Every single Italian Restaurant charges a FORTUNE for appetizers! And it's only gotten more expensive with the Pandemic. I LOVE Fried Zucchini and Fried Eggplant! It's so easy and inexpensive to make these at home!
yep I have observed the same, prices being twice or three times what they used to be for something as basic as friend zucchini. Same deal with chicken Wings, I love wings but they are like $2 a piece nowadays at any restaurant and the quality is garbage. I can buy the whole wings and break them down into flaps and drums, make my own sauce, super easy and they end up costing more like 35 cents a piece. plus taste better than the restaurants wings.
Ok, a couple of further tips for the novice in the kitchen: 1. Make sure you dry the zucchini COMPLETELY. Otherwise, it makes it hard for everything to adhere to it: the flour messes up, which then messes up the egg, and then the break crumbs mess up. 2. Make sure you really beat the eggs. If you don’t incorporate every part of the egg, what will happen is that when you dip the zucchini in the egg and then head over to the panko, then the egg white will come with it and drag a mess across the counter. Just beat the eggs really really good. 2. Either lightly flour the zucchini or shake off the excess but well. Otherwise, when you dip it into the egg, then you’ll still be able to see the flour instead of an egg coating on the veggie. 3. You’re gonna need more than 2 eggs and you’ll need a crap load of bread crumbs. Make sure you have a fresh box of it. And finally, the sauce. DO NOT SKIP THE AIOLI SAUCE. IT IS THE FREAKING BOMB FOR THIS RECIPE. Ranch is good, I’m sure; so is marinara. But nothing beats the aioli garlic sauce. Wow. Really does take it to the stratosphere as far as taste is concerned.
I use ROBIN HOOD BLENDING FLOUR. It does not form clumps like the all purpose does. The layer of flour on the zucchini is always very thin and uniform. It does not mess up the beaten egg. I also make my own bread crumbs. I like it when they are nice and course. I find store bought bread crumbs way too fine. I will definitely try making the aioli garlic sauce.
I use milk and one egg white for the dredge and mix it until foamy with a fork. I dip the zucchini into the milk egg mixture and then into flour and back into the milk/egg then into Italian breadcrumbs. I don't dry the zucchini off I just cut and start dipping. This process of dipping twice into the milk/egg leaves a very nice coating of crust that does not fall off while frying.
I made this yesterday, and it was so amazing! I air fried mine, and made the sauce to go with it. It was absolutely delicious! Give this a try! You won’t regret it.
Zucchini used to be on all the menus back in the 70s & 80s. They were called zucchini sticks and were usually breaded or sometimes dipped in a tempura sauce. They were then deep fried or baked and served with Hollandaise Sauce or later Bernaise Sauce. I am going to try these for sure with the garlic dipping sauce. As always looks so good. Just a tip- if you get tons of zucchini it can be shredded and then frozen. Still works well for zucchini loaf or bread. 😊

Another way I like to use zucchini is in what I like to call “mama’s meat sauce.” It’s a marinara sauce with ground beef, garlic, onions, zucchini, carrots, and calamari olives. Crazy delicious!! ❤️
Thanks for the tips n recipe. I love how you fry them to golden brown. Sometimes when I order them at restaurants they come out too pale. I like to stuff my zucchini blossoms with ricotta cheese mozzarella and basil with egg and fry them. Sprinkle with sea salt. Yum
Using this recipe for huge hull of squash i have right now! One thing i suggest is to salt the cut zucchini for an hour to get some of the moisture out. This helps them not become soggy when frying!
Love zucchini! I use a vegetable peeler and slice ribbons of zucchini, add halved cherry tomatoes, some cubed feta, slivered pickled red onions, and make a lemon olive oil vinaigrette for a refreshing salad. I can't wait to make your fried chips!
I live in SW France and courgettes (zucchini) are very plentiful as well. I make courgette bread, fritters, and soup. I have a smal, loaf of courgette bread to a French friend and he couldn’t believe that there was courgettes in it!

I love your breaded zucchini recipe. I grow my own zucchini. Sometimes I find a big overgrown zucchini in my patch. I cut it in half lengthwise, scoop out the seeds and fill each half with same meat mixture that I would use for making meat balls. I top it with shredded mozzarella cheese and sprinkle it with some parmesan cheese and bake it in the oven.
Made these and didn’t have any eggs so I used a corn starch slurry and you couldn’t even tell the difference! So glad I had the ingredients for the aioli sauce and that my kids don’t really like zucchini because me and my son were happy to devour the whole platter 😂❤ it was delicious!!

I recently did a tomato, zuke, cuke, pepper, onion salad. Cuke and zuke were cubed,I ion and pepper were strips like a Julianne. Tomato were wedge. Dredged in good extra be irgin olive oil with salt/ pepper and a little minced garlic. ( For spicy adventures I add jalapeno peppers slices to add a kick) makes a great refreshing tomato salad.
I made this tonight and your dipping sauce and it was so darn good, even my 89 year old Mother loved it. So Good I had to Share this to my Facebook friends. Thanks Natasha. 😊
We do a veggie potato bake. We use potatoes from the Little Potato company (pretty tiny ones) cut in half, zucchini and onion cubes/slices and any other veggie on hand (green beans, broccoli) placing all in a large bowl. Drizzle generously with EVOO and season with salt, minced garlic and we use Trader Joes 21 seasoning sprinkled generously. Lastly I sprinkle over 1/2 cup of Progresso Italian bread crumbs and toss all by hand until well mixed together. We have a large cast iron skillet we preheat on the grill with some olive oil in it. Once hot, add the mixture from the bowl. We leave on the grill about 40 mins stirring occasionally letting it crisp up as much as possible. Delicious with any meal!

Best zucchini recipe!!!! I did add baking powder and cornstarch to my flour, they stay crispy even when you have to re- warm them.

I had a risotto with zucchini sauce yesterday afternoon, despite how long I had waited after getting into the restaurant.
On the other hand, these zucchini chips do look crispy and crunchy with dipping sauce.
