Instant Pot Rotisserie Chicken: The BEST Recipe for a Whole Chicken made in the Instant Pot!

  • In less than 60 minutes, you can have a tender, juicy, perfectly “roasted” chicken made in the Instant Pot. This easy recipe for Rotisserie Whole Chicken is flavored with a homemade rotisserie seasoning and is perfect for an easy dinner or to use the meat in casseroles, salad, or soups.

    Recipe:
    1 whole chicken innards removed
    1 lemon cut in half
    1 onion cut in half
    1 recipe Rotisserie blend
    Rotisserie Seasoning
    1 tablespoon kosher salt
    2 teaspoons pepper
    1 tablespoon garlic powder
    1 tablespoon onion powder
    1 tablespoon paprika
    1 teaspoon dried thyme
    dash of cayenne pepper
    Directions:
    Mix together all ingredients well.
    Place trivet in instant pot pan and pour in 1 cup COLD water into instant pot. Use 1.5 cups water if you have an 8 quart instant pot.
    Rub seasoning evenly over chicken.
    Place cut lemon and onion inside cavity of chicken and place chicken on trivet in instant pot.
    Place lid on pressure cooker and be sure valve is turned to sealed.
    Set on high pressure for 6 minutes per pound of chicken. If your chicken seems like it is really thick (the chicken breasts are large) you may want to increase time to 7 minutes per pound. A smaller organic chicken only needs 6 minutes per pound.
    Once cooking time is finished, allow pressure to release naturally for at least 10 minutes, preferably closer to 20 minutes. Check the temperature of the chicken with a digital thermometer to be sure it has reached 165 degrees in the thickest part of the chicken thigh.
    Remove chicken from Instant Pot and place on cutting board, let chicken rest for an additional 10 minutes for the juices to redistribute.

    I made this recipe and the chicken was amazing, so tender and moist, but the best part was the broth! I used it to make chicken soup with the leftover chicken and I was blown away at how delicious it was! Just added carrots, celery, onion and shredded chicken. Can't wait to do this again!

    Just made this dish. It took me less than 15 min to prep and we were eating in 40 min. The boy doesn’t like chicken....he ate more than me. He’s 50 lbs soaking wet I’m 6’2” 225lbs. It was delicious!! The wife saved the juice for soup so it’s a gift that keeps on giving. You’re video is great, keep up the good work.

    I did this chicken and finished it in the oven on broil. i also used some of the juice and remaining spices to re-apply seasoning and apply it under the skin. it was pretty great.

    Hmm 🤔
    I have been making everything from Sesame Chicken, Chicken Tarna,, Street Taco’s, even “breakfast burritos”-all Restaurant Quality. I realized, wait a minute, I grew up with an aunt that used a pressure cooker and another Great aunt that used “Crisco”( it does matter, especially for Asian dishes) and when I saw your video I realized how much I’ve been missing out. Haha (wink) and will be picking up an instant pot soon.

      Your very welcome. I had no idea “Crisco” made that much of a difference. But boy oh boy does it ever!! I kid you not. I know the other secret to Asian dishes is peanut oil. Hard to find. Even @ Asian markets.
      + You can’t get it that hot. Have yet to try.
      Last thing. Indonesian soy sauce.
      Katchup Manis. (Pronounced like Catchup manis). Thick. Sweet. Not salty.
      Makes every dish almost perfect.
      Fried chicken your way. Some katchup-manis, (spelling), green onion and sesame seeds and you have authentic Asian wings.
      Will update the spelling later today. Hopefully. ✌️❤️😎👍

      PS. I want to say I think Crisco gets hotter than cooking oil. Everything tastes better. Shhh 🤫 (grin). Plus. I read it’s actually better for you. Great Aunt used all the time.

      Thanks! I do highly recommend purchasing a thermometer as they help ensure perfectly cooked meat and are relatively inexpensive. That said, as long as the juices run clear, you are good to go!

      This recipe is best using a thawed chicken, as it will cook more evenly. That said, if your frozen chicken has the giblets and plastic ties already removed before freezing, you can cook for 10 minutes per pound.

      So happy to hear you enjoyed the chicken. And yes, feel free to add carrots, just keep in mind they will turn to mush, so not really for eating. And it makes no difference if you turn the IP off or leave on keep warm for the 10 minutes of pressure release. :)

    I apologize in advance for this dumb question but I don't use either paprika or Cayenne much. Cayenne has heat. Does Paprika also? Or is it more of a coloring agent for the meat? Thanks in advance, Kristin!

      I would omit the cayenne. If you have paprika, I would use it. It does not have much heat (unless you use SMOKED paprika--which is labled as such) but adds a nice flavor.

    When you say let pressure release naturally what do you mean? Do I keep the pressure valve closed or release the pressure for 10m at some point during the cooking?

      It means to leave the pressure valve alone for at least 10 minutes AFTER cooking. If the lid has not unlocked (or vent knob not floated down) you can then turn the valve to release remaining pressure. Hope that helps.       No! It is recommended to never rinse poultry as that can spread bacteria around the kitchen easily. Enjoy!

      I would not recommend it, the stuffing would become unbelievably soggy due to the moist heat and the juice from the chicken.

      I haven't found it necessary. However, you can certainly brush the chicken with melted butter, ghee, or oil before seasonign.

      I would use chicken stock as the liquid and just know the skin will be a little soggy but the meat will be DELICIOUS!

    OK no one ever explained this to me. What exactly is natural release of pressure on an IP? Cause when I let it sit... 10, 15, 30 min ...doesn't matter it still has, what seems like the same pressure.

      Hi There. Natural pressure release means to NOT do a forced release of pressure. Once cook time has elapsed the pressure cooker is still pressurized and it can take 5-25 minutes to depressurize based on the contents inside. So once cook time is elapsed, you just let it be for however long the recipe indicates and then you can force a pressure release.       Do you mean if you don't have a rack? You can place the chicken right in the water, it will be delicious, just the skin will be soggy.

      Hi Tonya! You could use large chunks of carrots and potatoes on the bottom of the inner pot and place the chicken on the vegetables instead of using a rack. However, the cooking time is MUCH longer for a whole chicken, and so the vegetables will become mushy. I don't personally recommend this.

    I always give 2 to 3 min more to time almost always cooks thoroughly, or spend more time to pull out,check temp, throw the bird back in, and cook again to reach desired temp.. that's just me though..and no the extra 3 min won't dry it out...

      I am sorry if this mislead you. The thumbnail was cooked in the Instant Pot and lightly broiled, as I said was an option. I didn't show the pretty shot in the video and I see that as a mistake now. Take care!

    I just tried this recipe with a 4.5 lb chicken and had the time at 35 minutes. Chicken came out at 144 degrees when I took the temp of one of the breasts, so nowhere near fully cooked. Not sure what went wrong?! I had to finish it in the oven.

      Hi Jadey! It may have been your chicken was a bit frozen still. Most whole chickens from the grocery store are sold previously frozen. Or it could be that the chicken breasts were on the larger size. When that happens, I would put the lid back on and cook for 5 more minutes.

      Hi Mike! I cook the chicken for 6 minutes per pound. This is a 3 pound chicken and 6 times 3 is 18. I hope that helps clarify :)

      You'd be surprised how stupid and rude some people can be. You yourself are a perfect example of the latter (if not the former). It's her video, her time, her channel and she can explain it anyway she wants to matt. You're free to create your own channel and do it your way. You should be thanking her for taking the time to show you how to do this.
