at least people were smarter and more frugal about food in the past), they invented a dish with the left over core. The core material is very wet, so it's salted and left to drain, sometimes overnight in the fridge, then it is mixed with eggs, parsley, onions, dried mint, salt, allspice, and a bit of cinnamon. A bit of flour is often added to give the mix some body. Then the fritters are shallow fried and served with yogurt (mixed with cucumber, mint and garlic). For me it is a heavenly combination, and zucchinis are not a filler in this case, because if you swap the vegetable with something else, the flavor and texture change a lot!

    Yum, I'm going to give all of these a try, they all look delish. We really like zucchini sauted with red onions and mushrooms, olive oil and balsamic vinegar on top of mashed potatoes.

    I love how Eva doesn't have a lot of unnecessary cooking gadgets. I would have pulled out the mandoline to slice that zucchini, but not Eva because she knows how to do it with a knife. Brava!

    My favourite dish with zucchini is definitely the fried ones. You basically cut them down to circles then bread them and fry them and they are delicious! You can find them in any tavern in greece as they are traditional here.

    My favorite zucchini dishes:
    1. Quickly fry zucchini matchsticks and almond slivers then fold into shaved pecorino
    2. Grill zucchini slices, top with toasted pine nuts and shaved pecorino, squeeze of lemon and drizzle of olive oil with torn basil

    Harper - have you tried putting zucchini slices on a barbeque and grilling them? Zucchini slices grilled on a barbeque taste fantastic and they do not need any oil or much oil to grill. You need to grill the zucchini slices on both sides for the nice grilled effect to taste good. Eggplant taste good grilled the same way.
    This type of cooking simple cooking at its finest!!!

    I personally like to keep its simple with sauté or roasted zucchini in olive oil and a bit of garlic. Add whatever else you like to it. I just love your channel!! You two are so cute!!

    As a lover of zucchini, I need to try all of these recipes! Grew up eating breaded and fried zucchini topped with a light marinara. Something that every southern Italian family seemingly made. My mother’s family always talked about “cucuzza” which I now understand is a type of squash and was used in a dish called “pasta cucuzza e patate.” Always wanted to learn how to make this.

    Great recipes! We like zucchini casserole. It’s an old family recipe made with grated zucchini, saltine cracker crumbs ,eggs, and cheese. With some garlic,salt and pepper.

    Zucchini can be used in most recipes you'd typically use pumpkin for; it's not always going to work, but pumpkin pie with zucchini used instead is pretty tasty.

    Fav Dish: This is going to sound weird, maybe. When I was growing up, the State Fair always had someone selling beer-batter dipped deep fried zucchini with a side of ranch dressing. It was AMAZING!

    I make spaghetti with zucchini quite often. I also make the potted version with potatoes and onions, tomato. I love this as a side dish with some crusty bread. No I do not add breadcrumbs or cheese. Just a drizzle of olive oil. I have also mixed this with a shorter pasta and then add cheese. You both are so nice.

    As a kid I didnt want to try Zucchini that our mother had in her garden. She won me over with Zucchini Bread and her delicious Chocolate Zucchini Bundt Cake that was so moist and didnt need anything else. She eventually added Zucchini to more dishes as we grew up and we loved it. Great episode and enjoyed going down memory lane watching this. Thank you ❤️

    I love zucchini. When I have too much or one gets a bit big, I love to slice them in discs, lay them out on a baking sheet, salt& pepper, sprinkle some seasoned bread crumbs & cheese, not forgetting the Parmesan. You just bake them until the cheese melts and the zucchini is still crunchy. Such a lovely quick snack.

    Great job Eva, as usual! My favorite zucchini dish is pasta with fried zucchini and ricotta salata. It's a Sicilian dish we make with our Sicilian zucchini, the "white" (light green ones). It is amazing, simple and yet tasting. The ricotta salata (salted) and those sicilian fried zucchini (which are much more sweeter than normal zucchini) are the perfect match to bring joy to the taste buds. For real... I'm gonna make it tomorrow, I'm already craving it!!! Eva, your mama dish is so similar to a pasta my mom makes all the time. She boils the zucchini with some tomato sauce and put pasta in eat, it is creamy and spectacular because we add ricotta salata in it as well. That's my 4 years old favorite pasta dish so the tradition continues!! I don't know if it pretty tipical in Sicily, for sure it has been in our family for more than 65 years

    The zucchini ravioli I must try, that’s a new one for me. I always put zucchini in my omelette and add it into lasagna without tomato sauce, along with mushrooms. Today I stuffed the zucchini flowers with mozzarella and fried them in a light pastella. They are always a big hit in my family. Please buy Eva a mandolin. Will make all her slicing work a breeze!       A dear friend from Capri told how she could not understand why the women in her hometown would not even try using a potato peeler (as we call the simple implement) to remove peelings of potatoes, zucchine, etc. They insisted on using a knife, which is more time consuming, wastes more of the flesh, and is potentially more dangerous. And here I see Eva using a knife, too! Why??

    Favorite summer vegetable dish was a stewed zucchini (or cucuzza), onion, peppers, tomatoes, wine and basil. My grandmother and mom called it giambotta.

    My favorite zucchini recipe is a very simple. Just cut into strips, coat in oil and seasoning of choice and bake in the oven. It makes a great side dish on its own or put some in a sandwich.
