    RUB INGREDIENTS:
    1 tsp Worcestershire Sauce
    2 tbsp ketchup
    1 tbsp soy sauce
    2 tbsp brown sugar
    1 tbsp olive oil (or vegetable or canola oil)
    1 clove garlic, minced
    2 tsp apple cider vinegar
    4 pork chops / cutlets , around 200-250g/7-8oz each including bone
    800g/ 1.6 lb baby potatoes , larger ones cut in half
    1 tbsp olive oil
    Salt & pepper
    Preheat oven to 220C / 430F (standard oven) or 200C / 390F (fan forced / convection).
    Toss potatoes in oil, sprinkle with salt and pepper. Scatter on baking tray.
    Place in oven for 15 minutes (giving them a head start).
    Meanwhile, mix the Rub ingredients together in a small bowl.
    Slather the pork on both sides with the Rub, reserving some Rub for basting. (See notes for marinating)
    Take the tray out of the oven. Toss potatoes then push them to the edge.
    Place pork on tray. Bake for 15 minutes.
    Remove tray from oven, flick to broiler/grill on high (shelf about 20cm/8" from heat source).
    Flip pork, spoon over reserved rub and dab on sides. (Note 4). Broil 7 - 10 minutes until pretty well caramelised.
    Remove from oven. Use a brush to get the golden juices off the tray and dab it onto the pork - this is key for flavour and colour! Pop it back under the broiler for a couple of minutes to finish off.
    Serve, scraping the juices on the tray onto the pork, then garnish with parsley if desired.

    I have enjoyed this recipe several times. I was on a quest to do something/anything different with pork chops so my family would embrace this less expensive meat option.     You know what I never see enough of doesn't anyone ever put golden mushroom soup and a pork chops in the oven after Browning them on the stove and then place them in gold and mushroom soup in the oven an hour or so they are delicious

    I'll try this recipe next week, probably with broccoli or green beans. ALWAYS double the garlic/ginger in any recipe I do!!😂🇬🇧

      I’ve never tried it with broccoli or green beans. I have used carrots and sweet potatoes with my potatoes. The 2.0 video version of this recipe is better at explaining the process.

    Is there any substitution for the soy sauce? This looks delicious.

      I’ve been told that the list below can be used as soy sauce substitutes. (Although I’ve never tried them personally.)
      Tamari, also called shoyu, is a fermented Japanese soy product.
      Coconut aminos.
      Fish sauce.
      Worcestershire sauce.
      Liquid aminos.
      Miso.
      Oyster sauce.

      @@KeriPratt - Well, not too great, IMO. I'm terrible in the kitchen. Don't like the time I have to spend in the kitchen, so I'm not really interested in cooking. However, I'm caring for an elderly man and he's tired of my "basic" cooking, so I thought I'd try this. He liked it, but I didn't. I didn't get a carmelizing effect and I thought the meat got a little over cooked. But the potatoes came out great! It is not fun trying to cook in a toaster oven. I subbed, so I'll check out some other recipes you have. Thanks!

      @@coryavila01 cooking in a toaster oven is really tricky, as your food is really close to the heating element. Probably why the pork chops dried out?

      Convection has heat coming from the top and the bottom at the same time.

    Is it safe to put the parchment so close to the broiler flame? Will it catch fire?

      I’ve had the parchment get very dark in colour but never burnt in my oven. (Each oven is a little different, so I’d suggest watching it closely the first time you cook it)

    when you go to the find the recipe here: this recipe asks for brown sugar, does this make a difference? I noticed you didn't use the sugar, is this because you don't use it or just forgot. I am making it tonight just the way you showed.

    Wish you would add a written recipe and list of steps with appr. times. Would add so much to your presentation. And many of us do not own Convection Ovens. 390 F in a conventional appliance will dry out the chops I suspect. Otherwise, a good presentation.

      Got into Spatchcock Chicken over root veggies sheet pan meal ... great juices after as well ...
      if you want to get fancy use sweet and fingerling potatoes ...

      @@KeriPratt prep potatoes like you did, cutting and olive oil, toss in a bowl with either dry french onion soup mix OR with the dry ranch seasoning mix and bake them about 20 min @350, while prepping tilapia with salt, butter, pepper, lemon or your choice of seasoning, remove potatoes, turn and scoot them to edges and put your fish in the center and bake till done (thin tilapia usually only takes 20 minutes or so but bigger cuts do take longer) you can use any type of fish, or smoked sausage, Polska kielbasa, or even chicken breast. I do a lot of fish and chicken. Also maybe some sliced onion rings pulled apart and spread under or over it as well. (if you like onions) 😁

    I’m trying to learn: Shouldn’t we cook pork chops on bake 350 F for 1 hour? And potatoes 1 hr too? I’m just paranoid as I’m just trying to learn I burnt ham the other day (45 min at 375 f)

    Why do you use convection setting for your oven instead of just the. Normal bake setting?

      I’m usually making two pans, because my teenage son eats so much and that’s why I use convention. When I make one pan, there’s no need.

    How hot id the oven?

      Preheat oven 430F (standard oven) or 390F (convection). After cooking both potatoes & pork chops.
      Remove tray from oven, flick to broiler/grill on high (shelf about 20cm/8" from heat source). Flip pork, spoon over reserved rub and dab on sides. Broil 7 - 10 minutes until pretty well caramelised.

      You can definitely add Veggies, like zucchini, carrots, etc. I’d add them the same time as the pork chops.

      That’s very disappointing. A few things that may have affected the results. The thickness of the pork chops, the distance from the broil element, lack of basting?

    What temperature?

      Preheat oven to 220C / 430F (standard oven) or 200C / 390F (fan forced / convection).
      Toss potatoes in oil, sprinkle with salt and pepper. Scatter on baking tray.
      Place in oven for 15 minutes (giving them a head start).
      Meanwhile, mix the Rub ingredients together in a small bowl.
      Slather the pork on both sides with the Rub, reserving some Rub for basting. (See notes for marinating)
      Take the tray out of the oven. Toss potatoes then push them to the edge.
      Place pork on tray. Bake for 15 minutes.
      Remove tray from oven, flick to broiler/grill on high (shelf about 20cm/8" from heat source).
      Flip pork, spoon over reserved rub and dab on sides. (Note 4). Broil 7 - 10 minutes until pretty well caramelised.
      Remove from oven. Use a brush to get the golden juices off the tray and dab it onto the pork - this is key for flavour and colour! Pop it back under the broiler for a couple of minutes to finish off.
      Serve, scraping the juices on the tray onto the pork, then garnish with parsley if desired.

    This was a disappointment. You didn't show how the final pork chops turned out. But I guess I understand your domestic household compulsions. However this does not detract from the great recipe walkthrough that you have shared. More power to home makers like you!
